Yield Makes 25 doughnuts

Number Of Ingredients 8

4 tablespoons butter
4 tablespoons milk
4 envelopes plus 1 teaspoon active dry yeast
2 large eggs
4 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons coarse salt
Vegetable oil, for frying

Steps:

  • Heat 1 cup water and the butter in a small saucepan until butter melts. Set aside to cool.
  • Combine milk and yeast in a large bowl; whisk to dissolve yeast. Add eggs. Do not mix.
  • Add flour, sugar, and salt in that order. Do not mix.
  • Add the butter mixture and mix until just combined.
  • Wrap bowl tightly with plastic. Refrigerate for 2 hours or up to 2 days.
  • Place dough on floured surface and gently roll out to about 1 inch thick. Cut out circles of dough with a 2-inch round cutter. Place on a well-floured, parchment-lined baking sheet.
  • Heat at least 3 1/2 inches of oil in a pot until 325 degrees. Fry bomboloni in batches, turning once, until golden brown, 2 to 4 minutes per side. Remove, and drain on paper towels. Dredge in spiced sugar.
  • To make spiced sugar: Combine 1 cup sugar, 2 teaspoons cinnamon, 1 teaspoon ground ginger, 1/4 teaspoon ground cloves, 1/4 teaspoon allspice, and 1 teaspoon nutmeg in a small bowl.

1 1/2 cups whole milk
1/4 cup sugar
3 tablespoons cornstarch
Pinch fine sea salt
2 large egg yolks
1 teaspoon orange liqueur, such as Grand Marnier
2 tablespoons unsalted butter, softened
1 teaspoon pure vanilla extract
1 teaspoon finely grated orange zest
1/2 cup heavy cream, whipped to soft peaks
3 cups all-purpose flour, plus more for dusting
1/2 cup lukewarm water, plus more if needed
1 1/2 tablespoons clover honey
1 1/2 envelopes active dry yeast (3 1/4 teaspoons)
3 tablespoons milk
1/3 cup pure cane granulated sugar
1/4 teaspoon fine sea salt
6 large egg yolks
3 tablespoons unsalted butter, softened
Canola oil, for greasing
1 cup heavy cream
8 ounces bittersweet chocolate, coarsely chopped
2 tablespoons orange liqueur
1/4 teaspoon pure vanilla extract
3 cups canola oil, for frying and greasing
Pure cane granulated sugar, for rolling
All-purpose flour, for dusting
Confectioners' sugar, for dusting

Steps:

  • For the pastry cream: Bring the milk to a simmer in a small saucepan over low heat. Whisk together the sugar, cornstarch, salt and eggs in a small bowl until pale. Slowly whisk in the hot milk, and then return the mixture to the pan and whisk constantly over medium heat until thickened, about 2 minutes. Add the liqueur and cook for 30 seconds longer. Remove from the heat, stir in the butter, vanilla and orange zest. Cover with plastic wrap and cool to room temperature. Refrigerate until cold, at least 4 hours and up to 24 hours. Just before using, fold in the whipped cream until combined. Keep cold.
  • For the bomboloni: Combine 1 cup plus 2 tablespoons of the flour, the water, honey and yeast in the bowl of an electric stand mixer and mix. Cover the bowl with plastic wrap and let stand at room temperature until foamy, about 1 hour.
  • Return the bowl to the mixer, fitted with a dough hook. Add the remaining flour, along with the milk, granulated sugar, salt and egg yolks. Mix at low speed until blended, and then add the butter. Knead at medium speed until silky but sticky, about 5 minutes. Keep in mind that the dough will not pull away from the sides of the bowl. Scrape the dough into an oiled bowl using an oiled spatula and cover with plastic wrap. Refrigerate overnight. The dough will not rise.
  • For the dipping sauce: Bring the heavy cream to a simmer in a small saucepan. Put the chocolate in a medium bowl. Add the hot cream and let sit for 1 minute. Gently whisk until smooth; stir in the orange liqueur and vanilla extract. Keep warm.
  • For frying: Heat the canola oil in a large saucepan to 360 degrees F. Line a wire rack with paper towels. Fill a shallow bowl with 1/2 inch granulated sugar. Roll out the dough on a lightly-floured surface to a scant 1/2-inch thick. Stamp out 32 rounds using a 1/2-inch-round biscuit cutter; do not re-roll the dough. Fry the rounds, 8 at a time, until they are browned, about 4 minutes. Be sure to keep the oil between 360 degrees F and 375 degrees F. Transfer the bomboloni to paper towels to drain the excess oil, then roll them in the granulated sugar. Continue frying and rolling the remaining bomboloni.
  • Fit a pastry bag with a 1/4-inch plain tip and fill with the pastry cream. Gently push the tip three-fourths of the way into the bomboloni and squeeze in the cream, pulling the tip out slightly as you squeeze to fill them as much as possible. Serve warm. Dip into the chocolate-orange sauce and dust with confectioners' sugar.

I strongly suggest that you use a stand mixer for this recipe. I cannot guarantee the motor of a hand-held mixer will hold up to the strength of this dough.

