I've always loved spaghetti squash as an alternative to pasta and enjoy it in the classic marinara style, but I wanted a new recipe so my family and I could enjoy it more often. The savory, salty and sour flavors combine perfectly with a hint of sweet spice. 1 medium spaghetti squash
1 teaspoon ground cumin
8 bacon strips, chopped
8 green onions, sliced
2 tablespoons butter
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
2 medium apple, peeled and chopped
1 cup apple cider or juice
2 tablespoons maple syrup
1/2 teaspoon salt
1 dash pepper
1/2 cup chopped walnuts, toasted
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 400°. Cut squash lengthwise in half; remove and discard seeds. Sprinkle with 1/2 teaspoon cumin. Place squash in a 15x10x1-in. baking pan, cut sides down. Bake until easily pierced with a fork, 35-45 minutes., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings., Add green onions, 2 tablespoons butter, garlic and pepper flakes; cook and stir over medium heat until tender, 2-3 minutes. Stir in apples, cider, syrup, salt, pepper and remaining cumin. Bring to a boil; cook until slightly thickened, 4-6 minutes., When squash is cool enough to handle, use a fork to separate strands. Add squash to skillet; cook until liquid is absorbed, 2-3 minutes. Stir in bacon, walnuts and parsley.

Creamy Butternut Squash Pasta With Sage and Walnuts image

Butternut squash gets roasted, puréed, then tossed with Parmesan to make this nutty, creamy pasta sauce. Each serving is topped with crispy fried sage leaves, a hint of lemon zest, and toasted walnuts, adding a crunchy contrast to the squash. Feel free to forgo wrestling with a giant squash and use a package of cubed precut squash instead.

2 1/2 pounds butternut squash, peeled, seeded and cut into 3/4-inch pieces
2 garlic cloves
5 tablespoons olive oil
Kosher salt and black pepper
3/4 packed cup fresh sage leaves
3/4 cup chopped walnuts
1 lemon, zested (about 1 tablespoon)
1 cup low-sodium chicken or vegetable stock, plus more as needed
1 pound short pasta, such as gemelli, casarecce or penne
1/2 cup freshly grated Parmesan, plus more for serving

Steps:

  • Heat the oven to 400 degrees. Place the squash and garlic on a sheet pan. Drizzle with 2 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon pepper. Toss well and roast until the squash is very tender, 30 to 35 minutes, tossing twice throughout. While the squash roasts, bring a large pot of water to boil.
  • Meanwhile, in a large (12-inch) skillet, heat the remaining 3 tablespoons olive oil over medium. When the oil is hot, add the sage and cook, tossing often, until the leaves begin to crisp, about 1 minute. Add the walnuts and a generous sprinkle of salt and cook, tossing often, until the sage leaves are lightly browned and crisp, 1 to 2 minutes. Using a slotted spoon, transfer the sage and nuts to a paper towel-lined plate and wipe out the skillet. Let the mixture drain for 1 minute, then add it to a small bowl with the lemon zest; toss lightly and set aside.
  • Working in batches if necessary, transfer the roasted squash and garlic to a blender or food processor, along with 1 cup stock, and blend until smooth and thick. The consistency should be somewhere between a purée and a thick soup. Add more stock as needed, if it seems too thick.
  • Transfer the puréed squash to the reserved skillet and keep warm over very low heat. Meanwhile, add the pasta to the boiling water, along with 1 tablespoon salt, and cook until al dente. Just before draining, ladle 1/2 cup pasta water into a measuring cup and set aside.
  • Drain the pasta and add it to the sauce. Toss to coat the pasta evenly, then, off the heat, add the 1/2 cup Parmesan and toss until the cheese is incorporated. Add a few tablespoons of the reserved pasta water if the sauce seems too thick. Season to taste with salt and pepper.
  • Divide the pasta among shallow bowls and sprinkle the sage, walnut and lemon zest mixture on top, and serve with extra Parmesan on the side.

