- In a Dutch oven, cook beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring frequently. If desired, serve with additional jalapeno and sour cream.

SPICY BEEF CHILI

Steps:
- In a medium, hot soup pot brown the chuck with the thyme, sage and garlic. When browned remove and drain beef. Set aside. In the same pot heat the oil and add the onion, garlic, shallot, red bell pepper and jalapeno. Saute until vegetables begin to brown, about 7 to 10 minutes. Add chili powder, cayenne pepper, chipotle pepper, salt and cook, stirring, until spices begin to stick to the pan. Add Gallo burgundy and cook until liquid is reduced by 1 half. Add tomatoes and bring to a boil. Stir in beans and reserved beef and simmer, partially covered, over medium low heat for 1 hour. Serve with corn chips. Chili may be made, up to 2 days in advance and kept covered and refrigerated. Reheat to serve.
SPICY CHILLI MINCE

- Brown mince in small batches and if there is any, drain liquid into cup each time. Put cup in fridge and when fat is solidified, spoon off and reserve mince juices.
- Gently fry the cumin, corriander and chilli powder in oil for a couple of minutes then add tomato puree and cook out for a few minutes.
- Add onion, celery, carrot and garlic and sweat with lid on for 10 mins. Add browned mince and stir through. Add wine and reduce. Add tomatoes, milk, Marmite, mince juices, herbs, ketchup and lea and perrins. Simmer slowly for about 2/3 hours (taking lid of last 30 mins to reduce).
- After 2/3 hours of gentle simmering, the finished mince should have little liquid. Season well with salt and pepper.
- Add fresh chillies/dried chilli flakes to taste.

- Mix together the beef, garlic, ginger, chilli flakes, soy sauce and kecap manis in a bowl. Cover and place in the fridge for ½ hour an hour.
- Heat 1 tablespoon of vegetable oil in a wok or large frying pan over medium-high heat.
- Add the beef mixture and fry, stirring regularly until it gets very brown and crispy. Once you hear it start crackling add the sesame oil and mix through.
- Serve with greens and over steamed rice.

- Cook onion with garlic in non-stick fry pan or wok over medium heat until it softens.
- Add minced beef and cook until browned, breaking it up with a wooden spoon so there are no lumps.
- Add chopped tomatoes, red kidney beans, red wine, mushrooms, cumin, oregano and chilli powder (if using), stir and bring to boil.
- Reduce heat and simmer uncovered for 25 minutes or until the sauce thickens. Serve over long grain rice.

- Heat the oil in a large frying pan. Fry the ginger, garlic and chillies for 1 min. Add the mince, then cook on a high heat until golden brown, breaking it up with a wooden spoon as you go. Sprinkle over the brown sugar, fish sauce, lime juice and shredded lime leaves, then cook everything down until sticky.
- Tip the mince into a serving bowl, then serve with a bowl of lettuce leaves for wrapping the mince in; the herbs, shallots and peanuts for scattering over; and the lime wedges for squeezing.

CHILLI MARRAKECH

- Heat your largest non-stick wok or pan, tip in the cumin seeds and toast for a few secs. Remove. Add the oil to the pan and fry the onions for 5 mins until starting to colour. Add the mince, ginger and garlic, and cook, breaking up the mince with your wooden spoon, until no longer pink. Drain any excess liquid or fat from the pan.
- Stir in the tomatoes, toasted cumin, remaining spices and harissa - add more spice if you like an extra kick. Add the peppers, chickpeas, three-quarters of the chopped coriander and the stock. Cover and cook for 40 mins, stirring occasionally, until the sauce is slightly thickened. Remove from the heat. Cool, then stir in the remaining chopped coriander. Can be served or frozen at this point.
- Pack into freezer bags and smooth the mince through the bag to flatten. Use within 3 months. To serve, remove from the bags and heat from frozen in a pan on the hob with a little water until bubbling hot, then scatter with coriander.
