I dreamed up this pizza for a New Year's Eve party at church. My craving for corn bread and black bean and corn salsa was the inspiration.-Caroline Grooms, Dickinson, North Dakota

1-1/4 cups all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon cayenne pepper
1 teaspoon chili powder
1/2 teaspoon salt
1 cup milk
1/4 cup vegetable oil
1 large egg
3/4 cup shredded cheddar cheese
3/4 cup shredded Monterey Jack cheese
TOPPING:
1-1/2 pounds ground beef
2/3 cup water
2 envelopes taco seasoning, divided
2 cups sour cream
1-3/4 cups (10 ounces each) shredded cheddar cheese
1-3/4 cups shredded Monterey Jack cheese
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 cup salsa

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder, cayenne, chili powder and salt. Combine the milk, oil and egg; stir into dry ingredients just until moistened. Stir in the cheeses. , Spread into a greased 15x10x1-in. baking pan. Bake at 400° for 10-12 minutes or until a toothpick comes out clean., In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in water and one envelope of taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Set aside., In a small bowl, combine the sour cream and remaining taco seasoning; mix well. Spread over crust. Sprinkle with the beef mixture and half of the cheeses. , Combine the corn, beans and salsa; spoon over cheese. Sprinkle with remaining cheese. Broil 5-10 minutes or until cheese is melted.

This southwest pizza with corn and black beans is an easy weeknight pizza that everyone loves. With a sweet and spicy homemade sauce, it's baked in a hot oven until the crust is golden, then drizzled with sour cream. It's simple to make, and will have dinner on the table in 30 minutes!

1 cup fire roasted tomatoes
2 tablespoons honey
1 ½ teaspoons sriracha (or to taste)
½ teaspoon balsamic vinegar
2 12-inch pizza crusts
½ cup frozen corn (thawed)
½ cup cooked black beans (rinsed)
¼ cup thinly sliced red onion
1 cup grated mozzarella
Sour cream and chopped cilantro (to serve)

Steps:

  • Add the pizza sauce ingredients to a blender and blend on high until smooth. Pour the sauce into a small pot over medium-high heat and bring the sauce to a boil. Reduce the heat, place the lid halfway on (to prevent splatters), and simmer the sauce for 10-15 minutes, stirring frequently, until it has thickened.
  • Preheat your oven to 450 degrees Fahrenheit. Form the pizza dough into two crusts and place them on parchment paper-lined baking sheets
  • Divide the pizza sauce between the 2 pizza doughs, spreading it almost to the edges.
  • Top the pizzas with corn, black beans, red onion, and mozzarella cheese.
  • Bake the pizzas for 10-12 minutes, or until the crust is golden. Serve with some minced cilantro and sour cream on the side.

8 Anaheim chiles
4 jalapenos
8 ounces bacon, finely diced
8 ounces chorizo, crumbled
2 tablespoons minced garlic
1 large onion, diced
One 28-ounce can diced tomatoes and green chiles, such as Rotel
2 pounds processed cheese, such as Velveeta, cubed
8 ounces pepper jack cheese, shredded
Two 12-ounce cans evaporated milk
2 tablespoons chopped fresh cilantro
Tortilla chips, for serving

Steps:

  • To roast the Anaheim chiles and jalapenos: Roast the chiles by using metal tongs to hold them one-by-one over the flame of your stovetop until the skin is totally charred. (If you don't have a gas stove, you can use an outdoor grill OR place them on a baking sheet directly under your oven's broiler.) When totally blackened, place the chiles in a large resealable plastic bag and seal the bag to allow them to sweat for a good 20 minutes. Then use a knife to scrape off most of the blackened skin. Stem, seed and dice the chiles.
  • In large pot over medium heat, add the bacon and chorizo. Cook until the fat has been rendered out, 10 to 15 minutes.
  • Add the garlic and onion to a food processor and pulse until almost a paste.
  • Drain off most of the fat from the bacon and chorizo, then add the garlic-onion puree to the pot and cook for 3 to 4 minutes.
  • Pour the diced tomatoes and green chiles into the food processor and pulse slightly. Add to the pot, juice and all. Fold in the reserved diced chiles. Cook for 4 minutes. Slowly whisk in both cheeses and the evaporated milk. Cook for an additional 5 minutes to heat through, making sure to not scorch the bottom of the pot. Garnish with the chopped cilantro and eat from the pot with tortilla chips.

