1-1/2 pounds ground beef
1-1/2 pounds bulk Italian sausage
3 cans (14-1/2 ounces each) stewed tomatoes
2 cans (16 ounces each) kidney beans, rinsed and drained
1 cup chopped onion
1 large green pepper, chopped
1 can (6 ounces) tomato paste
2 jalapeno peppers, finely chopped
2 tablespoons chili powder
2 tablespoons white vinegar
1 tablespoon spicy brown mustard
1 tablespoon dried oregano
2 garlic cloves, minced
1-1/2 teaspoons ground cumin
1-1/2 teaspoons hot pepper sauce
1 teaspoon salt
1 teaspoon paprika
Sour cream, optional

Steps:

  • In a Dutch oven, cook beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring frequently. If desired, serve with additional jalapeno and sour cream.

1 pound coarsely ground beef chuck
1 teaspoon dried thyme leaves
1/2 teaspoon dried sage leaves
1 clove garlic, minced
2 tablespoons olive oil
1 medium yellow onion, chopped
2 cloves garlic, chopped
1/2 shallot, chopped
1 red bell pepper, seeded, chopped
1/2 jalapeno pepper, halved, seeded chopped
1 tablespoon chili powder
1/4 teaspoon cayenne pepper, or to taste
1/2 teaspoon ground chipotle pepper, or to taste
Salt, to taste
1 cup Gallo burgundy wine
One 16-ounce can crushed tomatoes
One 16-ounce cans black beans, drained and rinsed
One 16-ounce bag corn chips

Steps:

  • In a medium, hot soup pot brown the chuck with the thyme, sage and garlic. When browned remove and drain beef. Set aside. In the same pot heat the oil and add the onion, garlic, shallot, red bell pepper and jalapeno. Saute until vegetables begin to brown, about 7 to 10 minutes. Add chili powder, cayenne pepper, chipotle pepper, salt and cook, stirring, until spices begin to stick to the pan. Add Gallo burgundy and cook until liquid is reduced by 1 half. Add tomatoes and bring to a boil. Stir in beans and reserved beef and simmer, partially covered, over medium low heat for 1 hour. Serve with corn chips. Chili may be made, up to 2 days in advance and kept covered and refrigerated. Reheat to serve.

A delicious and versatile mince recipe that goes brillantly with potatoes, pasta, rice, bulgar wheat etc...

Steps:

  • Brown mince in small batches and if there is any, drain liquid into cup each time. Put cup in fridge and when fat is solidified, spoon off and reserve mince juices.
  • Gently fry the cumin, corriander and chilli powder in oil for a couple of minutes then add tomato puree and cook out for a few minutes.
  • Add onion, celery, carrot and garlic and sweat with lid on for 10 mins. Add browned mince and stir through. Add wine and reduce. Add tomatoes, milk, Marmite, mince juices, herbs, ketchup and lea and perrins. Simmer slowly for about 2/3 hours (taking lid of last 30 mins to reduce).
  • After 2/3 hours of gentle simmering, the finished mince should have little liquid. Season well with salt and pepper.
  • Add fresh chillies/dried chilli flakes to taste.

500 g beef mince (ground beef) ((1.1lb) (notes 2))
2 cloves garlic, crushed
1 tablespoon finely grated ginger ((notes 1))
1 teaspoon dry chilli flakes (or to taste)
2 tablespoons light soy sauce ((notes 1))
2 ½ tablespoons kecap manis ((notes 1 & 4))
1 tablespoon vegetable oil ((notes 1))
1 teaspoon sesame oil
2 tablespoons light soy sauce
2 1/2 tablespoons kecap manis
1 teaspoon grated ginger
1/2 teaspoon sesame oil

Steps:

  • Mix together the beef, garlic, ginger, chilli flakes, soy sauce and kecap manis in a bowl. Cover and place in the fridge for ½ hour an hour.
  • Heat 1 tablespoon of vegetable oil in a wok or large frying pan over medium-high heat.
  • Add the beef mixture and fry, stirring regularly until it gets very brown and crispy. Once you hear it start crackling add the sesame oil and mix through.
  • Serve with greens and over steamed rice.

1 medium onion, finely chopped
1 garlic clove, finely chopped
500 g minced beef
400 g chopped tomatoes
400 g red kidney beans in chili sauce
1/2 cup red wine
250 g mushrooms, sliced
1 teaspoon cumin powder
1 teaspoon dried oregano
1 teaspoon chili powder (or more) (optional)

Steps:

  • Cook onion with garlic in non-stick fry pan or wok over medium heat until it softens.
  • Add minced beef and cook until browned, breaking it up with a wooden spoon so there are no lumps.
  • Add chopped tomatoes, red kidney beans, red wine, mushrooms, cumin, oregano and chilli powder (if using), stir and bring to boil.
  • Reduce heat and simmer uncovered for 25 minutes or until the sauce thickens. Serve over long grain rice.

1 pound ground sausage
1 yellow onion, chopped
2 (14.5 ounce) cans stewed tomatoes

1 (15 ounce) can light red kidney beans, drained and rinsed
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (8 ounce) jar mild salsa
¼ cup chili seasoning mix
½ teaspoon garlic powder

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef, sausage, and onion in the hot skillet until beef and sausage are completely browned, 7 to 10 minutes; drain and discard grease.
  • Stir stewed tomatoes, tomato sauce, light red kidney beans, dark red kidney beans, mild salsa, chili seasoning mix, and garlic powder into the beef mixture; bring to a boil, reduce heat to medium-low, and cook at a simmer until the flavors meld, 90 minutes to 2 hours.

1 tbsp sunflower oil
large piece fresh root ginger , peeled and grated
2 garlic cloves , crushed
2 red chillies , deseeded and finely sliced
500g minced chicken , turkey or pork
85g light brown sugar
2 tbsp fish sauce
juice 1 lime
2 lime leaves , finely shredded
mix of iceberg lettuce , Little Gem and cos leaves
large handful mint and coriander leaves, very roughly chopped
handful toasted peanuts , roughly chopped
2 shallots , finely sliced into rings
1 lime , cut into wedges

Steps:

  • Heat the oil in a large frying pan. Fry the ginger, garlic and chillies for 1 min. Add the mince, then cook on a high heat until golden brown, breaking it up with a wooden spoon as you go. Sprinkle over the brown sugar, fish sauce, lime juice and shredded lime leaves, then cook everything down until sticky.
  • Tip the mince into a serving bowl, then serve with a bowl of lettuce leaves for wrapping the mince in; the herbs, shallots and peanuts for scattering over; and the lime wedges for squeezing.

If you love spicy, aromatic dishes like tagine, this one-pot will become an instant favourite - it uses lean lamb mince but beef also works

1 ½ tbsp cumin seed
1 tbsp olive oil
3 onions , halved and thinly sliced
3 x 400g packs lean lamb mince
2 tbsp finely chopped ginger
4 garlic cloves , finely chopped
2 x 400g cans chopped tomatoes
1 tbsp paprika
1 tbsp ground cinnamon
1 ½ tbsp ground coriander
3 tbsp harissa
3 red peppers , deseeded and cut into large chunks
2 x 400g cans chickpeas , drained
2 x 20g packs coriander , most chopped, a few leaves left whole to serve
500ml beef or lamb stock , made with 2 cubes

Steps:

  • Heat your largest non-stick wok or pan, tip in the cumin seeds and toast for a few secs. Remove. Add the oil to the pan and fry the onions for 5 mins until starting to colour. Add the mince, ginger and garlic, and cook, breaking up the mince with your wooden spoon, until no longer pink. Drain any excess liquid or fat from the pan.
  • Stir in the tomatoes, toasted cumin, remaining spices and harissa - add more spice if you like an extra kick. Add the peppers, chickpeas, three-quarters of the chopped coriander and the stock. Cover and cook for 40 mins, stirring occasionally, until the sauce is slightly thickened. Remove from the heat. Cool, then stir in the remaining chopped coriander. Can be served or frozen at this point.
  • Pack into freezer bags and smooth the mince through the bag to flatten. Use within 3 months. To serve, remove from the bags and heat from frozen in a pan on the hob with a little water until bubbling hot, then scatter with coriander.
