Traditional spicy okra curry that everyone loves. It's best with Indian bread (naan or paratha) or rice. My mom says this is brain food!

- Place the okra in a large, microwave-safe dish; cook in microwave on High for 6 minutes.
- Heat the olive oil and cumin seeds together in a large skillet over medium heat until the cumin seeds swell and turn golden brown. Fry the onions in the heated oil for 3 minutes. Add the tomatoes to the mixture and cook another 3 minutes. Stir the okra into the mixture; season with the curry powder and salt. Cook and stir the mixture until hot, about 3 minutes more. Serve hot.

BHINDI MASALA
Bhindi Masala is a North Indian curried dish made with tender okra pods, piquant onions, tangy tomatoes, bold spices and herbs.

Steps:
- Rinse the bhindi (okra) well in water for a couple of times.
- Dry them on a large plate on their own or wipe with a kitchen towel. Make sure there is no moisture or water on the okra pods.
- Remove the base and stalk while chopping them. Chop into 1 or 1.5 inch pieces.
- Also chop onions and tomatoes. Keep aside.
- Make a paste of ginger and garlic in mortar-pestle and keep aside.
- Heat 2 tbsp oil in a kadai (wok) or pan.
- Add the chopped bhindi and sauté stirring often till they are completely cooked. You will have to keep an eye on them and stir in between many times.
- Taste the sautéed okra and if the crunchiness is not there and the bhindi have become soft, it means they are cooked. Keep the sautéed bhindi aside.
- All the oil will be used up. So add 1 tbsp oil to the same pan.
- Add chopped onions and saute stirring often till they become translucent.
- Add the ginger-garlic paste and saute for a few seconds or till the raw aroma of the ginger-garlic disappears.
- Add the chopped tomatoes and saute stirring often till the tomatoes become soft and mushy.
- If the tomato mixture becomes too dry and starts sticking to the pan, then add about ¼ cup water. Mix well and continue to cook.
- All the above cooking is done in a open pan and you don't need to cover the pan with the lid.
- Add all the dry ground spice powders one by one.
- Mix well and saute for a few seconds.
- Add the sautéed bhindi, crushed kasuri methi, salt and mix so that the onion-tomato masala coats the okra well.
- Cook for about 2 minutes. Stir in between.
- Then switch off the flame and add chopped coriander leaves. Mix again.
- Serve bhindi masala hot or warm garnished with a few coriander leaves and accompanied with chapati, roti or naan. It can also be packed for lunch box. It also makes for a nice side dish with any North Indian meal.

- Heat a large wok or frying pan over a medium heat. Add the oil, then the onions, cooking until soft. Stir in the okra. Add the tomatoes and chilli, then season. Mix well and keep stirring gently, taking care not to break up the okra. Okra releases a sticky substance when cooked, but keep cooking, stirring gently - this will disappear and the tomatoes will become pulpy, about 10 mins.
- Lower heat, add ground coriander and cook for another 5-10 mins. Add 2 tbsp water, cover and let simmer for another 4-5 mins. Sprinkle with coriander and serve with basmati rice or chapati bread.

- First off, peel the red onion, garlic cloves, and fresh ginger.
- Then, chop the onion, garlic, and ginger - but keep onion separated from ginger and garlic.
- Add oil to a large saute pan and add in the onion. Cook onion on medium heat for 10 minutes, stirring often.
- Then add in the chopped ginger and garlic and saute about 2 minutes.
- Add in the coriander, turmeric, chili powder, smoked paprika, and saute about a minute - while mixing well so all ingredients incorporate.
- Then add in the tomato paste, coconut milk, water, and frozen okra. Give this a good stir then cover and let simmer for about 4- 5 minutes over medium heat.
- When done, uncover and remove from heat.
- Season with salt and pepper to taste.
- Serve garnished with cilantro and chili flakes. Enjoy with rice or roti.

- Take a pan and add 3 tbsps of oil. , When the oil heats up, add the cut okra and onion pieces. Mix them and cover with a lid. , In the meantime, take another pan and put 2 tbsp of oil in it. , Then fry the above ingredients for seasoning until golden brown. , Cool it and then grind it into a fine powder. , Cook the vegetables until soft. , When cooked, add coriander leaves, salt as per taste and the ground powder. , Now mix them together and keep on low flame for 2-3 mins. , Serve it hot with rice. ,

- Trim the ends of the okras and chop the larges ones into bite-size bits. Rinse them well.
- Pour the vegetable oil in a large wok or non-stick pan and place it over medium-high heat. Once the oil is hot, add the okra.
- Stir fry the okra for 6 to 8 minutes until they start to soften. Then scoop them out of the hot wok (leave the remaining oil in the wok) and transfer the fried okra onto a clean plate. Set aside until needed later on. Then add the sliced onion and chopped garlic to the remaining oil in the wok.
- Stir fry the onion and garlic for 2 minutes. Then add the chopped canned tomatoes and all the spiced. Season with a pinch of salt and nutmeg. Also add 3 tablespoons of water.
- Stir fry the tomato mixture for until the liquid has almost gone.
- Keep stirring until you end up with a very sticky tomato paste. Make sure it doesn't burn. Then add the butter.
- Also add the freshly chopped cilantro and the fried okra back to the wok.
- Take the wok off the heat and stir well. Then check the seasoning and add extra salt to taste if necessary. Scoop the okra and tomato sauce into a large bowl and serve.

- Prepare okras for cooking by removing ends and cutting into 1-2-inch pieces.
- In a skillet, heat oil over medium heat and add okra.

- Cut off the ends of the okra pods.
- Slice the pods into approximately 1/4 to 1/2 inch rounds.
- Peel and slice the onions.
- Place the sliced Okra into a glass or stainless steel bowl and sprinkle liberally with salt.
- Cover with the iced water, making sure that all slices are under water; refrigerate for at least 2 hours.
- Remove the bowl from the refrigerator and drain off the salt water.
- Heat the oil in a heavy skillet over medium high heat.

- Ingredients required for Shallow Frying The Okra - Okra , coconut oil. For Base Yogurt Sauce - yogurt, salt , turmeric and water. Once the oil is hot, add all the ingredients under roast and grind spices, except shredded coconut and water. Fry for approximately two minutes or until the mixture starts to splutter , slightly changes in color , raw smell from the ginger goes and you will get good aroma from the roasted spices . Switch off the flame and then add shredded coconut , mix with other ingredients in the pan, remove from stove and let it cool down. In a mixer add the mixture, first grind without water , then half way through add mentioned amount of water and grind to smooth paste. Now mix this ground paste to the base yogurt sauce, stir well ,set aside.
