VEGETARIAN EMPANADAS WITH BLACK BEANS AND CORN
Steps:
- Gather the ingredients.
- Sift the flour into a bowl. Stir in the sugar and 1 teaspoon salt.
- Blend the lard (or shortening) and butter into the flour mixture with a pastry cutter, or with two knives, until fairly well blended.
- Whisk the egg yolks with 3/4 cups water.
- Stir in the water-egg mixture, a little bit at a time, until the dough starts to come together smoothly.
- Keep kneading the dough, adding more of the water-egg mixture as needed (you may need a few tablespoons extra of water), until the dough is smooth. The dough will seem a bit shaggy until it has thoroughly chilled. Taste for salt and add more if needed.
- Cover the dough with plastic wrap and refrigerate for about one hour.
- Gather the ingredients.
- Pour boiling water over the golden raisins and let soak for 10 minutes, then drain. Set aside.
- Add the vegetable oil to a heavy skillet and place over medium heat. Add the chopped onions, aji paste, cumin, and garlic salt and sauté until the onions are very soft and translucent, about 5 to 8 minutes.
- Add the chopped tomatoes, the scallions, and the sugar and sauté, stirring, for about 5 minutes more, or until excess liquid has cooked away and tomatoes are beginning to stick to the pan.
- Add the black beans and sauté, until excess liquid is cooked away, about 5 minutes.
- Add the corn, raisins, and lime juice, and cook for 5 minutes more.
- Remove mixture from heat and scrape into a heatproof bowl.
- Let cool to room temperature, then stir in the cheese cubes and the cilantro. Chill mixture for 2 hours, or overnight.
- Gather the ingredients. Preheat oven to 375 F.
- Divide the dough into 20 pieces for large empanadas or about 40 pieces for small, appetizer-size empanadas.
- Roll each piece of dough into a circle about 1/4-inch thick. (Circles will be about 6 inches in diameter for the larger empanadas and about 3 1/2 inches for the smaller ones).
- Place 1 heaping tablespoon of filling in the middle of each circle of dough (1 teaspoon for small empanadas).
- Fold the dough over the filling to make a semicircle. Press the edges together firmly to seal.
- Fold the edge over itself and crimp decoratively.
- Transfer to a parchment-lined baking sheet and brush the empanadas generously with the beaten egg.
- Bake for about 20 minutes, or until puffed and golden brown.
- Let cool and dust with powdered sugar.
- Serve warm or at room temperature.

SPICY BEEF EMPANADAS
I experimented with some empanada recipes I found and added some of my favorite ingredients to come up with these delicious spicy beef empanadas, which was an instant hit at the dinnerparty with my girlfriends. Now I have to make them at every gettogether.

- Pre-heat oven at 375°F Pour some cooking oil in a skillet and press cloves over the pan.nAdd chopped shallots and fry on low heat, until soft but not browned. Add a bit of salt and the chopped red chili pepper.
- Add ground beef and let brown on med-high heat. Drain the mixture put back in skillet. Add bell pepper and cook on high for about a minute.
- Turn heat to med-low and add cumin, chili powder, cayenne pepper, flour, and tomato sauce. Turn off the stove and let cool to room temperature.
- Now mix some worcestershire sauce (to taste, I love it and put it in practically everything, but can be omitted), vinegar, lemon juice, habanero pepper sauce (or tabasco). To add a hint of sweetness, I add tomato ketchup, about 5 tbs.Stir in chopped egg, jalapenos and cilantro. Add pepper and salt to taste.
- Let pastry thaw and cut 5" circles.
- Put pastry on baking sheet. Put about a spoonful of the meat mixture on one half of the circle. Put some beaten egg on the edges and fold. press edges with a fork. Put some more egg mixture over the empanadas for glaze. Bake in preheated oven for about 20 mins until golden brown.

SMOKY BLACK BEAN AND CORN EMPANADAS
These hearty black bean empanadas are a satisfying meal full of smoky, spicy, chipotle chile-laced black beans and Monterey Jack cheese. Smoky Black Bean and Corn Empanadas are made by sautéing onions and garlic in a skillet before adding black beans, corn and chipotles. - Heat oven to 400°F. Line large cookie sheet with cooking parchment paper.
- In nonstick 10-inch skillet, heat oil over medium heat. Add onion and garlic; cook and stir 4 to 6 minutes or until softened. Add chili powder, salt and chipotle chile; cook and stir 1 minute. Remove from heat; stir in black beans and corn.
- On lightly floured surface, unroll 1 pie crust. Roll to 14-inch circle. Cut out four 6-inch circles. Repeat with remaining pie crust. Spoon about 1/4 cup black bean mixture and 2 tablespoons cheese over half of each round to within 1/2 inch of edge.
- Brush edges with water. Fold dough over filling; press edges firmly with fork to seal. Place on cookie sheet. Cut 3 small slits on top of each empanada.
- Bake 13 to 18 minutes or until golden brown and filling is hot. Serve warm.

- Thaw the pastry sheets at room temperature for 40 minutes or until they're easy to handle. Heat the oven to 375 degrees F. Line 2 baking sheets with parchment paper or spray with vegetable cooking spray. Stir the egg and water with a fork in a small bowl.
- Cook the pork in a 12-inch skillet over medium-high heat until the pork is well browned, stirring frequently to break up meat. Add the diced red pepper, green onions and garlic. Cook until tender. Stir the tomato sauce, cumin, chili powder and crushed red pepper into the skillet. Reduce the heat to low and cook for 8 minutes. Remove from the heat. Stir in the cheese, 1 cup of the beans and cilantro. Let cool.
- Unfold 1 pastry sheet on a lightly floured surface. Roll to a 16x12-inch rectangle. Cut into 10 (2 1/2-inch) rounds. Top half of each round with 1 teaspoon cheese mixture. Brush edges of pastry with water. Fold over and press the edges with a fork to seal. Place the empanadas on the prepared baking sheet. Repeat with remaining pastry and cheese mixture. Brush with the egg mixture.
- Bake for 18 minutes or until golden. Serve with sour cream, guacamole and remaining beans.
