I love to entertain and always looking for yummy appetizers. These wonderful little tarts are compliments of Paula Deen. I prepared them ahead of time and warmed them in the oven before my guests arrived. Besides their scrumptious taste and slight kick they make a beautiful presentation. I also substituted the lump crab with imitation crab.

32 wonton wrappers
1 (8 ounce) package cream cheese, softened, I used light with success
1 cup parmesan cheese, grated
1/2 cup heavy whipping cream
1 large egg, slightly beaten
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1 (8 ounce) container lump crabmeat, shell pieces removed. See above note
1/4 cup green onion, minced
1/4 cup red bell pepper, minced

Steps:

  • Preheat oven to 350 degrees. Lightly spray 32 cups of a mini muffin pan with cooking spray. Place center of wonton wrappers in bottom of mini muffin cups, pressing edges of wrappers against sides of pan to form a cup. Spray edges of wonton wrappers with cooking spray.
  • In a medium bowl, combine cream cheese, and next 6 ingredients; beat with an electric mixer at low speed until smoooth. Fold in crabmeat, green onion, and red bell pepper. Spoon crab mixture evenly into prepared wonton cups. Bake 20-25 minutes, or until center are set and wonton is lightly browned.

1 large egg

1 tablespoon chopped green onion

Steps:

  • Preheat oven to 375°. Place tart shells in an ungreased 15x10x1-in. baking pan. In a small bowl, whisk egg, milk, mayonnaise, flour and salt until smooth. Stir in crab, cheese and chopped onion. Spoon into tart shells., Bake 9-11 minutes or until set. Garnish with sliced onions if desired. Serve warm.

Quick'n'Easy Seafood Tarts image

These tarts are a cinch to make, and always a hit at a shower or any gathering. Substitute a vegetable for the seafood to make this recipe vegetarian. This dish also lets you stretch a small amount of seafood; for example, smoked salmon tarts are easier on the budget to put out than a whole platter of smoked salmon. These keep well in the fridge for a day or two, as well.

1/2 cup chopped smoked salmon (or ANY seafood, your choice)
1/2 cup half-and-half (table cream)
1 large egg
2 teaspoons Dijon mustard
2 teaspoons chopped fresh dill (optional)

Steps:

  • Preheat oven to 375F; arrange tart shells on a baking sheet.
  • Into each shell, place 2 tsp of your favourite seafood; this recipe will also work with chopped ham, chopped asparagus etc, so use your imagination!
  • In a small bowl, whisk together the cream, egg and mustard; I like to also add the fresh dill because I like its taste, but leave it out or substitute if you don't want dill.
  • Distribute cream mixture evenly among the tarts and then bake for 12 to 14 minutes, until golden and"custard" is set.
  • Serve warm or at room temperature.

1 tablespoon olive oil
1/2 onion, diced fine
1 garlic clove, crushed
3 tablespoons white wine
2 eggs
2/3 cup cream
6 ounces canned crabmeat, drained
1/2 cup shredded manchego cheese
2 tablespoons chopped parsley
1/2 teaspoon ground nutmeg
2 1/4 cups flour
1/4 teaspoon salt
6 ounces butter
2 tablespoons cold water

Steps:

  • Fry the onion in the olive oil until soft but not browned. Add garlic and continue frying another 30 seconds. Add the wine and cook until wine is almost absorbed/evaporated. Remove from heat.
  • Make the filling by whisking the egg, then mixing in the cream. Add the crab, cheese, parsley, and onions. Mix. Set aside.
  • Make the dough by mixing the flour and salt in a large bowl. Cut the butter into small cubes. Use fingers to squeeze the butter into the flour by grabbing chunks of flour and butter and squeezing to combine. Continue until it looks like a bunch of small bread crumbs.
  • Add water a little at a time, continuing to squeeze as before, until the flour and water form a stiff dough.
  • Dust a counter with flour and roll the dough into a thin sheet. Use a 2 1/2 inch cookie cutter to cut circles of dough. Place these into a muffin tin to form the crust of the tartlets. When you run out of dough to cut, collect the scraps, re-roll them and cut more circles. You should get close to 24.
  • Pour the filling evenly into each tartlet. Bake at 375 for 25-30 minutes. They should be set and golden-brown in color.

