SPEEDY STEAM COOKED POTATOES
Still LOVIN' on my Ninja Cooking System especially when I found out it could steam up potatoes in an hour. Super easy and a fast way to serve up a potato dinner bar for friends and family. Just get out your toppings and have them ready. No need to heat up the house with the oven or even turn on the grill.

Steps:
- 1. This is a recipe for the Ninja Cooking System that will cook up 6 potatoes in little over an hour. Fork tender and ready to eat. Place your rinsed potato that has been pierced with a knife in center of tinfoil.
- 2. Put your rack in the Ninja along with 2 1/2 cups of water in the bottom. Place your wrapped potatoes on the rack and cook for 1 hour or 1 and 15 minutes.
- 3. Check potatoes with fork. I use a medium size red potatoes as they are our favorite.
- 4. Ready to eat.

- Scrub the potatoes with the vegetable brush. Poke each potato several times with the fork (this lets the steam escape and makes it easier to split the potato open later). Put potatoes about 1 inch apart in a circle on the plate. Microwave on High for 8 to 10 minutes or until potatoes are tender. Use the pot holders to take plate out of microwave.
- Peel the outside layer of skin from the green onions. Slice onions on the cutting board, using the knife (you need about 1/2 cup).
- Spray the skillet with the cooking spray. Put the green onions and ham (or bacon bits or pepperoni) in skillet. Cook over medium-high heat for about 3 minutes, stirring all the time with the wooden spoon, until ham is hot. Take skillet off hot burner.
- Cut baked potatoes lengthwise in half, using knife. (If the potatoes are too hot, hold them with a pot holder). Fluff insides of potato with fork. Put 1 tablespoon of the sour cream on each potato half, using the rubber spatula to get it out of the measuring spoon. Spread sour cream a little with rubber spatula. Top each potato half evenly with some ham mixture and cheese.

- Heat oven to 45°.
- Cover baking sheet with heavy-duty aluminum foil.
- Spray foil with Crisco no-stick spray.
- Arrange potato slices on baking sheet.

- Sprinkle mixture on potato slices.
- Bake at 450° for 10 minutes.
- Remove pan from oven.

SPEEDY TWICE BAKED POTATOES
"Baking" the potatoes in the microwave will save you at least 45 minutes in prep time. This is a very basic recipe that can be embellished to suit your taste and the ingredients you have on hand. Some suggested additions are bacon bits, sour cream or plain yogurt, chives and roasted garlic.

- Preheat oven to 425 degrees.
- Wash potatoes and prick holes in them with a fork. Microwave for 5 minutes. Flip potatoes over and microwave for an additional 5 minutes. Test for doneness with a fork and cook longer if necessary.
- Cut each potato in half longways. With a spoon, carefully scoop out as much pulp as possible into a large bowl.
- Add butter, black pepper and garlic salt. Pour in half of the milk and beat mixture with an electric mixer. Gradually add the remaining milk - you may not need it all, or you may need to add a little more! They should be the consistency of fluffy mashed potatoes.
- Fill potato shells with mixture and top with the shredded or sliced cheese. Sprinkle with paprika if desired.
- Place on baking sheet covered with foil for easy clean up. Bake at 425 degrees F until cheese melts (approx. 15-20 minutes).
