These chewy chocolate-chip cookie bars are hiding the secret of spelt flour-a delicious whole-grain flour with a lightly nutty flavor that is wonderful to bake with. Under-bake these bars by a minute or two to ensure they're even gooier.

2 sticks (1 cup) unsalted butter, at room temperature
1 cup light brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 cups spelt flour
1 teaspoon baking soda
1/2 teaspoon fine sea salt
2 cups (one 12-ounce bag) semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Spray a 10-by-15-inch jelly-roll pan with nonstick spray.
  • In the bowl of an electric mixer, cream the butter, brown sugar and granulated sugar together on medium speed until light and fluffy, 3 to 4 minutes. Scrape the sides of the bowl. Beat in the eggs one at a time, scraping the bowl and beating well after each addition. Beat in the vanilla on low speed.
  • In a medium bowl, whisk the spelt flour, baking soda and salt together. Add to the mixer and mix on low speed just until incorporated. Add the chocolate chips, scrape the base and sides of the bowl well and mix to combine.
  • Use slightly damp hands to press the dough evenly into the prepared pan. Bake until the edges are set and golden, the surface appears wrinkly and the center if firm when touched, 24 to 28 minutes.
  • Cool completely in the pan. Cut into 24 bars.

¼ cup white sugar
2 eggs
1 (3.5 ounce) package vanilla pudding mix
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 ¾ cups quick oats
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • Beat butter, brown sugar, and white sugar in a bowl until creamy; beat in eggs until smooth. Stir pudding mix into creamed mixture, followed by vanilla extract. Whisk flour, baking soda, and salt together in a separate bowl and stir flour mixture into moist ingredients. Mix oats and chocolate chips into dough. Press dough into prepared baking pan.
  • Bake in the preheated oven until lightly browned, about 25 minutes. Let cool before cutting into squares.

1 cup butter, softened
1 cup white sugar
1 cup brown sugar, packed
2 eggs
1 teaspoon maple extract or 1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon cinnamon (optional)
1 teaspoon baking soda
3/4 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup chopped walnuts or 1/2 cup pecans

Steps:

  • Set oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch pan (for thinner bars bake in a larger pan and reduce the baking time slightly).
  • In a large mixing bowl cream butter with both sugars until fluffy.
  • Add in eggs and vanilla; beat until well combined.
  • In another bowl mix together flour with cinnamon, baking soda and salt; gradually add to the creamed mixture until combined.
  • Mix in chocolate chips and nuts (batter will be very thick).
  • Transfer the mixture to prepared baking pan then spread out using a spoon.
  • Bake for about 25-30 minutes or until golden brown.

1 cup (2 sticks) unsalted butter
1 1/2 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour (see Cook¿s Note)
1/2 teaspoon baking soda
1 teaspoon fine salt
One 12-ounce bag (a scant 2 cups) semisweet chocolate chips

Steps:

  • Position the rack in the middle of the oven and preheat to 350 degrees F.
  • Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. Brush some butter on the inside of a 9-by-13-inch pan and cool the remaining butter slightly. Whisk the remaining cooled butter, brown sugar, eggs and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.
  • Spread the batter evenly in the prepared pan. Bake until the edges are browned and the center is completely set, about 30 minutes. Cool completely, at least one hour, cut into 24 pieces and serve.