Enjoy this sumptuous crab, leek and cheddar tart at a family feast. You can prep early by making the pastry and cooking the leeks the day before

250g plain flour, plus extra for dusting
150g cold butter, cut into cubes
1 large egg yolk
10g butter
2 leeks (about 500g), sliced into 2cm rings
200ml double cream
100ml crème fraîche
1 large egg, plus 3 egg yolks
200g white crabmeat
35g cheddar, grated

Steps:

  • Put the flour, butter and a good pinch of salt into a food processor, and blitz until the mix resembles breadcrumbs. Combine the yolk with 1½ tbsp very cold water, then add this to the mixture and blitz again until the pastry comes together into a ball (you may need to add a little more water).
  • Lightly dust a rolling pin and a large sheet of baking parchment with flour. Roll the pastry out on the parchment, and use it to line a 23cm loose-bottomed tart tin. Chill for 1 hr until firm. Heat the oven to 200C/180C fan/gas 6 with a baking sheet inside.
  • For the filling, heat the butter in a heavy-bottomed pan over a medium heat, add the leeks, stir, season and add 2 tbsp water. Cover, reduce the heat to low and cook for 15 mins until the leeks are soft. Uncover, turn up the heat and cook until any liquid has evaporated. Remove from the heat and leave to cool.
  • Prick the base of the pastry case all over with a fork, then line with baking parchment and baking beans. Bake on the hot baking sheet for 12 mins, remove the parchment and beans, then bake for 13 mins more. Leave to cool slightly, then spoon the leeks into the pastry case.
  • Mix together the double cream, crème fraîche, whole egg and egg yolks. Season well, then gently fold in the crabmeat. Carefully pour the filling over the layer of leeks, then scatter over the cheese.
  • Return the tart to the baking sheet in the oven and bake for 35-40 mins, or until the pastry is golden and the filling is just set in the middle (it will continue to cook as it cools). Leave to cool for 15 mins, then remove from the tin and serve.

These versatile crab tarts are perfect for Christmas or celebratory meals

8 slices white bread (medium sliced white works best)
50g butter , melted
2 ripe avocados
juice ½ lemon
100g bag wild rocket
400g white crabmeat (we used 2 x 200g tubs Hebridean crab meat from the Waitrose chiller cabinet)
4 tbsp white wine vinegar
½ tsp peppercorns
1 fresh bay leaf
4 egg yolks
250g pack unsalted butter
small handful chervil or tarragon, roughly chopped
juice ½ lemon

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Punch out a circle from the centre of each slice of bread using a 10cm round cutter and roll flat with a rolling pin. Brush circles with the melted butter on each side, then press into 8 individual tart tins. Lift onto 2 baking sheets and bake for 10 mins or until tinged with gold at the edges. Carefully flip the cases out from the tins so they are upside down on the trays, then put back into the oven for 5 mins or until crisp and dry. Leave to cool. Can be kept in an airtight tin for up to 3 days.
  • To start the sauce, put the vinegar, peppercorns and bay leaf into a small pan and bring to the boil. Simmer for about 5 mins or until reduced to about 1 tbsp. Take off the heat, then strain out bay leaf and peppercorns. Will keep covered in the fridge for up to a week.
  • Halve avocados, stone and peel. Thinly slice avocado, put into a bowl and gently toss with a squeeze of lemon juice. Can be kept covered in the fridge for up to 2 hrs before serving. When ready to serve, put the avocado and a little rocket into each case, then top with crabmeat. Tip vinegar reduction into a tall, narrow jug, then add the egg yolks. Melt the butter in a pan over a medium heat (don't boil), then add to the jug. Put a stick blender right to the bottom of the jug, turn on and draw very slowly up through the butter. The sauce will thicken as the yolks and butter meld together. Add herbs, season, then add a dash of lemon juice to bring out the herby flavour and cut through the butteriness. Spoon the hollandaise generously over each tartlet so it oozes over the crab. Serve at once.

