JALAPENO-CILANTRO RANCH DIP
Cool, herby, slightly spicy dip. Perfect with tortilla chips, mixed into guacamole, or on tacos. Refrigerate for up to 1 week. Can be frozen and then defrosted in the fridge, but the texture changes slightly -- it's best fresh.

- Combine sour cream, cilantro, mayonnaise, jalapenos, and ranch dressing mix in a blender. Pulse until cilantro and peppers are finely minced and incorporated. You might need to stir with a spatula a few times to make sure everything's fully mixed. Serve immediately or refrigerate.

SPICY CILANTRO RANCH DIP
You can add green bell pepper instead of jalapeno. Or you can try using basil if you don't like cilantro.

Steps:
- 1. In a small blender, add Ranch dip mix, 16 oz sour cream, chopped cilantro and fresh jalapeno - no seeds. I put in a blender just long enough to mix (I like little pieces of jalapeno. Add a splash of water or cream if needed to thin out in order to mix better. Gradually add chopped jalapeno depending on spice -add jalapeno seeds if you want it really spicy. It will get spicier as it sits. Eat with fresh veggies, chips, or crackers.

Steps:
- Cook tortellini according to pkg directions; drain and cool.
- Whisk together 2 cups dressing, onion powder, garlic powder, red pepper flakes and eggs in a large bowl until blended.
- Add tortellini, and let stand 10 minutes.
- Drain & dredge in breadcrumbs; place on baking sheet.
- Chill at least 1 hour.
- Stir together remaining dressing, salsa and cilantro; chill.
- Pour oil into a Dutch oven; heat to 375°F.
- Fry tortellini, in batches, until golden brown.
- Drain on paper towels.
- Serve with dip; garnish, if desired.
- NOTE: To make ahead, fry tortellini according to directions; drain and place on baking sheet. Keep warm in 200F oven for 2 hours.

AVOCADO WONTONS WITH SPICY RANCH DIP
Wontons filled with avocado, coleslaw mix, red onion and fresh cilantro are deep fried until crispy and served with a creamy ranch-style dip.

Steps:
- Lay out a square wonton wrapper with one point facing you. Place 1 to 2 slices of avocado in the center. Top with cole slaw mix, onion and cilantro. Moisten the edges of the wonton using your finger dipped in water. Fold wonton over to make a triangle. Then flip in the two corners to secure. Press all edges to ensure the seams are secure. Continue until all of the wontons are filled.
- Heat oil in a cast iron pan over medium-high heat to 350 degrees F, or when a drop of water sizzles when sprinkled on surface. If necessary, cook wontons in batches to avoid crowding. Fry wontons on each side until wrappers are golden brown and crisp, 2 to 3 minutes. Drain on paper towels.
- Combine mayonnaise, sour cream, green chiles, ranch dressing mix, garlic and cilantro in a bowl. Stir until well blended (you can also use a blender for this). Serve as a dipping sauce for the wontons.

I had this dip at a appetizer party. It was so good I had to request the recipe. With its mild spicy flavor it is a perfect dip with any chip or pretzels. Hope you enjoy it as much as I do!
