Cool, herby, slightly spicy dip. Perfect with tortilla chips, mixed into guacamole, or on tacos. Refrigerate for up to 1 week. Can be frozen and then defrosted in the fridge, but the texture changes slightly -- it's best fresh.

1 ½ (8 ounce) containers sour cream
1 cup roughly chopped fresh cilantro
¾ cup mayonnaise
3 jalapeno peppers, seeded and roughly chopped
1 (1 ounce) package dry ranch dressing mix

Steps:

  • Combine sour cream, cilantro, mayonnaise, jalapenos, and ranch dressing mix in a blender. Pulse until cilantro and peppers are finely minced and incorporated. You might need to stir with a spatula a few times to make sure everything's fully mixed. Serve immediately or refrigerate.

You can add green bell pepper instead of jalapeno. Or you can try using basil if you don't like cilantro.

1 pkg ranch dressing
16 oz sour cream
2 medium diced jalapenos (seeds removed, set aside)
1 bunch chopped cilantro, about a small handful
1 clove minced garlic (optional)

Steps:

  • 1. In a small blender, add Ranch dip mix, 16 oz sour cream, chopped cilantro and fresh jalapeno - no seeds. I put in a blender just long enough to mix (I like little pieces of jalapeno. Add a splash of water or cream if needed to thin out in order to mix better. Gradually add chopped jalapeno depending on spice -add jalapeno seeds if you want it really spicy. It will get spicier as it sits. Eat with fresh veggies, chips, or crackers.

2 (9 ounce) packages refrigerated cheese-filled tortellini
1 (24 ounce) bottle peppercorn ranch dressing, divided
1 -2 tablespoon onion powder
1 -2 tablespoon garlic powder
1/2 tablespoon crushed red pepper flakes
2 large eggs
2 cups fine dry breadcrumbs
3/4-1 cup mild chunky salsa
3/4-1 cup chpd fresh cilantro
2 cups vegetable oil, for frying
fresh cilantro stem

Steps:

  • Cook tortellini according to pkg directions; drain and cool.
  • Whisk together 2 cups dressing, onion powder, garlic powder, red pepper flakes and eggs in a large bowl until blended.
  • Add tortellini, and let stand 10 minutes.
  • Drain & dredge in breadcrumbs; place on baking sheet.
  • Chill at least 1 hour.
  • Stir together remaining dressing, salsa and cilantro; chill.
  • Pour oil into a Dutch oven; heat to 375°F.
  • Fry tortellini, in batches, until golden brown.
  • Drain on paper towels.
  • Serve with dip; garnish, if desired.
  • NOTE: To make ahead, fry tortellini according to directions; drain and place on baking sheet. Keep warm in 200F oven for 2 hours.

12 wonton wrappers
2 avocados from Mexico, peeled, pitted and sliced
½ cup coleslaw mix (shredded cabbage and carrots)
¼ cup chopped red onion
¼ cup chopped fresh cilantro
2 quarts oil for frying
¾ cup mayonnaise
¾ cup sour cream
1 (4 ounce) can chopped green chiles
1 (1 ounce) packet dry ranch dressing mix
1 clove garlic, minced
¼ cup chopped fresh cilantro

Steps:

  • Lay out a square wonton wrapper with one point facing you. Place 1 to 2 slices of avocado in the center. Top with cole slaw mix, onion and cilantro. Moisten the edges of the wonton using your finger dipped in water. Fold wonton over to make a triangle. Then flip in the two corners to secure. Press all edges to ensure the seams are secure. Continue until all of the wontons are filled.
  • Heat oil in a cast iron pan over medium-high heat to 350 degrees F, or when a drop of water sizzles when sprinkled on surface. If necessary, cook wontons in batches to avoid crowding. Fry wontons on each side until wrappers are golden brown and crisp, 2 to 3 minutes. Drain on paper towels.
  • Combine mayonnaise, sour cream, green chiles, ranch dressing mix, garlic and cilantro in a bowl. Stir until well blended (you can also use a blender for this). Serve as a dipping sauce for the wontons.
