Steps:
- Prepare and measure out all ingredients.
- Turn oven on to 350° F.
- Defrost the frozen spinach and squeeze out all the excess water.
- Add extra virgin olive oil to a skillet under medium heat. Add minced garlic and saute for 2-3 minutes, making sure not to burn the garlic. Add chopped green onions and quickly stir to incorporate all the garlic and olive oil. Remove from heat.
- Add spinach, garlic and onion mixture, ricotta cheese, beaten egg, chopped parsley, chopped dill, sea salt, ground black pepper, ground nutmeg into a bowl and mix well to incorporate all ingredients.
- Add crumbled feta to spinach mixture. Gently fold in crumbled feta cheese to spinach mixture.
- Arrange phyllo cups on a baking sheet. Add spinach mixture into phyllo cups. Place in the center rack of oven and cook for 20 minutes.
- Remove from oven and serve immediately. Enjoy!

These spanakopita phyllo cups are the perfect appetizer for your dinner party. The flaky phyllo cups hold a flavorful filling made of fresh spinach, herbs, feta, and ricotta cheese. They would make a beautiful addition to your holiday table.

- Preheat the oven to 350 °F, 180 °C. Make the filling: Combine the feta cheese, ricotta, eggs, oil, salt, pepper, and dill in a tabletop mixer fitted with the paddle attachment. Beat until combined. Add the scallions and beat until combined. While the mixer is running on low add a handful of chopped spinach at a time until all of the spinach is incorporated. Mix everything together with a spatula and set aside. Make the phyllo cups: Brush two muffin tins with melted butter. Place 6 sheets of phyllo (one at a time) on a clean work surface and drizzle melted butter between each sheet and some butter on top of the top sheet. Cut 12 (4-inch) squares. Tuck each phyllo square into the muffin cups. Repeat the same steps to create 12 more phyllo cups. Fill the center of each phyllo cup with the filling. Brush melted butter over the exposed phyllo cups. Bake on the center rack of the preheated oven for 45 minutes till 1 hour or until the filling is set and the phyllo is golden. Allow to cool for 10 minutes inside of the muffin tins and transfer each cup onto a serving plate. Serve these flaky phyllo cups with some creamy tzatziki sauce. Enjoy!
SPANAKOPITA LASAGNA

- Preheat oven to 350 degrees F.
- Cook the lasagna noodles in a large pot of boiling salted water. Add 1 tablespoon olive oil to the water to prevent noodles from sticking. Cook noodles for about 10 minutes, drain and set aside on a baking sheet. Do not overcook noodles as they will cook more in the oven.
- Prepare the Bechamel Sauce:
- In a saucepan, melt the butter over medium heat. Add the flour and whisk until smooth, about 2 minutes. Gradually add the milk while continuing to whisk, until the sauce is smooth. Simmer for about 10 minutes until the sauce is thick enough to coat the back of a spoon. Stir in the salt, pepper, and nutmeg. Set aside.
- Prepare the Spinach Filling:
- Heat 1 tablespoon of oil in a large saute pan over medium heat, add half of the spinach, stirring until wilted and tender, about 3 minutes. Remove the spinach, place in a colander and squeeze out excess liquid, and then roughly chop. Repeat the process with the remaining spinach.
- Heat the remaining olive oil and 1 tablespoon of butter in the saucepan and add the garlic. Saute until fragrant, about 1 to 2 minutes, then add scallions. Saute another 2 to 3 minutes until scallions are soft, then add the spinach along with the parsley, nutmeg, salt, and pepper. Remove from heat and allow to cool.
- Stir the feta cheese and beaten egg into the cooled spinach mixture.
- Assemble the lasagna:
- Coat the bottom of a 13 by 9-inch lasagna pan with a thin layer of bechamel sauce. Arrange 4 noodles lengthwise on the sauce, slightly overlapping each other. Pour 1/3 of the bechamel sauce over the noodles. Then add 1/3 of the spinach mixture, spreading it out evenly. Top the spinach mixture with 1/4 cup of grated Parmesan. Repeat with 2 more layers of noodles, sauce, spinach mixture, and Parmesan.
- For the topping, unroll the phyllo dough on a flat surface and keep it covered with a damp towel so that it doesn't dry out. Place a sheet of phyllo on top of the lasagna. Brush with melted butter and sprinkle some bread crumbs evenly. Top with another phyllo sheet, brush with more butter and sprinkle with more bread crumbs. Repeat with the 2 remaining layers of phyllo. Make sure the edges are nicely sealed with butter so that they don't curl up during the baking process. Top the final layer with a mixture of the remaining melted butter, bread crumbs, and Parmesan.
- Bake in the preheated oven for 25 to 30 minutes, being careful not to overcook the phyllo. Remove from oven and let cool slightly before serving. Cut into squares and serve.

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
- Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
- In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
- Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.

- Preheat oven to 425°. In a large bowl, mix the first 9 ingredients. Place 1 sheet of phyllo dough on a work surface; brush with butter. Layer with 2 additional phyllo sheets, brushing each layer. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.), Arrange 3/4 cup spinach mixture in a narrow row along the long end of phyllo to within 1 in. of edges. I love this recipe for spanakopita. The cream cheese makes it extra creamy. I have only made the full-fat version, so far. I am planning on using all low-fat or fat-free cheese the next time I make it. I don't know if there would be a taste difference or not. I am also planning on layering it in a pie next time too for an entree rather than an appetizer. These can be made ahead of time and either frozen or refrigerated. Reheat in oven.

- Preheat oven to 350°F.
- Combine all ingredients, except for fillo and butter, in a food processor. Blend until smooth.
- Layer 4 sheets of fillo dough, brushing EACH ONE with butter. Cut into 8 strips, the cuts should be perpendicular to the long edges.
- Place 1 Tablespoon of filling on each strip, about 1-inch from the bottom. Fold corner of fillo to form a triangle. Continue folding triangle onto itself. Brush outside with butter.
- Place triangles, seam down, on cookie sheet or in baking dish about 1-inch apart.
- Repeat steps 3-5 until all the filling is used.
- Bake 20 to 25 minutes or until golden brown.
- Serve hot.

- Heat a large fry pan over medium-high heat.
- Add the spinach with only the rinsing water clinging to the leaves, cover and cook until wilted, about 1 minute.
- Drain well on paper towels, then squeeze out as much of the remaining liquid as possible.
- Place in a large bowl and add the feta cheese, kefalotiri cheese, eggs, mint, and nutmeg.
- Stir well to combine.
- Season with salt and pepper.
- Preheat an oven to 375°F.
- Lightly butter a baking sheet.
- Cut the stack of phyllo sheets lengthwise into 3 equal strips.
- Remove 1 strip and cover the remaining phyllo with a slightly dampened kitchen towel to prevent it from drying out.
- Place the strip on a work surface and brush lightly with melted butter.
- Place another strip on top.
- Brush the second strip lightly with melted butter.
- Place a heaping teaspoonful of the filling about 1 inch in from the bottom of the strip.
- Fold the uncovered end over the filling on the diagonal to form a triangular shape.
- Bring the bottom of the triangle up against the straight edge.
- Continue folding in this manner until the tip of the strip is reached, forming a triangular pastry.
- Brush lightly with melted butter.
- Place on the prepared baking sheet.
- Repeat with the remaining phyllo and filling.
- Bake until golden, about 15 minutes.
- Remove from the oven and transfer to a platter.
- Serve immediately, warm or at room temperature.