1 medium (2½-to-3-pound) spaghetti squash
5 tablespoons unsalted butter, divided
15 sage leaves, divided
Kosher salt and freshly ground black pepper, to taste
½ cup walnuts, roughly chopped
1 tablespoon grated Parmesan cheese, for garnish

Steps:

  • Preheat the oven to 400º. Cut the squash in half lengthwise, and scoop out and discard the seeds. Transfer the squash to a rack-lined baking sheet, cut-sides up. Place 1 tablespoon of butter and 2 sage leaves in the hollowed-out core of each half and season with salt and pepper.
  • Bake the squash until the flesh is tender, 45 minutes to 1 hour. Let the squash cool to room temperature. Using a fork, scoop out the meat of the squash from the skins into a small bowl. Reserve the skins for plating.
  • In a large sauté pan, melt the remaining 3 tablespoons of butter over medium heat. Add the walnuts and cook until they are toasted and the butter has started to bubble, 2 to 3 minutes. Add the remaining 11 sage leaves and toast until they become fragrant but not burnt, 1 minute. Mix in the roast squash and cook until fully warmed through, 2 to 3 minutes. Season with salt and pepper, and transfer to the reserved squash skins. Garnish with the Parmesan and serve.

3 lbs spaghetti squash
3/4 teaspoon salt, DIVIDED
1/2 teaspoon black pepper, DIVIDED
5 tablespoons butter, DIVIDED
15 fresh sage leaves, DIVIDED
1/2 cup walnuts, roughly chopped
1 tablespoon parmigiano-reggiano cheese or 1 tablespoon pecorino cheese, grated

Steps:

  • Preheat the oven to 400 degrees.
  • Cut squash in half lengthwise and deseed.
  • Place the squash halves on a roasting rack and season with 1/4 teaspoon each of salt and pepper.
  • Place 1 tablespoon of butter and 2 sage leaves in the hollowed-out core of each half.
  • Bake the squash on a tray on the oven's middle rack until the flesh is just soft--about 1 hour (or longer-it all depends on your oven).
  • Remove the squash and let it cool until you can work with the flesh comfortably, about 15 minutes.
  • Using a fork, scrape the meat of the squash away from the skin, so that you get fluffy spaghetti-like strands. Reserve these and discard the skins. The squash will hold at this point up to a day ahead of time, in an air-tight container in the fridge.
  • Heat the remaining 3 tablespoons of butter in a large saucepan over medium heat.
  • When the butter has melted, add the walnuts.
  • Toast the nuts and allow the butter to bubble, about 1 minute.
  • Add the rest of the sage leaves.
  • When the leaves release their aroma and begin to crackle in the pan (about 1 minute), add the squash and stir to coat it with the flavored butter.
  • Cook for 2 minutes over medium heat until the squash is warm, stirring frequently so the flavors get inside the squash.
  • Season the rest of the salt and pepper.
  • Serve on a large plate or platter, topped with the cheese.

This is a healthy, quick and easy dish. At least once you split the spaghetti squash in half. The rosemary, sage and thyme makes this side a nice, grounding and comforting veggie. Also the sweet sauteed onions and garlic lends it lots of flavor topped with grated parmesan cheese. Servings are either a side or meal. Once you taste it you will continue on to make a meal out of it.

3 lbs spaghetti squash, sliced in half and seeds and fiber removed
1/4 cup olive oil (separated)
1 tablespoon fresh sage or 1 tablespoon fresh thyme
3 garlic cloves, fresh minced
1/2 onion, finely sliced
parmesan cheese, fresh grated to garnish
black pepper, fresh ground to garnish
nutmeg, fresh grated to taste (optional)
salt (to taste)

Steps:

  • Microwave squash cut side down for 20 minutes till soft and fibers separate.
  • Meanwhile in a frying pan heat 2 tablespoons of oil and saute onions, and garlic 5 minutes add herbs cook for 2 minutes.
  • Add squash and toss.
  • Drizzle with remaining garlic and top with cheese and season with salt, nutmeg and pepper to taste.
  • Serve and enjoy.
