I came up with this recipe because I could not find a recipe I was looking for. A very simple, easy, and quick dish to put together. I always make this for myself when I grill steaks for my family.

1 (4 ounce) fillet cod
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
¼ cup roughly chopped spinach, or to taste
¼ tomato, seeded and diced
1 tablespoon chopped onion
1 tablespoon olive oil, or to taste
1 tablespoon balsamic vinegar, or to taste
1 slice mozzarella cheese, cut into cubes

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Place cod on a piece of aluminum foil and season with salt, black pepper, and garlic powder. Top cod with spinach, tomato, and onion; season again with salt and black pepper. Drizzle olive oil and balsamic vinegar over cod and top with mozzarella cheese. Fold foil over cod creating a packet, crimping the edges together making a seal.
  • Cook on the preheated grill until fish flakes easily with a fork, 7 to 9 minutes.

6 vine-ripened tomatoes
1 tablespoon vegetable oil
¾ onion, finely chopped
2 cloves garlic, chopped
1 fresh red chile pepper, seeded and chopped
1 cup dry white wine, or more as needed
salt and ground black pepper to taste
¼ cup chopped fresh basil
2 tablespoons chopped fresh parsley
2 (4 ounce) cod loins
8 large uncooked prawns, peeled and deveined

Steps:

  • Slice an 'X' in the bottom of each tomato. Bring a pot of water to a boil; boil tomatoes for 2 minutes. Remove with a slotted spoon and place in a bowl of iced water for 1 minute. Peel tomatoes, starting from the 'X' side; chop.
  • Heat vegetable oil in a skillet over low heat; cook and stir onion and garlic until fragrant, about 2 minutes. Add chile pepper and tomatoes; cook and stir until tomatoes begin reduce, 5 to 8 minutes. Pour in wine; cook over medium heat until wine reduces slightly, about 5 more minutes. Stir in salt, black pepper, basil, and parsley.
  • Place cod loins into tomato mixture; cover and cook for 5 minutes. Turn cod and cook other side until fish flakes easily with a fork, 3 to 5 minutes. Add prawns; cover and cook until prawns are bright pink on the outside and the meat is no longer transparent in the center, 2 to 3 minutes. Season with salt and black pepper.

I've been trying to make healthy tasty recipes for my family with what I have on hand. This came about as an experiment. My husband asked me to submit it so we wouldn't lose it. I consider that a pretty high compliment! Serve this over noodles (I used whole wheat elbows but something with some nooks and crannies to catch the sauce would be great!) with some veggies and bread.

1 lb cod
1 (10 ounce) package frozen chopped spinach, thawed
1 (14 1/2 ounce) can chopped tomatoes
2 (10 ounce) cans chopped tomatoes and green chilies
1/2 onion, chopped
2 shallots, chopped
3 cloves garlic, chopped
3 tablespoons tomato paste
1 teaspoon cumin
1 -2 teaspoon olive oil

Steps:

  • Heat the olive oil in a large pan over medium high heat.
  • Add the onions, shallots, and garlic.
  • Cook until the onion is translucent.
  • Add all the tomatoes, the tomato paste, and the cumin.
  • Stir and let it simmer 3-5 minutes or until it starts to thicken slightly.
  • Add the spinach and stir until it is combined.
  • Let it cook 2-3 minutes.
  • Meanwhile chop the cod into small even pieces.
  • Add it to the tomato sauce, stirring to make sure it is all covered with sauce.
  • Let it simmer 5-8 minutes or until the fish is opaque and flakes easily with a fork.

1/2 teaspoon fresh ground pepper
1 tablespoon lemon juice
1 can diced tomato
1/2 cup diced onion

1/2 teaspoon basil
2 tablespoons red wine vinegar

Steps:

  • Place oven on broil setting.
  • Using a broiling rack, arrange fish fillets on rack, sprinkle with fresh ground pepper and lemon juice.
  • Place fish in oven on the rack closest to the broiler.
  • Meanwhile, coat a non stick frying pan with cooking spray, add 1 tsp.
  • olive oil and saute onions until translucent.

A light and healthy supper ideal with salad and new potatoes. I have adapted this recipe from one I saw in the Sunday Times newspaper.

1 piece cod fish fillet, per person
6 cherry tomatoes, per person
1 spring onion, finely sliced per person
good quality olive oil
cooking spray
salt and black pepper
1 lemon, juice of

Steps:

  • Preheat the oven to 190°C I have a fan oven so adjust to suit your own appliance.
  • Cut a piece of tin foil big enough to put your piece of fish on. Using a spray oil (FryLight) spray a piece of tin foil before placing the fish in the centre of the foil and wrapping the fish up like a parcel. This will stop the fish sticking to the foil.
  • Next cut the cherry tomatoes into small pieces and sprinkle over the fish then do the same with the spring onion. Add the lemon juice and a drop of olive oil, season with salt and pepper and wrap the parcel up tightly.
  • You will now have a foil parcel of fish ready for the oven.
  • Cook in the middle of the oven for around 20 mins, checking after 15 by carefully unwrapping the top of the parcel and checking the colour and texture of the fish.
  • To serve open up the parcels and place the fish on a plate using a fish slice before pouring over the tomato and onions and the juices.
