Steps:
- Combine sugar and water in a saucepan; simmer over medium heat until sugar is dissolved, about 2 minutes. Remove saucepan from heat and stir Chinese five-spice powder into sugar mixture.
- Pierce each grape all the way through using a fork. Add grapes and sugar mixture to a resealable bag; refrigerate, turning every few hours, until grapes are marinated, about 24 hours.

SPICED CHICKEN AND GRAPE SKEWERS

- In a medium sized bowl whisk together the oil, lemon zest, lemon juice, garlic, cumin, coriander, and salt. Add the chicken to the marinade and toss to coat. Marinate the chicken for 20 minutes. While the chicken is marinating, soak the skewers in water if wooden.
- Thread 4 pieces of the chicken and 4 grapes onto the skewers, alternating them. Spray a grill pan with cooking spray and preheat over a medium-high heat, or prepare an outdoor grill. Grill the chicken until cooked through, about 3 to 4 minutes per side. Sprinkle with mint and serve with lemon wedges.

SPICED MUSCADINE JAM
Apples don't grow well in the south but Spiced Muscadine Jam brings to mind the apple butter I made every fall when I lived in New England. In addition to spreading it on bread try it as a glaze for baked ham or as a condiment with a fried ham slice. Feel free to vary the amounts of the spices to suit your personal tastes. Prep time includes cooking the pulp and hulls. Cooking time does not include processing the jars in the boiling water bath.

Steps:
- Prepare grapes by cutting partway through the skin and popping the pulp/seed capsule out of the hull. Put pulp into one pot and the hulls into another.
- Simmer the pulp, covered, on low-medium until soft enough to press through sieve or food mill ~ 10 minutes. Add just a little water if necessary to prevent sticking.
- Meanwhile, chop hulls very finely in the food processor and return to their pot. Add just enough water to make it possible to simmer without sticking. Cook slowly, covered, about 10 minutes or until hulls are softened.
- Press pulp through a sieve or food mill to remove seeds. Stir sieved pulp into cooked hulls.
- Place grape puree into a large pot and stir in the spices. Bring to a boil.
- Stir in sugar and return to a boil.
- Simmer, stirring frequently, until the jellying point is reached, 2-3 hours. Timing is approximate and will vary depending on conditions and the amount of natural pectin in the fruit. Check frequently after the first hour.
- Pack into hot, sterilized jars and process for 10 minutes in boiling water bath.

SHAKER SPICED GRAPE JUICE
This drink is a great alternative to hot apple cider. I've only had it once and got the recipe at Pleasant Union, one of the Shaker settlements here in Kentucky. The Shakers were wonderful cooks and most all of their recipes are deeelish.

HOT SPICED GRAPE JUICE
This is wonderful. I have had this recipe in my box for years and never tried it. It was cold the other morning and I wanted something different then the usual morning drink while I was posting recipes!!! LOL Anyway, I found this, from my mom, I think, and it is so good. This jam is delicious on a toasted bagel with cream cheese. Chunk cinnamon can be purchased from Penzey's Spices (www.penzeys.com) or you can substitute 1 4-inch stick of cinnamon, broken into small pieces.

- Prepare jelly jars and seals by sterilizing them in boiling water.
- Remove grapes from stems; rinse and drain.
- Place grapes in a large heavy-bottomed pan and mash to break skins.
- Add remaining ingredients and bring to a full rolling boil.
- Reduce heat to medium-low and let boil gently for about 20 minutes, stirring occasionally.
- Strain through a food mill or sieve.
- Put strained mixture back into the pan and bring back up to a simmer.
- Pack into sterilized jelly jars.
- Seal jars as directed by the manufacturer.

- Preheat oven to 250°F. Line a large baking sheet with parchment paper. Whisk together 1 2/3 cups sugar, cornstarch, and cardamom in a medium bowl. Place egg whites, vinegar, salt, and cream of tartar in the bowl of a stand mixer fitted with the whisk attachment. Beat at medium speed until foamy, about 2 minutes. Beating at medium-high speed, gradually add sugar mixture. Increase speed to high, and beat until stiff, glossy peaks form, 6 to 8 minutes.
- Spoon meringue onto prepared baking sheet, and spread into a 16- x 11-inch rectangle. Bake in preheated oven until set and firm, about 2 hours and 30 minutes. Turn off oven, and let pavlova stand in oven until completely cool, about 2 hours. Remove pavlova from oven.
- Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper. Combine grapes, oil, and rosemary sprigs on baking sheet. Bake in preheated oven 15 minutes. Remove from oven, and stir. Add pear wedges to pan; stir gently to combine. Bake until pears are tender, about 12 minutes, stirring gently after 8 minutes. Let fruit cool until barely warm or to room temperature.
- Combine cream and remaining 2 tablespoons sugar in a large bowl. Beat with a handheld mixer at high speed until stiff peaks form, about 3 minutes. Fold in crème fraîche. Spoon whipped cream mixture over pavlova. Top with grape mixture, and sprinkle with pomegranate arils. Garnish with rosemary leaves, if desired.
