SPAGHETTI WITH GARLIC, OLIVE OIL AND RED PEPPER FLAKES
Steps:
- Bring 6 quarts of salted water to a boil in a large pot. Add the pasta and cook until al dente, 6 to 8 minutes. Drain the pasta in a colander, reserving 2 tablespoons of the pasta water. The reserved pasta water will help create the sauce. Do not rinse pasta with water -- you want to retain the pasta's natural starches so that the sauce will stick.
- Heat the olive oil in a large saute pan over medium heat. Add the garlic and saute until light brown and fragrant. It's important not to burn the garlic or else it will become bitter. Remove and discard the browned garlic. Add the red pepper flakes and saute for 1 minute. Carefully add the pasta and toss to coat in the flavored oil. Add the reserved pasta water and cook, stirring, to create a sauce, 1 minute.
- Remove the pan from the heat and top with the fresh herbs.

Steps:
- Bring a pot of salted water to the boil and add the spaghetti. Cook until the spaghetti is soft but still has a little bite.
- While the spaghetti is cooking, remove the seeds from the chillies and finely chop. Peel and finely chop the garlic.
- Heat the olive oil in a large frying pan. Cook the garlic and chillies gently for a few minutes.
- Drain the spaghetti and add to the frying pan, mix to coat with the oil.
- Sprinkle the spaghetti with the parsley, season with salt and serve.
SPAGHETTI AGLIO E OLIO (GARLIC SPAGHETTI)
Steps:
- Gather the ingredients.
- Boil a large pot of water. Add salt when it has boiled and add the pasta. Once the pasta has cooked to al dente (look at the package instructions), reserve a cup of the pasta water for the sauce and drain.
- Slice the garlic into thin slivers (as thin as you can).
- Mince the parsley.
- Add the olive oil to a large pot (the same one you cooked the pasta in, if you wish) and cook on medium heat. Add half of the garlic and saute until just fragrant. Then add in the salt, pepper, red pepper flakes, and chopped parsley. Cook for another minute. Just be careful not to overcook or over toast the garlic. This can lessen the garlic flavor and can make the garlic taste bitter.
- Add half a cup of the reserved pasta water, the pasta and the remaining garlic. Toss and cook for another 2 minutes or until it is all heated through. Add in more pasta water if needed.
- Add the parmesan cheese and more salt to taste. Serve immediately.

Steps:
- Boil a large pot of water for the pasta. Salt generously and cook pasta until al dente.
- Meanwhile, heat olive oil in a skillet over medium-high heat. Add garlic and red pepper flakes and cook, stirring, until garlic is tender and fragrant. Remove the skillet from the heat and add the lemon juice. Stir to combine and set aside until the pasta is ready. (*Note: you can also cook the garlic longer, until it just starts to colour, for a more roasted garlic flavour to the dish).
- When pasta is ready, return the skillet to the heat over medium heat. Use tongs to remove the cooked pasta to the skillet and toss to combine with the olive oil mixture. Add the parsley, Parmesan, lemon zest and butter, if using, and toss to combine. Season with salt and pepper, to taste.

SPAGHETTI WITH EDAMAME, PARSLEY, GARLIC AND OLIVE OIL
Thanks to by Martha Shulman in the 3/27/10 New York Times - Series on dinner for $1.50 or less. "The pasta company Barilla is now making a mixed semolina and whole grain pasta called Barilla Plus that combines a grain and legume flour blend with the traditional semolina. It's a little more expensive than regular pasta, but you'll get more nutrition for your buck. The other ingredients here are not at all pricey. If you can't find the whole grain pasta, this is still an easy, inexpensive and nutritious dish. Advance preparation: This isn't a dish to do in advance, but the whole thing can be made while you're waiting for the water to boil. "

Steps:
- 1. Begin heating a large pot of water for the pasta. Meanwhile, turn on a food processor fitted with the steel blade, and drop in the garlic. When it's chopped and adhering to the sides of the bowl, stop the machine and scrape down the bowl with a spatula. Add the parsley to the bowl, and process until finely chopped. With the machine running, drizzle in the olive oil. Transfer the mixture to a large pasta bowl. (You can also use a mini-chop for this task.)
- 2. When the water in the pot comes to a boil, salt generously, add the edamame or peas and cook five minutes. Remove from the pot with a strainer or a slotted spoon, and place in the bowl with the parsley.
- 3. Add the spaghetti to the boiling water, and cook al dente following the timing instructions on the package. Checking for doneness about a minute before the stated cooking time. When the pasta is cooked, remove 1/2 cup of the cooking water and add to the bowl with the herbs and edamame or peas. Drain the pasta, and toss with the mixture in the bowl. Add Parmesan if desired, and serve.
SPAGHETTI WITH GARLIC AND OLIVE OIL
"No pasta could be easier than spaghetti and olive oil, right? Yet I can't believe how badly this sublime and simple pasta gets made, with not enough oil, undercooked garlic, and the addition of cheese, which I think is sinful. Here's my spaghetti aio e oio," says Scott.

Steps:
- Bring a large pot of very well salted water to a boil. Heat the olive oil in a sauté pan over medium heat. Start cooking the spaghetti. While it cooks, add the garlic to the pan with just enough heat so that it sizzles gently. Add the crushed red pepper flakes. When the outside edges of the garlic are just starting to brown, add 1 cup of the pasta water and a pinch of salt. Keep cooking, shaking the pan to create an emulsion, until the oil and water mixture no longer has that very harsh raw garlic flavor.
- When the pasta is al dente, drain it and add it to the pan, along with the chopped parsley, if using, tossing to coat. Serve immediately.

Steps:
- Bring a large pot of water to a boil. Then add salt and put in the pasta. Stir well.
- In the meantime, combine the garlic and olive oil in a cold skillet and bring them to a gentle simmer. Cook them for about 6-7 minutes, until the garlic has softened and just started to brown.
- At this point, add about 1/2 cup of pasta water to stop the garlic from cooking further.
- Drain your spaghetti and add it to the skillet. Add the parsley, basil, and Parmesan. Then stir everything together nicely. If the sauce looks a bit too dry, add in another 1/4 cup of the starchy pasta water.
- Serve this pasta garnished with freshly grated black pepper, chili flakes, fresh herbs, and/or Parmesan on top.

- For the pasta, bring a large pot of water to a boil. While you are waiting for the water to boil for your pasta, finely mince up your garlic.
- Next add your garlic and turn down your heat to medium low and carefully simmer your garlic making sure not to let it brown but just get nice and soft.
- Once your garlic is simmering, add a pinch of salt to sweat out some of that garlic flavor. At this point, check your pasta water to see if your pasta is ready to go in to your large pot.

- Heat the olive oil gently in a frying pan. Add the garlic and chili and cook gently for a few minutes, or until the garlic is pale gold, which will be enough time for the flavorings to infuse the oil (take care not to burn it!). Stir in chopped parsley.
