SPICED CAPPUCCINO KISS COOKIES

Steps:

• Beat butter, brown sugar and 1/4 cup sugar until light and fluffy. Beat in egg, espresso powder and vanilla. In another bowl, whisk together flour, baking soda and salt; gradually beat into creamed mixture. Refrigerate, covered, until firm enough to shape, about 1 hour., Preheat oven to 350°. Mix cinnamon and remaining sugar. Shape dough into twenty-four 1-in. balls; roll in cinnamon sugar. Place 2 in. apart on ungreased baking sheets., Bake until lightly browned, 10-12 minutes. Immediately top with chocolate kisses, pressing lightly. Cool slightly on pans before removing to wire racks to cool.

SPICED CAPPUCCINO

Steps:

• Stir together the hot espresso, creamer, and cinnamon in a glass measuring cup
• Pour into 2 mugs.
• Add a scoop of ice cream to each and sprinkle with cardamom.

CAPPUCCINO LOVE BITES

Steps:

• Beat shortening in a large bowl with an electric mixer on medium to high speed for 30 seconds.
• Add 1 cup sugar, baking powder, and salt.
• Beat until mixture is combined, scraping side of bowl occasionally.
• Beat in egg, liqueur, and vanilla until combined.
• Beat in as much flour as you can with the mixer.
• Stir in any remaining flour.
• If necessary, cover and chill dough in the refrigerator about 1 hour or until easy to handle.
• Preheat oven to 350°F
• Lightly grease cookie sheets; set aside.
• Shape dough into 1-inch balls.
• Combine remaining 1/2 cup sugar and coffee crystals.
• Roll dough balls in sugar mixture.
• Place balls 2 inches apart on prepared cookie sheets.
• Bake in preheated oven about 10 minutes or until tops are cracked and sides are set; do not let edges brown.
• Immediately press a chocolate kiss into the center of each cookie.
• If desired, while chocolate is still warm, swirl it gently using your finger or with a knife.
• Transfer cookies to wire racks and cool completely.
• Makes 48 cookies.

CAPPUCCINO KISS MUFFINS

Steps:

• In a large bowl, combine the flour, sugar, baking powder, cinnamon, salt and baking soda.
• In another bowl, beat the egg, buttermilk, oil, coffee granules and vanilla until coffee granules are dissolved. Stir into dry ingredients just until moistened.
• Spoon 2 Tbls. batter into greased muffin cups. Place a chocolate kiss in the center of each; top with remaining batter.
• Combine sugar and cinnamon; sprinkle over batter.
• Bake at 425°F for 16-20 minutes or until toothpick inserted into muffin comes out clean.
• Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
