Provided by Food Network

Yield 4 Serving

Number Of Ingredients 12

1 can (15 ounces) black beans, rinsed and drained
1 packet (1.25 ounces) taco seasoning mix
Kosher salt and black pepper
½ cup frozen corn, do not thaw
1 packet instant original oatmeal
1 egg*, beaten
3 tablespoons olive oil
4 multi-grain wheat buns, toasted
4 teaspoons mayonnaise
Shredded lettuce
Prepared salsa
*Egg substitute equivalent can be used.

Steps:

  • 1. Mash beans in large bowl or plastic bag, leaving a few chunks. Stir in taco seasoning, salt and pepper as desired. Stir in corn, oats and egg. Refrigerate mixture 10 minutes to hydrate the oats. 2. Heat oil in large skillet over medium heat. When oil begins to swirl, scoop one-fourth of the bean mixture and drop onto pan, slightly smoothing it into a circle. Cook on one side until golden and a bit crisp, about 8 minutes; !ip and cook on the other side 8 minutes more. 3. Spread bottom of each bun with thin layer of mayonnaise. Top with lettuce, patties, salsa and bun top.

SPICY BLACK BEAN BURGERS

Spicy Black Bean Burgers image

I tried this recipe after finding it on the internet, hoping to convince my family to eat vegetarian every now and then. It worked! It worked so well, they didn't even know there wasn't any meat in their burgers! This is nice and spicy and gets a lovely crust on it. This is vegetarian and vegan. You don't even need to serve it on a bun if you like! If you don't mind the cheese, it's great with a little shredded cheddar on top. Prep time includes 2 hours chilling.

VEGAN BLACK BEAN BURGERS WITH OATS

Vegan Black Bean Burgers with Oats image

Crispy outside, soft inside. Place burgers on buns and add condiments and toppings of choice, e.g. lettuce, pickles, tomato, raw or grilled onion, grilled mushrooms, avocado, jalapenos, bell peppers, ketchup, mustard, barbecue sauce, etc.

Provided by Crystal Lirette

Categories     Main Dish Recipes     Burger Recipes     Veggie

Time 1h15m

Yield 15

Number Of Ingredients 15

2 ½ cups canned black beans, liquid reserved
2 cups rolled oats, or more as needed
2 cups raw sunflower seed kernels
1 (16 ounce) package white mushrooms, stemmed and quartered
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 white onion, cut into 1-inch pieces
3 tablespoons chopped fresh parsley
2 tablespoons vegan Worcestershire sauce
2 tablespoons salt, or more to taste
2 tablespoons ground black pepper
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon ground cumin
vegetable oil as needed

Steps:

  • Process black beans in a food processor or blender with just enough of the reserved can liquid to get the processor going. Place into a large bowl.
  • Blend oats in the food processor until they become oat flour; add to the large bowl. Blend sunflower seeds until finely ground; add to the bowl. Blend mushrooms, bell peppers, and onion in batches in a food processor and add to oat mixture. Mix in parsley, Worcestershire, salt, pepper, onion powder, garlic powder, and cumin thoroughly using your hands or a rubber spatula, adding more processed oats if needed to hold shape.
  • Roll mixture into 15 tight balls, flatten, and cup the sides to ensure the patties do not have cracks. Place on wax or parchment paper.
  • Heat oil in a large skillet to 350 degrees F (175 degrees C), or over medium heat. Place patties carefully into the hot oil using your hands or a spatula, working in batches. Cook until browned and crispy, 3 to 5 minutes on each side. Remove and place onto a paper towel-lined plate to drain excess oil, about 2 minutes. Repeat with more oil until all burgers are cooked.

SPICY BLACK BEAN BURGERS WITH OATS

Spicy Black Bean Burgers With Oats image

Here is a healthy vegetarian alternative to your typical hamburger. I have included several spicy ingrecients to kick up the blandness of the black beans and oats.

