What could be more classic breakfast than a cast iron skillet full of browned potatoes, cooked bell peppers, and of course, glorious SPAM® Classic? It's the meal that'll have you asking, Hash anyone started making breakfast yet?

1 (12-ounce) can SPAM® Classic, diced
2 tablespoons canola oil
1 onion, finely chopped
2 large baking potatoes, peeled and diced
½ red bell pepper, chopped
½ green bell pepper, chopped
¼ cup fresh parsley, chopped
¼ teaspoon freshly ground pepper

Steps:

  • In 10-inch cast-iron skillet, heat oil over medium heat.
  • Cook onions 3 minutes or until translucent.
  • Add potatoes and cook 7 to 10 minutes or until golden.
  • Stir in SPAM® Classic, red and green and bell peppers and cook until heated through and browned.
  • Stir in chopped parsley and pepper.

I saw the original recipe for this in the "America's Best Brand Name Recipes" cookbook. And I "tweaked" a couple of things in it to more suit my tastes. If desired serve with your favorite biscuit or cornbread recipe.If you don't like Spam©, just substitute the same amount of ham or other cooked meat. Submitted to "ZAAR" on September 24, 2007.

3/4 cup chopped sweet onion
3 tablespoons butter or 3 tablespoons margarine
2 cups frozen cubed hash brown potatoes, thawed
1 (12 ounce) can Spam, diced into small cubes
1 1/2 cups frozen peas and carrots
1/2 teaspoon ground black pepper
1/2 teaspoon salt (to taste)
3/4 teaspoon garlic powder
1 cup of shredded sharp cheddar cheese (optional)

Steps:

  • In a large non stick skillet over medium heat, melt margarine and cook onion until softened.
  • Add potatoes and cook until lightly browned.
  • Then add spam and veggies, sprinkle with garlic powder, salt and pepper.
  • Stir occasionally until meat is slightly browned.
  • Top with cheese if desired, and let set for 5 minutes.

Vegetable Hash with Poached Eggs image

3 tablespoons olive oil
1 leek, washed, white and light green part sliced thinly
1 onion, finely chopped
2 garlic cloves, minced
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
4 carrots, cut into 1/4 inch dice
2 baking potatoes, cut into 1/4 inch dice
1 red bell pepper, seeded and cut into 1/4 inch dice
1 poblano chile, cut into 1/4 inch dice
1/4 pound mushrooms, cut into 1/4 inch dice
1 bunch cilantro, chopped
1 tablespoon vinegar
4 to 6 eggs, cracked into individual bowls
Salsa Roja, if desired

Steps:

  • Heat the oil in a large skillet over moderate heat. Add the leek and onion and saute until soft, about 5 minutes. Add the garlic, salt and pepper and saute another minute. Add the carrots, potatoes and scant 1/4 cup water to skillet. Cover and cook until vegetables are tender, 5 to 7 minutes.
  • To the vegetables in the skillet, add the red pepper, poblano chile and mushrooms and saute until softened, 3 to 5 minutes. Add the cilantro and mix to combine, then turn the heat to high to lightly brown the hash.
  • Meanwhile, poach the eggs: Bring 4 cups of water and the vinegar to a simmer in a deep saute pan. One at a time, tip each bowl over the water and let the eggs fall gently into the water. After 1 to 2 minutes, remove each egg with a slotted spoon and drain on paper towels.
  • Divide the vegetable hash among individual plates, making a well in the center of each. Using a slotted spoon, carefully place a poached egg in the center of the hash. Serve warm with Salsa Roja.

Steps:

  • 1. Slice the potaoes by cutting in half lengthwise then slicing.
  • 2. Chop the onion.
  • 3. Dice up the spam.
  • 4. Heat oil in a heavy skillet on Medium heat.
  • 5. Add Potatoes and cook for about 10 minutes stirring often.
  • 6. Add the onion and Spam. Continue to cook stirring often until potatoes are crisp and Spam has good color.
