1 large eggplant
salt
3 tablespoons olive oil
1 1/2 teaspoons chopped garlic
2 tablespoons chopped parsley
large canned imported Italian tomatoes
chopped hot red chili pepper to taste
1 pound pasta

Steps:

  • Peel Eggplant. Slice eggplant into medium slices. Salt, and allow to sit on paper towels. This will remove the water from eggplant and make frying much easier. Press moisture out using paper towels.
  • Cut into 1 1/2 inch slices, fry in very hot oil. Cut into pieces. Drain again with paper towels.
  • Saute garlic in olive oil until golden.
  • Add tomatoes, parsley, chili pepper, salt and stir, simmering for about 25 minutes. Add cooked eggplant, cook a few more minutes.
  • Cook pasta (spaghetti works best) al dente according to directions. Add spaghetti to the hot sauce to finish the last minute of cooking. This helps to marry the pasta and sauce.
  • Serve with extra chili pepper on side. Season to taste with salt and black pepper.

A neighbor gave me a big bag of Eggplant, I have lots of tomatoes from our garden. We love Ratatouille, So I came up with this recipe for canning.

2 tablespoons olive oil
1 large onion, chopped
6 garlic cloves, chopped
1 large bell pepper, chopped
2 lbs eggplants, peeled & cubed
8 cups tomatoes, peeled & cubed
1 (6 ounce) can tomato paste
4 tablespoons fresh basil
2 teaspoons dry oregano
1/3 cup sugar
1/8 cup salt
1 teaspoon pepper
1 cup dry red wine

Steps:

  • In a very large kettle, heat olive oil over medium heat.
  • Add onion and garlic; cook until the onion is soft.
  • Add tomatoes, eggplant, bell pepper, tomato paste, basil, oregano, sugar, salt, pepper, and wine; stir.
  • Bring to boil; reduce heat, cover and simmer for 30 minutes, stirring occasionally.
  • Put into hot jars and seal.
  • Makes 7 pints or 4 quarts.
  • Process in hot water bath for 40 minutes.
  • This is very good served over pasta with Mozzarella cheese.

2 medium eggplants
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 garlic cloves
1/2 lemon, juiced
6 fresh basil leaves
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
2 medium onions, chopped
1 fresh red chile, chopped
2 garlic cloves, minced
1 cup alfonso olives, pitted
1/2 bunch fresh basil leaves
3 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
Pinch sugar
1 tablespoon capers
Kosher salt and freshly ground black pepper
1 pound spaghetti
1/2 cup freshly grated pecorino cheese

Steps:

  • Heat a grill pan over medium heat. Slice the eggplants into 1/4-inch rounds. Toss them with 1/4 cup olive oil and some salt and pepper. Grill them until marks have formed and they are soft, about 2 to 3 minutes per side. Place them onto a paper towel lined platter. Scatter over 2 cloves of sliced garlic, drizzle with 2 tablespoons of olive oil and the lemon juice, put on a few torn basil leaves, and season it all with salt and pepper. Set aside while you make the sauce.
  • Coat a large saute pan with olive oil and place over medium heat. Cook the onions until they are soft, about 5 minutes. Add the chile, garlic, olives and a few hand-torn basil leaves. Carefully add the tomatoes and a pinch of sugar; cook and stir until the liquid is cooked down and the sauce is thick, about 15 minutes. Add the capers, taste, and adjust the seasoning with salt and pepper. Lower the heat, cover, and keep warm.
  • Fill a large pot with water and bring it to a boil. Add a couple of tablespoons of salt and the spaghetti. Stir to make sure the pasta doesn't stick. Cover and return to a boil. Remove cover and cook for about 6 to 8 minutes, or until the spaghetti is al dente. Drain and add the spaghetti to the tomato sauce. Add the cheese and mix well. Pile onto a platter and top it with the eggplant slices. Garnish with more basil leaves.

