SPARKLING CRANBERRY BRIE BITES
We don't often eat raw, whole cranberries, but after tasting these sparkling cranberry brie bites, I don't know why.

Steps:
- Rinse cranberries in a colander, discarding any that have become soft. In a medium bowl, heat syrup in the microwave just until warm. (I think mine took 30-45 seconds.) If it is too hot, wait a few minutes--you don't want your cranberries to pop. Add cranberries to the syrup. Cool, cover, and let soak in the refrigerator overnight.
- Drain cranberries in a colander; do not rinse. Place sugar in a large bowl or baking sheet. Add cranberries in 2 batches and roll around until lightly coated in sugar. Place on a baking sheet until dry, about 1 hour.
- Assemble crackers with one slice of brie, a light layer of cranberry chutney, and 4 or 5 sugared cranberries. Garnish with fresh mint sprigs.
- Serve immediately. The wetness from the cranberry sauce will start to creep up on the sugared cranberries, making them not so sparkly, so these are best assembled last minute.

- Rinse cranberries and place in a medium bowl. Pour maple syrup over cranberries and stir to combine. Cover, and let soak in the refrigerator overnight. Drain cranberries in a colander. Place cranberries in a single layer on a baking sheet covered with wax paper. Refrigerate for about an hour. Place sugar in a large bowl or baking dish. Add cranberries in 2 batches and roll around until lightly coated in sugar.
- To make cranberry chutney (while drained cranberries are in the fridge): Combine cranberries, water and sugar in a small saucepan over medium heat and simmer until cranberries pop and begin to soften. Use the back of a spoon or a fork to gently mash the cranberries and continue cooking until the mixture has thickened. Remove from heat and allow to cool.
- Assemble crackers with one slice of brie, a dollop of cranberry chutney, and 3-5 sugared cranberries. Place on a serving tray, set them out and watch them disappear!

- Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
- Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
- Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
- Preheat oven to 400 degrees F (200 degrees C).
- Bake bites in the preheated oven until golden brown, 18 to 20 minutes.

- Combine ½ cup of granulated sugar with ¼ cup of water in a saucepan and heat over medium-high for 4 minutes, stirring until the sugar dissolves and a syrup forms.
- Add the cranberries to the sugar syrup and mix until they're evenly coated.
- Remove the cranberries from the saucepan and place them on a chopping block lined with parchment paper. Let the cranberries rest for five minutes until the syrup coating is slightly hardened.
- Roll the cranberries in the remaining sugar to coat.
- Slice the baguette into slices roughly 1 inch thick, and place them on a baking sheet.
- Brush the baguette slices with extra virgin olive oil, then broil them for 2 minutes.
- Slice the Brie and use it to cover the baguette slices.
- Drizzle approximately ¼ teaspoon of honey onto each bread slice.
- Top the bites with sugared cranberries and mint, and sprinkle each one with rosemary salt.

- Preheat oven to 400 degrees. Line a baking sheet with parchment paper, set aside.
- Place pastry on a clean work surface and cut into 36 squares. Brush all squares with egg wash, then place one square on top of the other to make 18 stacks, each with 2 squares of pastry.
- Place on prepared sheet, about 2 inches apart, and bake until puffed and golden, about 13-15 minutes.
- Remove baking sheet from oven and top each puffed square with a piece of brie cheese. Return to oven and bake until cheese melts, about 3-5 minutes.
- Place on a serving platter and top each with a small spoonful of cranberry sauce and a small sprig of thyme for garnish.
