SOUTHERN-STYLE BOURBON SWEET POTATO PIE
Sweet potato pie just like your southern grandma would make with a healthy dose of bourbon.

- Make the pie crust by incorporating sea salt, flour, and butter until a coarse, sandy-looking meal forms. This can be done in a bowl with your hands or in a food processor. Add cold water and continue working or pulsing the mixture until a dough forms. Shape into a disc (like a hockey puck), wrap in plastic, and chill for at least 30 minutes.
- Meanwhile, preheat oven to 400 degrees. Using a fork or knife, pierce sweet potatoes several times then place directly on oven rack with a sheet pan underneath to catch any drippings. Roast for about 45 minutes or until tender then set aside to cool. You can place them in the refrigerator to speed up this process.
- Reduce oven heat to 375 degrees. Roll out chilled pie crust and place in a 9-inch pie pan. Remove excess dough from around sides of pan and crimp or style edges, as desired. Prick bottom of dough with a fork a few times then par bake for about 15 minutes then remove and decrease oven heat to 350 degrees. See notes about par baking below.
- While the crust par bakes, process cooled sweet potatoes in a food processor until smooth. Add heavy cream, butter, eggs, bourbon, brown sugar, granulated sugar, nutmeg, cinnamon, and sea salt then or pulse until uniform, pausing to scrape down sides of bowl as necessary.
- Spread filling into prepared pie crust. Return to oven and bake for about one hour and 10 minutes or until top of filling is firm to touch. Cool completely before slicing and serving.

SWEET POTATO PIE
This mildly-sweet version of the classic Southern pie has a crisp crust and a filling that's surprisingly light. It's rich with egg and boldly spiced with nutmeg, but as fluffy as chiffon (a quality owed to the baking powder in the filling). This means you'll probably have room for two (or three) pieces. - Place sweet potatoes in a large saucepan, and add water to cover. Bring to a boil, reduce heat to low and simmer until very tender, about 45 minutes. Drain well.
- Mash the potatoes in a bowl. The potatoes should yield about 2¾ cups mashed potatoes.
- Preheat oven to 350 degrees. Add butter to hot potatoes, and mash until smooth. Add sugar, nutmeg, egg and vanilla, mixing well. Combine baking powder with evaporated milk, and stir to blend. Add to mashed potatoes. Whisk mixture until velvety. Mound into pie shell, then spread evenly to edges.
- Bake until pie has set and is lightly browned on top, about 55 minutes. Cool to room temperature before serving.
SPICED SWEET POTATO PIE WITH NUTS
I am always on the lookout for a good sweet potato pie recipe and usually make at least 2 different kids every Thanksgiving and Christmas. This is a good one from Debbi Field's cookbook, Great American Desserts.

- For Crust: In a bowl, whisk together the flour and salt.
- With a pastry cutter, cut in the butter until the mixture is coarsely texture with small irregular flakes and bits the size of small peas.
- Stir in the almonds until combined.
- Sprinkle on the water, 1 tablespoon at a time, stirring with a fork until the dough just holds together.
- Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap and refrigerate for 1 hour.
- On a lightly floured surface, roll out the dough into a 1/8-inch thick round.
- Fit the dough into the pie pan.
- Chill the shell in the freezer while making the filling.
- Preheat the oven to 400°F.
- For the Filling: In a large bowl, stir together the sweet potatoes, milk and sugar until combined.
- Stir in the eggs, brandy, pie spice, salt and pecans and combine well.
- Pour the filling into the chilled pie shell and bake for 20 minutes.
- Lower the oven temperature to 325°F and bake for 30 to 35 minutes longer (until the tip of a sharp knife inserted in the center comes out clean).
- Remove the pie from the oven to a wire rack and cool for 30 minutes.
- The pie may be served warm or at room temperature.

MAPLE BOURBON SWEET POTATO PIE
Steps:
- Heat oven to 425 degrees. With a fork, pierce sweet potatoes, and place on foil-lined baking sheet. Roast until soft, about 1 hour, turning once. Cool, peel, and put flesh through a food mill, or mash smoothly with a potato masher to make 2 cups of puree.
- Reduce heat to 350 degrees. In a medium bowl, whisk puree and remaining ingredients to combine. Pour into prepared crust.
- Place pie plate onto a cookie sheet, and bake until filling is just about set, or when a knife inserted one inch from the edge comes out clean, 45 to 50 minutes. Cool pie on wire rack to room temperature.
SWEET POTATOES WITH BOURBON AND BROWN SUGAR
These silky mashed sweet potatoes are spiced with cloves, nutmeg and a little black pepper, brightened with lemon zest, and spiked with bourbon (or orange juice, if you'd prefer). Puréeing them in a food processor yields the smoothest, airiest texture, but for something a little more rustic, you could mash them by hand. Whichever you choose, these reheat well, either in a microwave or in a pot over low heat.