Scant 1/4 cup loosely packed fresh compressed yeast
Scant 1/4 cup cold water
3 1/2 cups bread flour
4 large eggs
1/3 cup granulated sugar, plus extra for coating
1 1/2 teaspoons salt
3/4 cup plus 2 tablespoons unsalted butter, cubed
Vegetable or canola oil
Raspberry jam

Steps:

  • Dissolve the yeast in a small bowl with the cold water. Place the flour, eggs, sugar, and salt in the bowl of a stand mixer fitted with the paddle attachment and beat on medium speed until the ingredients are dispersed, about 5 seconds. Add the dissolved yeast and beat for about 2 minutes on medium-high speed, until the dough is well combined and holds together. Add the cubed butter and mix for another 5 to 7 minutes, until the dough no longer sticks to the side of the mixing bowl. If the dough is overly sticky, you may need to add about 1 tablespoon of flour. It is usually necessary to scrape down the side of the bowl with a rubber spatula to encourage the dough to form a ball and come away from the side. Remove the paddle and pat the dough into a ball at the bottom of the bowl. Cover the mixing bowl with plastic wrap and let the dough rest at room temperature for about 20 minutes. The dough will rise slightly.
  • Remove the dough from the mixing bowl and punch it down to remove the air. Spread it onto a lightly floured baking sheet with your fingers and flatten the dough until it is about 3/4-inch thick. Cover with plastic wrap and let it rest in the refrigerator for a minimum of 2 hours or overnight. It will slightly proof.
  • Remove the dough from the refrigerator and place on a lightly floured work surface. Flatten it slightly with your hands. Cut the dough into circles with a 1 1/2-inch diameter cutter, keeping the cuts as close together as possible. Pat any leftover dough into a rectangle and cut more circles out of it. (At this stage, the Bombolini can be frozen for up to 1 week if well wrapped in plastic wrap. Allow the Bombolini to defrost in the refrigerator before proofing.)
  • Place the Bomboloni on a parchment covered baking sheet lightly sprayed with vegetable cooking spray. Space them 2 inches apart. Loosely cover the baking sheet with plastic wrap. Allow the Bomboloni to proof at room temperature for about 2 hours, until they have doubled in size and appear light and full of air.
  • Heat the oil about 15 minutes in an electric fryer or in a 4-quart heavy-bottomed saucepan over medium-high heat to 320 degrees F. If using a saucepan, check the temperature with a candy thermometer. Fry 5 to 7 Bomboloni at one time, any more than that and the oil temperature will dip down too much and they will not fry evenly. Fry for a total of 3 to 5 minutes, until they are golden brown. Turn to evenly fry each side. As they fry, they will increase in size. Remove the Bomboloni with a large slotted spoon and set on a paper towel to drain the excess oil.
  • While the Bomboloni are still warm, roll them in a bowl filled with granulated sugar until evenly coated. If desired, fill the Bomboloni with a jam-filled pastry bag fitted with a 1/4-inch plain tip. Use a sharp paring knife to make a small hole on the bottom of each Bomboloni. Place the tip of the pastry bag in the hole and squeeze until the Bomboloni feels heavy. It is best to fill the Bomboloni while they are still warm and the dough soft and pliable. Serve immediately.

1 teaspoon active dry yeast (from a 1/4-ounce package)
Scant 1/2 cup warm whole milk (105-115°F)
1 1/4 cups all-purpose flour, divided
1 large egg
2 tablespoons unsalted butter, softened
2 tablespoons sugar
1/2 teaspoon salt
1/4 pound chilled Gorgonzola, rind discarded and cheese cut into 16 (3/4-inch) cubes
About 4 cups vegetable oil
a stand mixer fitted with paddle attachment; a deep-fat thermometer

Steps:

  • Stir together yeast and milk in bowl of mixer and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.) Mix in 3/4 cup flour. Cover bowl with plastic wrap and a kitchen towel and let dough rise in a draft-free place at warm room temperature until doubled and bubbly, about 1 hour.
  • Mix in egg, butter, sugar, salt, and remaining 1/2 cup flour at low speed until combined. Increase speed to medium and beat dough until satiny and elastic, 5 to 7 minutes. Scrape dough into center of bowl and dust lightly with flour. Cover bowl with plastic wrap and a kitchen towel and let dough rise at warm room temperature until doubled, about 1 hour.
  • Line a baking sheet with wax paper and lightly sprinkle with flour. Punch down dough and turn out onto a lightly floured surface. Cut into 16 equal pieces. With lightly floured hands, flatten 1 piece of dough and put a cheese cube in center. Pinch closed, then roll into a ball and transfer to baking sheet. Make 15 more balls, arranging 1 inch apart.
  • Heat 2 inches oil in a 2-quart heavy saucepan over medium heat to 350°F. Fry bomboloni, 4 at a time, turning frequently, until puffed and golden, about 2 minutes per batch. Transfer with a slotted spoon to paper towels to drain. Return oil to 350°F between batches. Serve hot.

This Jamie Oliver sugar mix really does smell like Christmas (although you are not limited to eating it only at Christmas!). The sugar recipe makes loads, (but is easily halved) and it keeps in an airtight container for absolutely ages and can be used on a variety of things (to sweeten whipped cream, on porridge, on fruit--you name it...), so it's well worth doing a full batch. I don't usually do sweet popcorn, but I like this one!

2 oranges, zest of, finely grated
2 lemons, zest of, finely grated
6 whole cloves
1/2 teaspoon ground cinnamon

1 kg caster sugar, unrefined if possible
olive oil
1 slice butter
250 g popcorn
6 tablespoons spiced sugar

Steps:

  • SPICED SUGAR:.
  • Put all of the sugar ingredients, except the sugar into a food processor and whiz until well blended and fine. Add the sugar and whiz again to combine everything together.
  • Spread the sugar out on a tray to dry out for a couple of hours before using, as it will be slightly moist at this stage.
  • Once dry, sieve the sugar to catch any large pieces and discard them. Keep the sugar in an airtight container. It will keep for ages!
  • POPCORN:.
  • Put the oil and butter into a pan on high heat. Once the butter has melted, add the popcorn and stir well to coat. Cover and leave to pop, shaking occasionally.
  • Put the sugar into a large bowl and when the popcorn is ready, add it to the bowl, tossing quickly to coat it with the sugar.