Provided by Andtototoo

Categories     Black Beans

Time 35m

Yield 5-6 serving(s)

Number Of Ingredients 13

4 tablespoons oil
1 onion, diced
2 jalapeno peppers, minced
2 teaspoons garlic, minced
1 teaspoon Mexican chili powder (mild)
1 teaspoon ground cumin
1/4 teaspoon dried oregano
3 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups quick-cooking oats
2 eggs, beaten
1/2 cup chopped fresh cilantro
2 teaspoons salt
1/4 teaspoon ground black pepper

Steps:

  • Heat a nonstick frying pan over medium heat until hot. Add the oil and when it is warm, add the onion. Stir-fry for 5 minutes.
  • Add the jalapeno peppers and cook for another 2 minutes, stirring occasionally.
  • Add the garlic and cook for another 2 minutes, stirring occasionally.
  • Turn off heat and stir in the chili powder, ground cumin and oregano. Remove from heat and set aside to cool.
  • Meanwhile, rinse and drain (several times) the black beans and then put them into a large mixing bowl.
  • Roughly mash the black beans with a potato masher or a fork.
  • Add the uncooked oats and stir to combine.
  • Add the cooked onions and stir to combine.
  • Add the eggs, cilantro (more or less depending on how much you like cilantro), salt and pepper. You can add a bit more pepper if desired.
  • Mix well and form into patties. They are easier to fry if you make a smaller size pattie and use a smaller hamburger bun.
  • Heat a frying pan over medium-high heat and cook 4-5 minutes on the first side, or until well browned. Carefully flip over the burgers and cook about 3 minutes on the second side. Like most vegetarian burgers, they can crumble, so extra care needs to be taken when frying them.
  • Serve with your favorite garnishes.

SPICY BLACK BEAN BURGERS

Spicy Black Bean Burgers image

My husband and I love these. I serve them on homemade whole wheat buns, topped with some cilantro mayonnaise. I use cooked dried beans, but a can of beans works equally well. Using the dried beans I can make these for less than $0.25 each! Often I triple this recipe and freeze burgers for future use.

Provided by Victoria in Fort Wa

Categories     Black Beans

Time 1h10m

Yield 4 burgers, 4 serving(s)

Number Of Ingredients 11

1 teaspoon canola oil
2 cups black beans, cooked (or 1 can, drained and rinsed)
1 egg, beaten
1/2 cup quick-cooking oats
1/4 cup red onion, diced
2 garlic cloves, minced
1/2 tablespoon chili paste
1/2 teaspoon kosher salt
1/4 teaspoon cracked black pepper
2 tablespoons cilantro, chopped
2 tablespoons canola oil

Steps:

  • Heat 1 teaspoon of the oil over medium heat.
  • Add the red onion and garlic to the pan and saute until softened, about 8 minutes and then set aside to cool for a few minutes.
  • Combine beans, egg, oats, onion, mixture, chili paste, salt, pepper and cilantro and thoroughly mix and mash until pretty homogeneous, leaving a few whole beans.
  • Divide mixture into 4 equal portions and shape into patties.
  • Refrigerate patties for half an hour. (This step is not completely necessary but I find it helps hold the burgers together while cooking.).
  • Heat 2 tablespoons oil in large non-stick skillet over medium-high heat.
  • Place burgers carefully into the oil, being careful not to crowd the pan.
  • After 4 minutes, flip and cook another 4 minutes. They should feel firm to the touch when finished.
  • Note: To freeze for later use, after shaping flash freeze and then wrap in plastic wrap. Place wrapped burgers into freezer bag and squeeze out excess air. To cook from frozen, simply heat frozen burgers over medium-high heat on the stove-top, cooking until done.

  • Add the oats to your food processor and pulse the oats 5 or 6 times until a coarse crumb forms.
  • Add the black beans, cilantro, if using, garlic, onion, hot sauce, salt, cumin, chili flakes, pepper and egg to the oats in the food processor. Pulse the food processor until everything is well mixed (7 or 8 3-second pulses should do it). It is ok if the mixture looks a little chunky at this point, you want some texture in these burgers.
  • Form the mixture into 6 patties by scooping out a heaping 1/3 cup of the mixture, rolling it into a ball in your palms (the ball should be smaller than a tennis ball but bigger than a golf ball) then flattening it into a disk that is about 1/2-inch thick, smoothing any cracks that form around the edges. Place on a piece of parchment paper and set aside. (I scoop my patties right from the food processor bowl to save on dishes but if it's easy to transfer the burger mixture to a mixing bowl then go for it.)
  • In a large skillet over medium, heat 2 tablespoons of oil. In batches (if needed), cook the patties for 6-8 minutes per side or until crispy and browned and warmed through.
