PEPPERONI BISCUIT BITES
I'm single and I love finding recipes that are both inexpensive and fast to fix. These little pizza-flavored pockets call for on-hand ingredients and bake in just 10 minutes in the toaster oven.

Steps:
- In a small bowl, combine the tomato sauce, oil and seasonings. Cut each biscuit in half. Place 1 pepperoni slice on each half; fold dough over pepperoni and pinch edges to seal. Dip in tomato mixture. , Place in a shallow baking pan coated with cooking spray. Sprinkle with Parmesan cheese. Bake in a toaster oven at 450° for 10-12 minutes or until golden brown.

SPICY CHEESE BISCUITS
Sweet smoked paprika is also known as Pimentòn de la Vera. If you prefer foods less spicy, omit it from the biscuit tops.

Steps:
- Preheat the oven to 375°F. Line a baking sheet with parchment paper; set aside. In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and paprika. Using a pastry blender, cut the butter into the flour mixture until it resembles coarse meal with a few larger clumps remaining. Stir in the cheese with a fork.
- Add the cream; using a rubber spatula, stir until the dough just comes together. The dough will be slightly sticky; do not overmix. Using a 1/2-cup measure, scoop mounds of dough about 1 1/2 inches apart on the prepared baking sheet. Lightly dust with paprika. Bake, rotating the sheet halfway through, until golden brown, 15 to 20 minutes. Slide parchment and biscuits onto a wire rack to cool. Serve warm or at room temperature.

Great with eggs, chili, soup or stew.

- Preheat oven to 450°F. Butter large baking sheet. Sift first 5 ingredients twice into medium bowl. Mix in cheeses. Add shortening; rub in with fingertips until mixture resembles coarse meal. Add buttermilk, stirring until dough begins to form clumps.
- Turn dough out onto lightly floured surface; knead gently until smooth, about 8 turns. Roll out dough to 3/4-inch-thickness. Using 3-inch-diameter biscuit cutter, cut out biscuits. Gather dough scraps; roll out to 3/4-inch-thickness. Cut out additional biscuits. Transfer biscuits to prepared baking sheet. Bake until puffed and golden brown, about 15 minutes. Serve warm.
PEPPERONI BISCUITS

- Combine first 6 ingredients (flour through red pepper).
- Cut in shortening with pastry blender until mixture is crumbly.
- Stir in pepperoni.
- Add milk stirring until moist.
- Turn dough onto lightly floured surface and knead a few times.
- Roll out dough and cut with biscuit cutter.
- Place on lightly greased baking sheet.
- Bake at 425 for 13 to 15 minutes.
- Serve with a bowl of hot cheddar cheese soup.
- Delicious!