3 garlic cloves
1 pound Asian eggplants (about 6 medium)
two 28- to 32-ounce cans whole tomatoes
1 pound ridged ziti or rigatoni
1 1/4 cups olive oil
3 ounces freshly grated ricotta salata cheese (about 3/4 cup)
Garnish: fresh basil leaves

Steps:

  • Peel garlic. Trim stem ends of eggplants. Halve eggplants lengthwise and cut crosswise into 1/2-inch-thick slices. In a large sieve drain tomatoes. Transfer tomatoes to a bowl and squeeze to break into smaller pieces.
  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta.
  • In a 12-inch heavy skillet heat 1 cup oil over moderately high heat until hot but not smoking. Fry eggplant in 2 batches, turning, until golden brown on both sides. Transfer eggplant as fried with a slotted spoon to paper towels to drain, arranging it in one layer. Season eggplant with salt and pepper.
  • Pour off oil from skillet and wipe clean with paper towels. Add remaining 1/4 cup oil to skillet and cook garlic over low heat, stirring, until golden. Stir in tomatoes with any juices that have accumulated in bowl and simmer, stirring frequently, until slightly thickened, about 15 minutes. Season sauce with salt and pepper.
  • While sauce is simmering, cook pasta until al dente. Reserve 1 cup pasta cooking water and drain pasta in a colander. Transfer half of tomato sauce with half of ricotta salata to a large bowl and toss with pasta and half of eggplant, adding some reserved pasta cooking water if sauce becomes too thick. Transfer pasta to a serving bowl and top with remaining sauce and eggplant and some of remaining cheese.
  • Garnish pasta with basil and serve remaining cheese on the side.

1 Tbsp. chopped fresh basil

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium heat. Add eggplant; cook 5 min., stirring occasionally. Stir in pasta sauce and crushed pepper; simmer on medium-low heat 5 to 6 min. or until heated through, stirring occasionally. Remove from heat; stir in basil.
  • Drain pasta. Serve topped with pasta sauce mixture.

1 (8 ounce) box frozen spinach, thaw and squeeze water out
5 garlic cloves, chopped
2 tablespoons sugar
2 teaspoons basil
2 teaspoons oregano
1 teaspoon salt
3 tablespoons extra virgin olive oil

  • Combine all in crockpot on low for 4-6 hours.

2 medium eggplants, skins on, cut in 1-inch cubes
1 tablespoon kosher salt
1 1/4 cups extra virgin olive oil, divided
4 cups diced fresh tomatoes
10 canned piquillo peppers or 3 roasted sweet peppers, skins and seeds removed, cut in 1/2-inch strips
2 tablespoons minced garlic or 2 tablespoons roasted garlic
2 cups salsa, rossa or 2 cups canned tomato sauce
1 cup fresh basil leaves, cut in strips or 1 -2 tablespoon italian seasoning
1 pinch hot red pepper flakes (or more)
2 tablespoons fresh oregano leaves
2 tablespoons chopped Italian parsley
1 lb spaghetti
shaved parmigiano
3 tablespoons extra virgin olive oil

Steps:

  • SPAGHETTI AND SPICY EGGPLANT:.
  • Place eggplant in colander, sprinkle with salt, and let rest for one hour.
  • Pat eggplant dry. In a large skillet, heat 1/4 cup olive oil on high.
  • Add in one layer of eggplant and cook until crispy on one side; do not stir.
  • Turn to crisp other side.
  • Eggplant will shrink and crisp.
  • Repeat until all the eggplant is crispy.
  • In a wide pot, heat 1/4 cup olive oil, add diced tomatoes and peppers, and cook on high, stirring, for about 3 minutes.
  • Lower heat, add garlic, and cook for 2 more minutes.
  • Add eggplant and Salsa Rossa, and cook, stirring gently a couple of times.
  • Add basil Italian seasoning (if using), red pepper flakes, oregano, and parsley.
  • In a large pot, bring salted water to boil and cook spaghetti until al dente.
  • Drain, reserving 2 cups cooking water.
  • Add pasta to sauce and cook over high heat 2 to 3 minutes, adding a little pasta water if needed to keep everything juicy.
  • Serve with shaved Parmigiano, a nice salad and why not some chianti?.
  • SALSA ROSSA:.
  • Heat the olive oil in a skillet.
  • Add tomatoes, garlic, and red pepper flakes, and sauté until tomatoes are soft.
  • Stir in fresh basil, and add salt and pepper to taste.
  • Puree or leave chunky.

3/4 cup black olives, sliced
4 tablespoons capers, rinsed
1 -2 teaspoon dried oregano

Steps:
