- Cook pasta as directed on package. Drain. Rinse with cold water to cool; drain well.
- Meanwhile, in large serving bowl, combine mayonnaise and green chiles; mix well. Add chicken, tomatoes, bell pepper and cheese.
- Add cooked pasta to chicken mixture; toss gently to coat. Serve immediately, or cover and refrigerate until serving time. Sprinkle with green onions.

- Cut all peppers, onion, and prepare sun-dried tomatoes.
- Cook pasta and drain.
- Cook all chicken and cut into strips.
- Sauté pepper, tomatoes and onion in skillet with olive oil.
- Toss cooked chicken, pasta, veggies in dish.
- Add salad dressing and top with cheese!

- Cut chicken into bite sized pieces.
- Mix oyster sauce, soy sauce, fructose, minced garlic and water together with chicken.
- Allow chicken to marinate for 1 hour or more.
- Boil pasta until close to done.
- Drain pasta and pour marinade, chicken, and pasta back into the pot you used for pasta Add mushrooms, snowpeas or other additives now.
- Boil pasta chicken marinade mix until chicken is completely cooked.
- Drain, season to taste and serve.

This recipe comes from my mother - originally called Emäsalo chicken salad, but I'll spare you for pronouncing that! - and was published in their sailing club's cookbook. She makes it for the boat, but it's a perfect make-ahead picnic food for land too!

- Remove all the meat from BBQ chicken and discard bones and skin. Cut into cubes.
- Cut all vegetables to cubes too.
- Mix the vegetables and the chicken together in a large bowl.
- In another bowl, prepare the sauce by mixing all the incredients together. The sauce is supposed to have a strong taste, and make sure to taste it so that it's to your liking.
- Mix the sauce and the salad together, and place in a sealed container. Stores for hours in a cool place.

- To prepare the sauce, melt butter over medium heat. Add all-purpose flour, stirring until blended. Continue stirring for 3 minutes. Remove pan from the heat.
- Add milk and cream and whisk until well-blended. Return pan to medium heat. Heat mixture, stirring frequently until temperature reaches 200°F The mixture will just begin to bubble up the sides of the pot. When the mixture reaches 200° F, remove from the heat and add the 6 tablespoons of Parmesan and 3 tablespoons of Cajun seasoning.
- Sprinkle chicken breasts with the Cajun seasoning. Grill for 6 to 8 minutes, or until an internal temperature of 165° F is reached.
- Pour 4 cups of Cajun Cream Sauce into a large saute pan. Add linguini and toss with tongs until pasta is evenly coated with the sauce. Cook over medium heat for about 30 seconds.
- Divide pasta among 4 large serving plates or bowls, mounding up pasta. Slice cooked chicken on the bias into 1/4-inch strips and place on top of pasta. Sprinkle tomatoes, green onions and Parmesan over each portion. Add garlic toast and serve.

Great recipe that freezes well. A little spicy, but you can use a mild rotel or less chili powder if you don't want it as spicy.

- Sauté onion and garlic in butter. Add chili powder, chicken broth, rotel and cheese. Cook over low heat, stirring frequently, until cheese is melted. Add chicken and spaghetti. Mix together and place in large casserole dish. Cover and freeze. To prepare, thaw to room temperature. Heat in covered casserole dish at 350 for 30 - 40 minutes or until hot and bubbly.

- Heat 2 T oil in a large saucepan over medium heat.
- Add garlic and jalapeno.
- saute 3 minutes until tender but not brown.
- Add coconut milk, peanut butter, soy sauce, lime juice, sesame oil, ginger, honey and hot pepper sauce.
- Whisk until smooth and bring to a simmer.
- Remove from heat.
- Season with salt and pepper.
- This sauce can be made well in advance, covered and refrigerated.
- Heat remaining 1 T oil in a large skillet over medium high heat.
- Add bell pepper, mushrooms, and green onions.
- Saute 3 minutes.
- Add chicken and saute until cooked through,about 3 more minutes.
- Add sauce.
- Simmer until heated.
- Cook linguine in a large pot of boiling, salted water until al dente.
- Drain.
- Pour heated sauce over pasta and toss to coat well.
- Divide among plates and serve.
