SPICY AMERICAN SPANISH RICE
Great Spanish rice as a main course meal. I usually serve it with mashed potatoes. Can be made less spicy using regular tomatoes.

Steps:
- Melt butter in a skillet over medium heat. Cook and stir rice in the melted butter until rice is lightly browned, 3 to 4 minutes. Stir bell pepper and onion into rice and cook until bell pepper is softened and onion is translucent, 5 to 8 minutes.
- Break the ground beef into the rice mixture; cook and stir until beef is completely browned, 8 to 10 minutes. Stir tomato sauce and diced tomatoes into ground beef mixture. Cover, reduce heat, and simmer until rice is tender and liquid is absorbed, about 20 minutes.

GUY'S SPICY SPANISH RICE
Steps:
- Heat the grill or broiler to high.
- Arrange the red bell, poblano, jalapeno, serrano and corn on the grill or under the broiler. Char, turning frequently, until the peppers have blistered and corn is starting to brown slightly. The smaller peppers will finish first, as they do, transfer to a small paper bag and close. Let the peppers sweat and cool, then remove the seeds and skin and dice. Cut the corn kernels from cob. Add the peppers and corn to a small bowl and stir to combine. Set aside.
- In a large Dutch oven, heat the oil over medium-high heat. Add the onion, yellow bell pepper and chayote. Saute until just starting to caramelize. Season with salt, pepper and cayenne. Stir in the garlic and rice and saute for 3 to 4 minutes. Add the chicken stock, cover and cook for 10 minutes. Stir in prepared peppers and corn, the olives, black beans and tomatoes. Cook until the rice is tender, about 6 to 8 minutes.
- Turn off the heat, add the cilantro and adjust seasonings, if necessary. Transfer to a serving bowl and serve immediately.

- Heat the oil in a frying pan and cook the onion for 5 mins until soft. Add the pork and fry a few mins to brown it a little.
- Tip in the garlic, rice and paprika, stirring briefly. Stir the saffron into the bouillon, then pour this in as well. Add the pepper, cover the pan, reduce the heat and simmer for 25 mins before mixing in the beans. Cover and cook for 10 mins more.
- Add the prawns, cover again and cook for 2 mins until the rice has absorbed all the liquid. Stir in the parsley and serve with lemon wedges.

- In a large skillet, with a lid, over medium heat add 2 Tablespoons Vegetable Oil.
- Add 2 Cups uncooked long grain rice and 1/2 cup chopped onions.
- Stir, sauteing until onions are translucent and rice is beginning to turn a light brown.
- Reduce heat to low.
- Add 2 cups chicken broth, 1 cup of water, 1 cup of tomato sauce, 2 Tablespoons of Taco Seasoning, and 1/2 tsp ground cumin. Stir well.
- Cover and Simmer for 20-30 minutes until rice has absorbed all the liquids.
- Fluff with fork and top with chopped cilantro if desired.

MILD OR SPICY SPANISH RICE
I love heat but my family...not so much, so here it two versions, cooked the same on more heat to one. The heat in this recipe comes from the Chile de Arbol peppers and the Mrs. Dash Southwest and Chipotle spice, reduce amounts of each or both for a milder rice.

Steps:
- 1. NOTE: Different types of rice call for different amounts of liquid, go by package directions for info.
- 2. Simmer broth with 4 cloves of garlic and 12 chile de arbol dried peppers for 15 min. But sure to have the amount of broth your rice calls for when finished.
- 3. Remove stems from chiles and place peppers and garlic in food processor with about 1/2 to 1 c of broth. Puree and set aside.
- 4. In a large skillet melt butter. Add rice and all dry spices and chopped anaheim pepper, cook over med high heat for about 10 min. Add broth including the chiles and garlic. Cover and bring to a boil, reduce to a simmer and cook according to package directions.
SPICY RICE
Steps:
- In a sauce pan combine oil, onion and green pepper. Saute over medium heat until vegetables are tender. Sprinkle in cayenne pepper. Add heated chicken stock and tomatoes. Bring to a boil. Add rice and stir. Cover and reduce to a simmer. Continue simmering over low heat until all liquid is absorbed. Serve hot.
SPICY MEXICAN RICE

- Heat the oil in a deep lidded frying pan. Cook the onion, garlic, chilli and pepper for 10 minutes until starting to soften. Stir in the basmati, then cook for 3-4 minutes, stirring all the time.
- Mix in the chipotle paste and cook, stirring for a couple of minutes until fragrant, then tip in the tomatoes and stock, and stir well.

- Boil brown rice until al-dente in the vegetable stock. If you find that the stock is being absorbed too fast, add a little bit of water at a time. I added 1.5 cups of water towards the end. Strain any excess water once cooked.
- In a pan, heat up your oil. Add in the red onions and mix until they are slightly translucent. Add in the garlic and let it cook for about 30 seconds.
- Stir in the can of fire roasted tomatoes, jalapeno and tomato paste. Let it all cook for about 1 minute. (It's ok if the liquid from the can is in the pan. It will keep the rice from being dry)