BOURBON PUMPKIN PIE
This is my very favorite pumpkin (or sweet potato) pie formula. I got it from a very old issue of Gourmet magazine, and tweaked it a bit, substituting bourbon for brandy, adding fresh ginger, upping the spices a bit. My family insists on having this every Thanksgiving. The bourbon is very subtle - you won't notice it's there, but you'll know there's something special about this pie...

- Roll out 3/4 of the dough 1/8 of an inch thick on a lightly floured surface; fit it into a 10-inch (6 cup) pie plate, and trim the edge, leaving a 1/2-inch overhang.
- Fold the overhang under the dough flush with the edge of the pie plate and with a sharp knife, make 1/2-inch-long cuts at 3/4-inch intervals all the way around the edge of the shell.
- Turn every other section of the dough in toward the center of the shell to form a decorative edge and chill the shell for 30 minutes.
- Roll out the remaining dough 1/8-inch thick on a lightly floured surface and with a 3-inch leaf-shaped cutter, cut out 3 leaves.
- Transfer the pastry leaves to a baking sheet, score them lightly with the back of a knife to form veins, and chill them for 15 minutes, or until they are firm.
- Brush the leaves lightly with some of the egg wash and bake them in the middle of a preheated 375°F oven for 12 to 15 minutes, or until they are golden.
- Transfer the leaves to a rack and let them cool completely.
- In a bowl, whisk together the pumpkin, the brown sugar, the spices, the salt, the heavy cream, the milk, the eggs, and the bourbon until the filling is smooth and pour the filling into the shell.
- Brush the edge of the shell lightly with some of the remaining egg wash if desired and bake the pie in the middle of a preheated 375°F oven for 1 hour, or until the filling is set but the center still shakes slightly.
- The filling will continue to set as the pie cools.
- Transfer the pie to a rack and let it cool completely.
- Garnish with the pastry leaves just before serving, and serve with whipped cream.

- PREHEAT oven to 375 degrees F.
- ADD sweet potatoes (including syrup) to a food processor with remaining FILLING ingredients.
- PROCESS the FILLING mixture until smooth.
- POUR mixture into two 9-inch frozen pie shells.
- BAKE 55-65 minutes (centers will still move slightly).
- PLACE pies on wire racks to cool.
- WHIP heavy whipping cream into a medium bowl with electric beater until it thickens; add remaining TOPPING ingredients gradually and continue whipping until peaks form.
- SPREAD whipped cream TOPPING over cooled pies.

TWICE BAKED BOURBON-HAZELNUT SWEET POTATOES
A favorite sweet potato recipe that is quick to put together (other than the roasting time). It's a GREAT Thanksgiving make-ahead. Plus it's nice to have some side dishes that are prepared for individual servings--they just look pretty that way!

- Preheat oven to 350°F Oil the sweet potatoes and roast on rimmed baking sheet until very tender, 1 to 1 ½ hours. (You can nook them in the microwave to speed the roasting time!).
- Cool slightly. Cut each potato in half and place the flesh of the top halves in a bowl-it should just fall out of the skin.
- Gently scoop the flesh out of the bottom halves and add it to the bowl, leaving a little around the edges for stability.
- Mix in the crème fraiche, 4 Tbs. butter, syrup, bourbon, 1 teaspoons cinnamon, 3/4 teaspoons nutmeg, 1 teaspoons salt and pepper to taste.
- Using a hand mixer (or immersion blender), puree until smooth.
- Scoop the potato puree back into the bottom halves.
- Mix the remaining 2 Tb. of butter and ¼ teaspoons nutmeg with the panko and chopped nuts. Salt and pepper to taste.
- Sprinkle the mixture over the tops of the sweet potatoes.
- Bake another 15-20 minutes until warmed through and golden on top!
- * These can be made 2-3 days in advance. If coming out of the fridge, bake 30-40 minutes--until warmed through or cheat and rewarm in the microwave. *smile* I won't tell!
