CHICKEN SHAWARMA WITH EASY FLATBREAD



Chicken shawarma with easy flatbread image

Juicy chicken shawarma marinated in spiced yogurt then grilled is a delicious dinner served wrapped in easy flatbread with crunchy vegetables.

1 cup plain yogurt
4 garlic cloves (crushed)
2 tbsp lemon juice
2 tbsp olive oil
2 tsp paprika
½ tsp chilli/red pepper flakes
1 tsp ground coriander
1 tsp ground cumin
2 tsp salt
1 tsp black pepper
1 kg boneless, skin-on chicken thighs
3 cups flour
1 tsp baking powder
1 tsp salt
½ tsp garlic powder ((optional))
½ cup plain/Greek yogurt
½ cup vegetable oil
¾-1 cup milk
1 cup plain/Greek yogurt
2 tbsp chopped parsley
1 tbsp chopped mint
2-3 garlic cloves (crushed)
1-2 tbsp lemon juice
salt and pepper (to taste)
Pickles of your choice
fresh vegetables of your choice ((tomatoes, cucumber, avocado work well) )

Steps:

  • Mix all the marinade ingredients together then pour over the chicken and allow to marinate for 30 mins - 1 hour.
  • In the meantime, mix together the dry ingredients for the flatbread then add the yogurt and oil. Add the milk, a little at a time, and mix until a rough dough starts to form. You might not need all the milk. Turn the dough out onto a floured surface and knead until it just comes together in a smooth ball. Cover in plastic wrap and allow to rest at room temperature for 30 minutes.
  • Pre-heat the oven to 240ºC/460ºF (or as hot as your oven goes) with the top element/grill to caramelize the skin on the chicken.
  • Place the chicken in a baking dish/baking sheet in a single layer then place in the oven. Allow the chicken to bake/grill until fully cooked with the skin crisp and caramelized.
  • While the chicken is baking, roll tennis-sized balls of dough out onto a floured surface (to around ½cm thick) and cook in a hot pan until golden and bubbling then flip and cook for another minute or two on the other side. Remove from the pan, brush with melted butter (optional) and keep wrapped in foil.
  • Make the sauce by combining all the ingredients and mixing well.
  • When the chicken is cooked, remove from the oven and slice.
  • Serve the chicken shawarma in the flatbread with vegetables and pickles of your choice drizzled with the garlic sauce.

Marinate chicken in yogurt, spices and lemon zest, then grill to make these flavourful chicken skewers. Serve in flatbreads with salad and cucumber yogurt

200g Greek yogurt
½ tsp ground cinnamon (optional)
2 green cardamom pods, pods bashed and seeds finely ground (optional)
1 tsp ground cumin
1 tsp ground turmeric
pinch of chilli flakes, or to taste
2 garlic cloves, crushed
1 lemon, zested and halved
640g pack diced chicken thighs
1 cucumber, peeled, ½ coarsely grated, ½ finely chopped
1 Little Gem lettuce, thinly sliced
4 flatbreads
hot sauce, to serve (optional)

Steps:

  • In a bowl, combine half the yogurt with the spices, half the garlic, the lemon zest and ½ tsp salt. Tip in the chicken and stir well to coat. Cover and leave to marinate in the fridge for at least 30 mins or overnight.
  • Mix the grated cucumber and the remaining garlic into the remaining yogurt, then season with a pinch each of salt and pepper. Set aside in the fridge.
  • Mix the finely chopped cucumber and lettuce together, then squeeze over one of the lemon halves and season with a good pinch of salt. Cut the remaining lemon half into quarters. Heat the grill to high or a large griddle pan over a high heat.
  • Thread the marinated chicken pieces onto metal skewers, put on a tray and cook under a hot grill or in the griddle pan for 10-12 mins, turning often to ensure it cooks evenly and is charred in places. Warm the flatbreads under the grill or in a toaster.
  • Serve the chicken in the flatbreads with the chopped salad and cucumber yogurt. Drizzle with hot sauce before serving, if you like.

These fresh, spicy kebabs don't just taste great - the whole family will enjoy making them

Number Of Ingredients 11

3 garlic cloves , roughly chopped
knob of fresh ginger , roughly chopped, plus extra to serve
1 orange , grated zest and juice
3 spring onions , roughly chopped
2 tbsp clear honey
1 tbsp light soy sauce
2 tbsp vegetable oil
4small skinless boneless chicken breast fillets , cut into cubes
20 button mushrooms
20 cherry tomatoes
2large red peppers , seeded and each cut into 10

Steps:

  • Grind the garlic, ginger, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil, then blend again. Pour the mixture over the cubed chicken and leave to marinate for at least 1 hr, but preferably overnight. Toss in the mushrooms for the last half an hour so they take on some of the flavour, too.
  • Thread the chicken, tomatoes, mushrooms and peppers onto 20 wooden skewers, then cook on a griddle pan for 7-8 mins each side or until the chicken is thoroughly cooked and golden brown. Turn the kebabs frequently and baste with the marinade from time to time until evenly cooked. Arrange on a platter, scatter with chopped spring onion and eat with your fingers.
