4 MINUTE SPICY GARLIC SHRIMP

- Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.
GARLIC & HERB ROASTED SHRIMP
Steps:
- Preheat the oven to 400 degrees.
- Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
- Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.
SPICY GARLIC AND LEMON CRUSTED SHRIMP
Found this shrimp recipe in an ad for Wild American Shrimp. Prep time does not include 1 hour to marinate. Meant to be an appetizer for 4 but could be main dish for 2.

- Combine shrimp, garlic, shallots, black pepper, salt, lmeon zest and juice, thyme sprigs, Worcestershire, hot sauce, and beer in a large bowl. Cover and chill for at least 1 hour and up to 6 hours.
- Heat a 12-inch skillet over moderately high heat until hot, then add 2 tablespoons of the butter and the shrimp and marinade all at once, stirring constantly. Cook for 4 minutes or until the shrimp is pink and the bits of garlic are golden brown.
- Remove shrimp from the pan and stir in the remaining 2 tablespoons of butter. (The sauce should have a thick consistency.).
- Spoon the sauce over the shrimp. Serve over pasta or rice or with warm crusty bread.

- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain and set aside.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Heat 1/4 cup butter over medium heat in a large, deep skillet. Add garlic; cook and stir until fragrant. Add shrimp, white wine, and lemon juice; continue to cook and stir until shrimp is bright pink on the outside and the meat is opaque, about 5 minutes. Stir in red pepper flakes until well combined. Remove from heat and set aside.
- Place remaining 1/4 cup butter, bread crumbs, 1/2 the Parmesan cheese, and parsley in a bowl. Stir until well combined. Set aside.
- Place cooked pasta into shrimp scampi mixture; toss until fully coated in sauce. Add remaining Parmesan cheese and toss well. Top with bread crumb mixture.
- Broil in the preheated oven until golden brown, 3 to 4 minutes. Serve immediately.

- Preheat oven to 375 degrees. Rinse frozen shrimp to separate, then arrange in a single layer on a baking sheet. In the bowl of a food processor, add cold butter, garlic, lemon juice, salt, parsley, and red pepper. Pulse until combined. Sprinkle cold butter crumbles over the shrimp. Bake until shrimp is opaque and butter is hot and bubbly. Serve with hot crusty bread. Peel and eat the shrimp, then dip the bread into the butter in the bottom of the pan.

Found this gem on the Canadian Food Network. Christine Cushing is the author. It has become our favorite shrimp recipe. Use your imagination to season the flour. Do keep it simple so your don't overpower the crisp, clean flavor of the shrimp. I like to use 1 teaspoon of lemon pepper. This can be used as an appetizer, or a main dish served with your favorite rice recipe. Our rating system for keeper recipes is simple. - Add seasoned flour to a shallow baking dish for dredging.
- In a bowl, beat together eggs, milk, and parsley.
- Add panko to a second shallow baking dish.
- Dredge shrimp in flour, then egg mixture, and coat with panko.
- Pour oil in a heavy skillet and heat to medium high.
- Place 6 to 8 shrimp in the hot oil and cook until golden brown, about 1 to 2 minutes.
- Transfer to a plate lined with paper towels.
- Repeat with remaining shrimp.
- While shrimp is cooking, mix plum sauce and horseradish.
- Serve shrimp with sauce on the side.
- Prep time does not include de-veining and cleaning shrimp.
