GARLIC CRAB PASTA WITH MUSHROOM AND TOMATO- REDUCED FAT
I've recently discovered that I LOVE crab. This is just a spinoff of Hey Jude's Recipe #191814. I make this lower cal/carb/fat by using Fiber Gourmet pasta and just a bit of reduced calorie margarine, but I kick up the flavor with LOTS of garlic, basil, and veggies. Fee free to add more butter if you want it richer!

Steps:
- Bring a large pot of salted water to a boil. Cook the pasta until al dente and reserve ½ cup pasta cooking water. Drain and set aside. Note: The pasta sauce takes about 30 minutes to make, so try to time it so that you drain the pasta right as it's time to throw it in the sauce.
- Heat the oil in a wide pot over medium heat. Add the shallots and cook for 3 minutes until just beginning to soften. Add the mushrooms and cook, stirring often, for 8-10 minutes until well-browned. Season with salt, pepper, and crushed red pepper.
- Add the garlic and cook for 1 minute until fragrant.
- Melt the butter into the garlic. Once melted and frothy, sprinkle the flour on top and toss to coat.
- Add half the vegetable stock and stir or whisk regularly until completely incorporated. Add the remaining stock and bring to a low boil. Reduce heat and simmer for 10 minutes. Taste and season to preferences.
- Add the crab meat to the sauce and cook for 5 minutes. Add the pea shoots and parsley and toss gently to combine. Cook for 3 minutes until the pea shoots are bright green.
- Add the pasta cooking water along with the cooked linguine and toss very gently to combine, being careful not to break up the crab too much. Cook for 1 minute and turn off the heat.
- Prior to adding the pasta to the sauce, cook the breadcrumbs. Melt the butter in a skillet over medium heat. Add the breadcrumbs and cook for 3-4 minutes, stirring regularly, until golden brown and toasted. Turn off the heat.
- Add the parsley and parmesan and toss to combine. Season with salt and pepper.
- Divide the cooked pasta between shallow bowls and sprinkle the breadcrumbs on top of each dish. Enjoy!

GARLIC MUSHROOM PASTA
My mom used to make this for me as a kid. It is easy to whip up and can be modified. Change the veggies, add some bacon, use less garlic, whatever. Sometimes I've used one egg and stirred in some margarine (or butter or olive oil) but I like it best like this. This is sized as smaller servings, almost as a side dish size.

- Stir eggs into spaghetti; allow heat from spaghetti to cook the eggs. Stir onion and mushroom mixture and 1/4 cup Parmesan cheese into spaghetti over low heat until eggs are fully cooked and cheese is melted. Garnish with additional Parmesan cheese.

Steps:
- Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat.
- Heat the olive oil in a large skillet over medium heat.
- Scatter the garlic & crushed red pepper flakes over the oil and cook, shaking the pan, until golden, about 2 minutes.
- Add as many of the mushrooms as will fit comfortably into the skillet.
- Season lightly with salt and pepper and toss in the sage.
- Add the remaining mushrooms as the mushrooms in the skillet wilt and make room.
- Cook, stirring and tossing frequently, until the mushrooms are sizzling and brown, about 10 minutes. (If the mushrooms have given off a lot of water during cooking, you'll have to wait for that liquid to boil off before the mushrooms begin to brown.).
- Stir the spaghetti into the boiling wate; return to a boil, stirring frequently.
- Cook the pasta, semi-covered, stirring occasionally, until done, about 8 minutes.
- Add the stock to the browned mushrooms, bring to a boil, and lower the heat so the sauce is at a lively simmer.
- Cook until the liquid is reduced by about half, about 5 minutes.
- If the skillet is large enough to accommodate the sauce and pasta, fish the pasta out of the boiling water with a large wire skimmer and drop it directly into the sauce in the skillet.
- If not, drain the pasta, return it to the pot, and pour in the sauce.
- Toss in the parsley and bring the sauce and pasta to a boil, stirring gently to coat the pasta with sauce.
- Check the seasoning, adding salt and peppers if necessary.
- Remove the pot from the heat, stir in the cheese, and serve immediately in warm bowls.

Steps:
- In a large frying pan, heat the olive oil. Add the garlic and chilli flakes. Cook until just pale golden, then add the tomatoes. Cook 3 mins more on a high heat until the tomatoes start to break down a little. Add the lemon juice and cook for 1-2 mins. Remove from the heat and stir in the crab to warm through - not too much or it will break up.
- Boil the pasta in a large pan of salted water following pack instructions then drain. Mix the pasta in the warm pot with the sauce, lemon zest and capers, and toss the basil through.
