3 tablespoons extra virgin olive oil
4 cloves garlic, sliced
1 teaspoon red chili flakes
2 tablespoons fresh parsley, finely chopped, optional

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ¼ cup (60 ml) of pasta water, then drain.
  • Add the olive oil and garlic to a large cold sauté pan. Turn the heat to medium-low and slowly heat up until the garlic is fragrant and lightly colored, about 3 minutes.
  • Add the chile flakes and cook for another minute.
  • Add the reserved pasta water and bring to a simmer. Add the cooked spaghetti and parsley, if using. Stir until the pasta is well-coated. Season with salt to taste.

Add the red pepper flakes Once the garlic begins to turn golden, add the pasta water and let it saute for 2 minutes. Add the spahetti and toss for a minute until the water has been absobed by the pasta and you are left with a creamy sauce. Add the parsley, toss and serve.

1/2 cup extra-virgin olive oil
Freshly ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil over high heat and then salt the water generously. Add the spaghetti and stir occasionally to prevent the pasta clumping together. Boil the pasta until it is tender but not mushy -- al dente, about 8 minutes.
  • While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt, and pepper in a large skillet and warm over low heat, stirring occasionally until the garlic softens and turns golden.
  • Drain the pasta in a colander, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well. Steps:

  • Bring 6 quarts of salted water to a boil in a large pot. Add the pasta and cook until al dente, 6 to 8 minutes. Drain the pasta in a colander, reserving 2 tablespoons of the pasta water. The reserved pasta water will help create the sauce. Do not rinse pasta with water -- you want to retain the pasta's natural starches so that the sauce will stick.

1/4 cup extra virgin olive oil
1/2 pound good quality dried spaghetti
3 garlic cloves, sliced very thinly
Pinch of crushed red pepper flakes
2 tablespoons chopped fresh parsley, more to taste (optional)

Steps:

  • Bring a large pot of very well salted water to a boil. Heat the olive oil in a sauté pan over medium heat. Start cooking the spaghetti. While it cooks, add the garlic to the pan with just enough heat so that it sizzles gently. Add the crushed red pepper flakes. When the outside edges of the garlic are just starting to brown, add 1 cup of the pasta water and a pinch of salt. Keep cooking, shaking the pan to create an emulsion, until the oil and water mixture no longer has that very harsh raw garlic flavor.
  • When the pasta is al dente, drain it and add it to the pan, along with the chopped parsley, if using, tossing to coat. Serve immediately.

1 medium yellow onion, chopped fine
3 garlic cloves, chopped fine
3 tablespoons olive oil
1 stalk fresh rosemary, chopped
1 teaspoon truffle oil (white or black)
1/4 cup grated fresh parmesan cheese, good quality

Steps:

  • Saute onion-garlic and rosemary in olive oil. Make sure onion is golden-and garlic is not burnt.
  • Boil spaghetti in 3 quarts salted water with a touch of milk in the water, as well as a tablespoon of oil.
  • When al dente, drain pasta, toss with onion, garlic and rosemary.
  • Add parmesan and toss again.
  • Drizzle the truffle oil on top of each individual serving. (Ok, now I'm drooling. Must hide this fact from guests.).
  • Garnish with fresh chopped rosemary--just a pinch.

1 lb spaghetti (good quality)
1/2 cup olive oil
3 -4 cloves garlic (depending on size of cloves)
1 tablespoon dried parsley or 2 tablespoons fresh parsley
salt and pepper
water

Steps:

  • Bring a large pot of water to a brisk boil.
  • Add salt.
  • Add the spaghetti, following directions on the box.
  • Meanwhile, heat the oil in a small pan.
  • Slice the garlic thinly and add it to the oil.
  • remove the pan from the heat when the garlic turns a pale golden color (do not brown the garlic).
  • Add the parsley, salt and pepper.
  • Reserve 1/2-3/4 cup pasta water.
  • Drain pasta & stir in the oil.
  • Add the water if you think the mixture is too dry.

  • Bring a large pot of water to a rolling boil over high heat, then salt the water generously.
