1/3 cup butter, softened
1 cup packed brown sugar
2 large eggs
1-1/2 cups unsweetened applesauce
1/2 cup plus 3 tablespoons brewed coffee, room temperature, divided
2 cups all-purpose flour
1/4 cup plus 3 tablespoons baking cocoa, divided
1-1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon ground cloves
1-1/2 cups raisins
3/4 cup chopped walnuts
1-1/3 cups confectioners' sugar

Steps:

  • In a large bowl, cream butter and brown sugar until well blended. Add eggs, one at a time, beating well after each addition. Beat in applesauce and 1/2 cup coffee. Combine the flour, 1/4 cup baking cocoa, cinnamon, baking soda, allspice, salt and cloves; gradually beat into creamed mixture until blended. Fold in raisins and walnuts., Pour into a 10-in. fluted tube pan coated with cooking spray. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a small bowl, combine the confectioners' sugar and remaining baking cocoa and coffee; drizzle over cake.

This cake keeps well and feeds a crowd. The "crumble" is simply a middle layer of pecans, brown sugar, butter and cocoa.

Number Of Ingredients 24

1 cup pecans (about 4 ounces)
1/3 cup (packed) golden brown sugar
2 tablespoons (1/4 stick) chilled unsalted butter, diced
1 tablespoon unsweetened cocoa powder
2 1/3 cups unbleached all purpose flour
1 tablespoon cornstarch
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
3/4 cup sour cream
1/4 cup whole milk
1 teaspoon vanilla extract
1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
3/4 cup (packed) golden brown sugar
5 large eggs
6 ounces semisweet chocolate, finely chopped
1 8-ounce package cream cheese, room temperature
1/4 cup (1/2 stick) unsalted butter, room temperature
1 teaspoon vanilla extract
2 1/2 cups powdered sugar
2 tablespoons unsweetened cocoa powder

Steps:

  • Blend all ingredients in processor until nuts are finely chopped.
  • Preheat oven to 350°F. Butter and flour 13 x 9 x 2-inch baking pan. Whisk first 7 ingredients in medium bowl to blend. Whisk sour cream, milk and vanilla in small bowl to blend.
  • Using electric mixer, beat butter in large bowl until fluffy. Gradually beat in both sugars. Beat in 3 eggs, 1 at a time. Beat in 1/2 cup dry ingredients. Beat in 2 eggs, 1 at a time. Beat in remaining dry ingredients in 3 additions alternately with sour cream mixture in 2 additions.
  • Spread 3 cups batter in prepared pan. Sprinkle with crumble; press lightly into batter. Spread remaining batter over crumble to cover. Bake cake until tester inserted into center comes out clean, about 35 minutes. Cool cake in pan on rack.
  • Melt chocolate in top of double boiler over simmering water, stirring until just melted and smooth. Cool to room temperature. Using electric mixer, beat cream cheese, butter and vanilla in large bowl to blend. Beat in powdered sugar in 3 additions, then cooled chocolate and cocoa.
  • Spread top of cake with frosting. (Can be made 1 day ahead. Chill until frosting is set; cover and keep chilled. Let stand 1 hour at room temperature before serving.)

1 cup sugar
3/4 cup brown sugar, packed
3 eggs
1 teaspoon vanilla
1 cup buttermilk or 1 cup sour milk
1/2 cup butter
3 cups powdered sugar, sifted
1 cup brown sugar, packed
4 tablespoons cream
1 teaspoon vanilla

Steps:

  • Sift together dry ingredients.
  • Cream together shortening and sugars until fluffy.
  • Add vanilla and then eggs 1 at a time, beating well after each egg.
  • Add dry ingredients alternately with buttermilk.
  • Beat 2-3 minutes using high speed of mixer.
  • Pour into 2 greased and floured 8-in. pans.
  • Bake in 350 degree oven 25-30 minutes.
  • Frost when cool.
  • Caramel Frosting:.
  • Melt butter in saucepan then add brown sugar and cook over low heat 2 minutes, stirring constantly.
  • Add cream and continue stirring until mixture comes to a boil.
  • Remove from heat.
  • Gradually blend in powdered sugar and vanilla.
  • (Add extra cream if needed.).

3 cups all-purpose flour
2 cups packed brown sugar
2 teaspoons baking soda
2 teaspoons each ground cinnamon, nutmeg and cloves
1 teaspoon salt
1 cup shortening
2 eggs
2 cups buttermilk
2 tablespoons molasses

Steps:

  • In a bowl, combine the flour, brown sugar, baking soda, spices and salt; cut in shortening until mixture resembles coarse crumbs. Remove and set aside 1 cup for topping. In another bowl, beat the eggs, buttermilk and molasses. Add to the remaining flour mixture; mix well. , Pour into a greased 13x9-in. baking pan. Sprinkle with reserved topping. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

CAKE INGREDIENTS:
2 c sugar
2 large eggs
2 Tbsp crisco shortening
2 c milk
2 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 pinch salt
3 c flour
3 tsp baking powder
1 c chopped raisins *optional
FROSTING INGREDIENTS:
2 chocolate, unsweetened squares
1/3 stick butter
milk, you need to judge the amount!
2/3 pkg confectioners' sugar (the one pound box)

Steps:

  • 1. Preheat oven,usually a cake is baked at 350 degrees, she didn't write it down! Grease and flour a 9"X 13" pan.
  • 2. Sift the dry ingredients. Combine HALF the milk and half the dry ingredients, add eggs, beat, add remainingmilk and dry ingredients. Stir in raisins. Pour into prepared baking pan.
  • 3. THIS IS THE BEST PART: "BAKE UNTIL JUST ABOUT DONE", her very words! For a beginning baker this is tough to know, so I'm stating,bake for 35 or 40 minutes and test with a cake tester or tooth pick; and if it comes out clean it's done. Also if you press on it gently and it springs back, it is fine. If it leaves an indent bake a few minutes more and test it again. :) NOTE: 36 mins. worked for me on 2/20/12.
  • 4. TO MAKE FROSTING: MELT CHOCOLATE ADD SOFT BUTTER, STIR IN 1/3 OF PACKAGE OF THE SUGAR AND ADD A TABLESPOON OF MILK, ADD ANOTHER BIT OF SUGAR AND MORE MILK IF NEEDED. You want it to be "spreading consistency" not dripping, so don't add too much milk at a time, just a spoonful each time. Cool cake completely and then frost. NOTE: 3 Tbs. butter, and 2 Tbs.milk, with 3 cups confectioners' sugar, and the 2 squares of melted chocolate.