1 (10 ounce) package prebaked thin crust pizza crusts
2 cups cooked chicken breasts, shredded
1 teaspoon vegetable oil
1 small red bell pepper
1 small green bell pepper
1 small red onion
3 tablespoons southwest seasoning, mix (could substiute taco seasoning)
2/3 cup prepared monterey jack cheese, salsa con queso dip
1/2 cup shredded Mexican blend cheese

Steps:

  • Preheat oven to 450 degrees.
  • Place pizza crust top side down on a baking sheet, bake 4-5 minutes or until crust is golden brown and crisp.
  • Remove from oven, and turn crust top side up.
  • Shred chicken, and add oil to heat over medium heat 1-3 minutes or until shimmering.
  • Cut bell peppers and onion into thin slices.
  • Add bell peppers, onion, and seasoning mix to a mixing bowl, toss to coat.
  • Add vegetable mixture to skillet, cook 2-3 minutes or until tender.
  • Add chicken, cook 1 minute, or until heated through. Remove skillet from heat.
  • Spread salsa con queso dip over crust to within 1 inch of edges.
  • Top evenly with chicken mixture, sprinkle with cheese.
  • Bake 7-8 minutes or until cheese is melted.
  • Remove from oven, and cut into wedges.

1 (13 inch) uncooked pizza crusts
8 ounces shredded monterey jack cheese
1/4 cup sour cream
1/4 cup diced tomato, drained
1/4 cup sliced jalapeno pepper
1/4 teaspoon black peppercorns, crushed
extra virgin olive oil

Steps:

  • dont forget to add 1/2 cups Southwestern oil sauce.
  • Top dough crust with oil sauce, cheese, dollops of sour cream, tomato, jalapenos, and pepper.
  • Drizzle with oil.
  • Bake in preheated 500° F oven on pizza stone for 8-10 minutes or until crust is golden brown and cheese is bubbly.
  • Remove from oven and cool on a wire rack for 2-3 minutes before cutting into wedges and serving.

This pizza was created when I used my leftovers as the toppings for this great pizza! It turned out to be a total hit. Now, I make tons of variations, so, please feel free to play around with this recipe and add your own spin on it! Just remember to keep it healthy and fun! Enjoy! 1 (1 lb) whole wheat pizza dough (I get mine from Trader Joe's)
1/2 cup organic spaghetti sauce (any sauce of your choice)
1/2 lb ground turkey (cooked and seasoned with taco seasoning)
1/2 cup organic black beans (TJ's)
1/4 cup frozen corn (I use organic frozen corn from TJ's)
1/4 cup frozen bell peppers (red, green, and yellow...from TJ's again)
1 -2 cup shredded colby-monterey jack cheese (use what you have or what you prefer.)

Steps:

  • Preheat oven to 450 degrees (or according to your dough directions).
  • Follow directions for dough and spread out on a parchment lined baking sheet (the parchment helps avoid sticking). I use a 9x15 baking sheet because it gives a great edge/lip for the crust, and holds all the yummy toppings on the pizza with no spills, but whatever you have will be fine. I'm sure you could do this on a stone, as well.
  • Once dough is prepared, Bake dough in the oven for 5-8 minutes (or until dough is starting to brown). This helps make sure everything cooks through :).
  • Remove dough from the oven, and spread a thin layer of sauce on the pizza, leaving 1/2 of an inch space all around for crust allowance.
  • Evenly spread a layer of cooked ground turkey meat (seasoned with taco seasoning), frozen veggies and black beans. *Also, you could cook the veggies and beans in with the meat to add extra flavor!
  • Top with as much shredded cheese as you like.
  • Place pizza in oven for 10-15 minutes, or until bottom and crust are golden brown, and cheese is melted. *Time may vary depending on your oven and type of dough you use. Keep a watchful eye so it doesn't over bake =).
  • Other yummy toppings for this pizza are: Spinach, mushrooms, olives, goat cheese (so good!), tomatoes -- the possibilities are endless, really. Don't be afraid to add new things to this recipe. It's pizza! Everyone LOVES pizza, right?!

Our family loves Mexican food and pizza, so I combined the two. It's easy to cook the pepper and onion in the microwave. Salsa, prepared chicken and other convenience items hurry along the rest of the recipe. The final result is fantastic!

1 medium onion, julienned
1 medium green pepper, julienned
1/4 cup water
1 tube (13.8 ounces) refrigerated pizza crust
1-1/4 cups salsa
2 packages (6 ounces each) ready-to-use Southwestern chicken strips
2 cups shredded Mexican cheese blend
1/4 teaspoon garlic powder
1/4 teaspoon dried cilantro flakes

Steps:

  • In a microwave-safe bowl, combine the onion, green pepper and water. Cover and microwave on high for 2-4 minutes or until vegetables are crisp-tender; drain well., Unroll pizza crust onto a greased baking sheet, stretching gently to form a 14x10-in. rectangle. Spread with salsa. Top with chicken and onion mixture. Sprinkle with cheese, garlic powder and cilantro. , Bake at 400° for 15-20 minutes or until crust is golden and cheese is melted. Cut into squares.