1 3/4 cups flour
1/2 teaspoon salt
3/4 cup unsalted butter, cold and cut into cubes
4 -6 tablespoons ice cold water
2/3 cup heavy cream
2 eggs
8 ounces cooked drained crabmeat
1 1/2 tablespoons chopped fresh tarragon
1 small shallot, grated
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper

Steps:

  • For the crust: Combine the flour and salt in a food processor. Pulse a few times.
  • Add the cold butter and pulse until the bits of butter are the size of peas. Add the cold water 1 tablespoon at a time, pulsing in between, until the dough comes together. It will be a bit lumpy.
  • Shape the dough into a rectangle, then wrap it in plastic and refrigerate for at least 30 minutes.
  • Preheat the oven to 400 degrees F. Place the dough on a floured work surface and roll out to a 8 X 20 inch rectangle.
  • Trim the rough edges. Then cut down the center lengthwise. Cut each strip into 5 pieces creating 10- 4 inch squares of dough.
  • Fold each square and place them into muffin tins. Press the centers down to the bottom and press the folds into the sides. Prick the bottoms of the shells several times with a fork.
  • Bake the shells for 15 minutes. Then cool a little.
  • In the meantime, combine the cream and eggs in a medium sized bowl. Whisk until smooth. Then stir in the rest of the ingredients.
  • Scoop the crab mixture into each shell evenly.
  • Bake for about 20 minutes-until the tops are firm and slightly golden.
  • Serve warm!

500g pack shortcrust pastry
10cm piece fresh root ginger , peeled and roughly chopped
20g pack fresh parsley , preferably flat leaf
2 tbsp sunflower oil
250g fresh white crabmeat
2 eggs , plus 2 egg yolks
300ml crème fraîche
4 spring onions , finely chopped
1 lime , juice only
1 red chilli , seeded and finely chopped
3 tbsp light soy sauce
6 tbsp sunflower oil
1 tsp golden caster sugar

Steps:

  • Heat oven to 200C/fan 180C/gas 6. On a lightly floured surface, roll out the pastry to 5mm thickness and use to line a 25cm loose-bottom shallow tart tin. Cover and chill for 15 mins.
  • Line the pastry case with greaseproof paper and fill with baking beans. Bake for 10-15 mins until dry to touch, but not coloured. Remove the paper and beans and return the pastry case to the oven for a further 3-5 mins until it is just cooked. Reduce the oven to 180C/fan 160C/gas 4.
  • In a small food processor, blend the ginger with the parsley and 2 tbsp of sunflower oil to a coarse paste. Spread over the base of the tart case. Scatter the crab meat over the ginger paste. Whisk together the eggs and egg yolks with the crème fraîche, then season. Put the tart tin on a baking sheet and pour in the egg mixture. Return the tart to the oven for 30-35 mins or until just set.
  • Meanwhile, make the dressing. In a small bowl, whisk together the onions, lime juice, chilli, soy sauce, sunflower oil and sugar with 1 tbsp water. Serve the tart warm with a drizzling of dressing.

