GRILLED GINGER SOY HALIBUT
This recipe belongs to a fellow member, Sher Bird. She had posted it on another cooking web-site we both belonged to a couple of years ago. - 1. In small saucepan, combine all ingredients, except the halibut. Over medium heat, mix until sugar is dissolved.
- 2. Put Halibut in a non metalic pan or ziplock bag, pour marinade over fish. Marinate in fridge for about 30 mins. I make a double batch of marinade and seperate, one batch for marinating and one batch for basting.
- 3. Oil grill grate and preheat grill. Place halibut steaks on grill and cook on each side for about 5 minutes, basting with marinade while fish is cooking.
- 4. Grill until done, halibut should be opaque through to the middle and flake easily with a fork. Discard extra marinade that has had contact with the raw fish.
- 5. Notes: Instead of mincing the garlic and ginger, I like to grate it. Seems the grating brings more flavor. I never add the salt I have never added the herbs I have made this with the honey or the brown sugar, very little taste difference. Actually, I used Splenda brown sugar. I have used the grill, oven broiler and grill pan on top of the stove to cook the fish for this recipe. They all work fine.
MAPLE GRILLED HALIBUT STEAKS
This also works well with other fish steaks. Prepare the soy sauce mixture well in advance, it needs time to cool to room temperature. Because of the sodium content in the soy sauce do not use any extra salt, or use low-sodium soy sauce.

Steps:
- Place butter, maple syrup, garlic, lemon juice, soy sauce, ginger (if using) and black pepper in a saucepan; heat until the butter has melted (about 2 minutes) stirring constantly, then cool to room temperature.
- Brush each and both sides of the steaks VERY generously with the soy sauce mixture, reserving some to brush on the fish while grilling.
- Place into a shallow glass dish, cover and refrigerate for up to 4 hours.
- Lightly oil the grill grate.
- Cook the fish for about 5 minutes per side brushing with remaining sauce (discard any remaining sauce).

- In a small bowl, combine the first seven ingredients. Place each halibut steak on a double thickness of heavy-duty foil (about 18 in. x 12 in.); top with soy sauce mixture, onion, lemon and butter. Steps:
- Whisk together the wine, lemon juice, olive oil and rosemary in a small shallow baking dish. Add the halibut and turn to coat. Marinate in the refrigerator for 1 hour, turning once. Preheat grill. Remove fish from marinade and season with salt and pepper to taste. Grill the steaks for 3 to 4 minutes on each side or to desired doneness.

- Preheat oven to 450 degrees F (230 degrees C). Lightly grease a shallow baking dish.

PAN-SEARED MARINATED HALIBUT FILLETS

- In a large sealable plastic bag, combine the 6 tablespoons olive oil, garlic, basil, salt, pepper and lemon juice. Add fish, seal bag, and turn to coat. Refrigerate for at least 30 minutes or up to 2 hours.
- In a large flat skillet (do not use a ridged pan), pour light olive oil or vegetable oil, tilting pan to spread evenly. Warm over high heat until smoking, then add fish fillets. Brush top and sides with marinade. Cook until seared, about 3 minutes; turn and sear other side, about 3 more minutes. Brush top and sides with marinade again. Reduce heat to medium. Cook until centers of fillets are just opaque, 2 to 4 minutes more on each side depending on thickness, brushing with marinade as before. Garnish with parsley, if desired, and serve.

- Season halibut with salt and pepper. Heat oil in a large skillet, preferably cast iron, over medium-high heat until beginning to smoke. Cook halibut until golden brown, 6-8 minutes. Turn and cook until other side of fish is golden brown, about 4 minutes longer.

- Preheat the oven to 400 degrees F (200 degrees C).
