CABBAGE AND NOODLES

Steps:
- Bring a large pot of salted water to a boil.
- Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
- In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.
SPICY CAJUN CABBAGE AND NOODLES
This recipe was a fortunate "accident" I had with leftover cabbage a few years ago but it is so good I find myself craving it. I'm the only one in my family that likes cabbage so I get to eat all of it by myself:)Hope you like it. The seasonings are approximations. This is supposed to be sweet.

Steps:
- Cook the sausage and keep it chopped up like hamburger.
- Add in the cabbage, tomatos, salsa and spices.
- Continue to cook down on low boil for about 15-20 minutes.
- Put one cup water into the mixture with the noodles.
- Cook till the noodles are soft.
- Turn the heat off and cover the pot.
- Allow to set about another 30 minutes before serving.
- The longer this sits, the better it tastes.

CABBAGE AND NOODLES

- Cook bacon in a large nonstick skillet until crispy. Remove with a slotted spoon and place on paper towel-lined plate.
- Add onion to bacon grease and cook until it begins to soften, about 2 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add noodles and cook according to package directions. When they are done, drain and place in a large bowl with butter.
- Add cabbage to skillet with bacon grease and cook until tender, about 10 minutes, using tongs to move cabbage around so that it cooks evenly. Add caraway seeds, salt, and pepper.
- Stir cabbage and bacon into noodles and serve.

SPICY SOBA NOODLES WITH SHIITAKES AND CABBAGE

- Stir together all sauce ingredients until brown sugar is dissolved, then set aside.
- Toast sesame seeds in a dry 12-inch heavy skillet (not nonstick) over medium heat, stirring, until pale golden, then transfer to a small bowl.
- Heat oil in skillet over medium-high heat until it shimmers, then sauté ginger and garlic, stirring, until fragrant, about 30 seconds. Add shiitakes and sauté, stirring frequently, until tender and starting to brown, about 6 minutes. Reduce heat to medium, then add cabbage and most of scallions (reserve about a tablespoon for garnish) and cook, stirring occasionally, until cabbage is crisp-tender, about 6 minutes. Add sauce and simmer 2 minutes.
- While cabbage is cooking, cook soba and edamame together in a pasta pot of boiling salted water (2 tablespoons salt for 6 quarts water) until noodles are just tender, about 6 minutes. Drain in a colander and rinse under cool water to stop cooking and remove excess starch, then drain well again. Transfer to a large bowl and toss with sesame seeds and vegetable mixture. Serve sprinkled with reserved scallions.

- Bring a large pan of water to a boil.
- Add the Japanese noodles to the pan and cook for 2 to 3 minutes- Drain the noodles thoroughly.
- Toss the noodles with the sesame oil and sesame seeds.
- Heat the sunflower oil in a large preheated wok or skillet.
- Add the onion slices, snow peas, carrot slices, and shredded cabbage to the wok and cook for about 5 minutes.
- Add the sweet chili sauce to the wok and cook, stirring occasionally, for another 2 minutes.
- Add the sesame noodles to the wok, toss well to combine, and heat through for another 2 to 3 minutes (You may also cook and serve the noodles separately, if you desire).
- Transfer the Japanese noodles and spicy vegetables to warm serving bowls and garnish with sliced scallions- Serve immediately.

SPICY CAJUN CABBAGE
I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

- Combine chili powder, thyme, smoked paprika, oregano, cayenne pepper, cumin, onion powder, and salt in a bowl.
- Melt butter in a large skillet over medium heat; cook and stir onion in hot butter until translucent, about 5 minutes. Add garlic and cook until soft, about 2 minutes; stir shredded cabbage into onion and garlic. Cook and stir cabbage mixture until cabbage starts to soften, about 5 more minutes.
- Stir spices into cabbage mixture and cook, stirring often, until spices are evenly mixed in and cabbage is tender, 3 more minutes.