1 small onion, finely chopped
1 tablespoon olive oil
1 lb fresh spinach, tough stems removed
2 cloves garlic, minced
1/2 lb lump crabmeat, picked over
4 ounces feta cheese, crumbled
1 large egg
1 large egg white
1 tablespoon heavy cream
1/8 teaspoon paprika
1 pinch cayenne pepper
6 sheets phyllo pastry
2 large tomatoes, finely chopped
1/2 teaspoon red wine vinegar
1/2 teaspoon tomato paste
2 cups fresh basil leaves
1/2 cup extra virgin olive oil
1/3 cup mayonnaise
1/4 cup flying fish roe (available at Asian markets) (optional)
1 teaspoon fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 cup balsamic vinegar, about

Steps:

  • Make the spinach and crab tarts: Melt 1 tblsp of the butter in a small saucepan.
  • Add the onion and cook over medium-low heat, stirring occasionally, until translucent, about 6 minutes.
  • In a large skillet, melt the remaining 1 tblsp butter in the olive oil.
  • Add the spinach and cook over high heat, stirring often, until wilted, about 2 minutes.
  • Stir in the garlic and ¼ tsp salt.
  • Spoon the spinach into a colander set over a bowl and press down to remove the excess liquid.
  • Transfer the spinach to a large bowl, reserve ¼ cup of the liquid.
  • Add the reserved spinach liquid to the sautéed onions.
  • Bring to a boil over high heat and boil for 2 minutes.
  • Add the mixture to the spinach along with the crabmeat and feta.
  • In a small bowl, beat the whole egg, egg white, heavy cream, paprika, cayenne and ¼ tsp of salt.
  • Stir the mixture into the spinach.
  • Preheat the oven to 350F.
  • Lightly butter six 3-ounce muffin cups in a 12-cup muffin tin.
  • Spread 1 sheet of filo on a work surface; keep the remaining sheets covered with a damp kitchen towel.
  • Brush the filo with some of the melted butter.
  • Lay another sheet of filo on top, brush with butter and repeat the process with 1 more sheet of filo and butter (3 sheets in all).
  • Cut the filo into three 6-inch squares and gently press a square into each of the buttered muffin cups; discard the trimmings.
  • Repeat the process with the remaining sheets of filo and melted butter.
  • Using kitchen scissors, trim the corners of the filo, then neatly fold in any overhanging edges.
  • Make the sauces: In a blender, combine the tomatoes, red wine vinegar and tomato paste.
  • Season with salt and pepper and puree until smooth.
  • Strain into a medium bowl.
  • Rinse and dry the blender.
  • Add the basil and olive oil and puree until smooth.
  • Scrape the basil oil into a small bowl and season with salt.
  • In another small bowl, combine the mayonnaise, flying fish roe (if using) lemon juice and mustard.
  • Spoon the crab filling into the filo-lined cups.
  • Bake the tarts in the center of the oven for about 30 minutes, or until the filo is golden-brown and the filling is set.
  • Let cool slightly in muffin tin.
  • Transfer the crab tarts to individual plates.
  • Top each tart with a heaping tsp of the mayonnaise.
  • Drizzle the tomato sauce, basil oil and balsamic vinegar around each tart.

  • 1. Beat eggs until frothy. Add next three ingredients; stir well. Add remaining ingredients. Place shells on ungreased baking sheet. Spoon mixture into tart shells.
  • 2. Bake at 350 degrees for 40 minutes or until cheese mixture is set. Place on lower rack in oven. ENJOY!!

  • If the crab meat is watery, line a fine mesh strainer with paper towels, fill it with the crab meat, and let it drain for 30 minutes. Pat the crab meat with fresh paper towels and try to drain/soak up as much of the water as possible.
  • Mix together the egg, mayonnaise, mustard, paprika, and scallions. Add the crab meat and the breadcrumbs and gently combine. Chill for at least 2 hours, or up to 8 hours.
  • When you are ready to cook the crab cakes, divide the crab meat mixture into 8 parts. Shape each into a cake and lightly dredge with flour. The crab cakes will be soft, so handle them gently. Place each dredged cake onto a plate to rest while the oil heats.
  • Heat the oil in a large skillet over medium-high heat. Once the oil is hot, carefully slide the crab cakes into the skillet. Cook for 3-4 minutes per side, or until the cakes are crispy and golden brown. Remove the cakes to a paper towel lined plate.
