I created this recipe based on one served at the cafe I worked in during college. You can add nuts if you like, or easily double the recipe if you need more coffee cake.

½ teaspoon butter, or as needed
2 cups all-purpose flour
¾ cup brown sugar
½ cup vegetable oil
½ cup white sugar
4 teaspoons ground cinnamon
½ teaspoon fine salt
½ teaspoon ground ginger
¾ teaspoon baking powder
¾ teaspoon baking soda
¾ cup buttermilk
1 egg
2 apples - peeled, cored, and cut into 1/2-inch chunks

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter the inside of an 8-inch glass baking pan.
  • Mix flour, brown sugar, oil, white sugar, 2 teaspoons cinnamon, salt, and ginger together in a large bowl. Transfer 1/2 cup of the mixture into a second bowl for the crumble topping; stir in remaining 2 teaspoons cinnamon.
  • Whisk baking powder and baking soda into the flour mixture.
  • Beat buttermilk and egg together in a measuring cup to combine. Pour into the large bowl of flour mixture; add apples. Stir until just blended and no pockets of flour remain. Pour mixture into the prepared pan; cover with the crumble topping.
  • Bake in the preheated oven until apples are tender and a toothpick inserted into the center comes out dry, 40 to 50 minutes.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon

1 ½ teaspoons vanilla extract
2 apples - peeled, cored and thinly sliced

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch springform pan. Sprinkle sugar in the pan to coat. Whisk together 2 cups of flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, cloves, and nutmeg in a bowl.
  • Beat 1/2 cup butter and 1 cup white sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla with the last egg. Mix in the flour mixture until just incorporated. Spread into prepared pan.
  • Top the cake with the sliced apples, arranged in an overlapping spiral pattern. In a small bowl, blend 2 tablespoons flour, brown sugar, and 1/2 teaspoon cinnamon, and butter with fork until crumbly. Sprinkle over the apples.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 (16-ounce) box pound cake mix (recommended: Betty Crocker)
3/4 cup cinnamon applesauce
1/3 cup pasteurized packaged egg whites
1 teaspoon pumpkin pie spice
1/2 teaspoon almond extract
1/4 cup baking mix (recommended: Bisquick)
2 tablespoons brown sugar
3/4 cup chopped walnuts
1 (.74-ounce) packet spiced cider drink mix (recommended: Alpine)
1 tablespoon butter, melted
Whipped topping flavored with vanilla extract, for serving

Steps:

  • Lightly spray a 6-cup souffle dish with butter-flavored cooking spray and set aside. Make a foil ring 1/2-inch thick for souffle dish to sit on and place inside the bottom of a 5-quart slow cooker.
  • In a large bowl, combine cake mix, applesauce, eggs, pumpkin pie spice, and almond extract. Using an electric mixer beat on low speed for 30 seconds. Scrape down sides of bowl and beat for 1 minute on medium speed. Pour into souffle dish and set aside.
  • In a medium bowl, stir together baking mix, brown sugar, walnuts, cider mix, and melted butter. Sprinkle over cake batter. Use a butter knife to cut through cake and topping several times to swirl.
  • Place souffle dish on top of foil ring in slow cooker. Place 5 folded paper towels over slow cooker bowl and secure with lid. Cook on LOW setting for 4 to 6 hours or until tester comes out clean. Do not lift lid to check cake for the first 3 hours.
  • Cool in souffle dish on wire rack for 15 to 20 minutes before removing and slicing. Serve with whipped topping.

Steps:

In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples.   • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

1 egg
3/4 cup milk
2 tablespoons butter, melted

Steps:

  • Lightly grease an 8-inch square baking pan.
  • In a measuring cup, combine 1/4 cup sugar, 1/4 teaspoons cinnamon, 1/4 teaspoons nutmeg and 1/8 teaspoons cloves.
  • Halve and core apples; peel one of the halves and finely chop; thinly slice remaining 3 apple halves.
  • In a large bowl, combine baking mix, remaining 1/4 cup sugar, remaining 1 1/2 teaspoons cinnamon, remaining 1/2 teaspoons nutmeg and remaining 1/8 teaspoons cloves.

Steps:

  • Preheat the oven to 375°F (190°C). Grease an 8 x 13-inch baking dish with nonstick spray.
  • Make the streusel topping: In a medium bowl, combine the butter, brown sugar, flour, oats, cinnamon, nutmeg, and baking powder. Mix with your fingers, massaging the butter into the dry ingredients, until well combined and loosely clumpy.
  • Make the cake: In a large bowl, cream the butter and brown sugar with an electric hand mixer on medium speed until light and fluffy, 2 minutes. Add the apple butter, sour cream, eggs, and vanilla and mix until fully combined, about 3 minutes.

  • To Make the Glaze: In a small bowl, whisk together the confectioners' sugar, the 2 tablespoons milk and the vanilla until smooth and pourable.
  • Adjust the consistency of the glaze by adding more milk, a few drops at a time, if needed.
  • Remove the sides of the springform pan, if using, and place the cake on a wire rack set over a piece of waxed paper to catch any drips.
  • While the cake is warm, drizzle with the glaze.
  • Let the cake cool to room temperature.
  • Cut into wedges or squares to serve.

  • Add in the raisins, buttermilk, egg and vanilla extract. Mix until well combined.
  • Add the dry ingredients and stir until just combined.
  • Pour into a lightly sprayed or greased 9 x 13 inch baking pan and level the batter.
  • Bake at 350 degrees for 25 to 35 minutes, until a toothpick inserted in the middle comes out clean.
  • Cool on rack 25 minutes or until just warm.
  • Combine glaze ingredients and whisk until smooth. Drizzle over warm cake or spread thinly and then let cake cool completely.
