The perfect combo of smoky southwest ingredients without being too spicy, this chicken marinade makes kids and adults alike happy! Use the chicken for taco and burrito filling, salads, kabobs, quesadillas, and more.

Steps:
- Add the oil, vinegar, cilantro/parsley, chili powder, garlic powder, dried oregano, ground cumin, salt and pepper to a gallon-sized freezer bag, seal, and shake. Either seal and refrigerate until ready to use, OR add 1.5-2 pounds chicken to the bag, seal, and squish around to make sure the chicken is covered in marinade. (Freezing instructions begin here.)
- Place the bag in the refrigerator for at least 2 hours and up to 24 hours.
- Cook the chicken however you'd like (grill, slow cook, pressure cook, or bake). See tips below in the Notes.

EASY SOUTHWESTERN GRILLED CHICKEN RUB AND MARINADE
This one comes from Morton's salt and is a fine rub for chicken on the gas grill or for over the campfire when you're camping. You could also use it with equal benefit for baked chicken in the oven. The cooking time listed accounts for marinating time in the refrigerator. Enjoy!

Steps:
- Blend all ingredients.
- Rub this blend on to individual chicken pieces and allow to marinate in the refrigerator for one hour prior to grilling.
- NOTE: This blend can also be converted to a paste by whisking in 3 tablespoons of olive oil per every tablespoon of rub blend. Use the paste on steaks or roasts.
SOUTHWESTERN CHICKEN WITH MANGO-PEACH SALSA
Steps:
- Set up grill for direct grilling over medium-high heat. Oil grate when ready to start cooking.
- Rinse and pat dry chicken breast; set aside.
- In a small bowl, mix together All-Purpose Rub, cumin, and cayenne. Gently pat onto all sides of chicken breasts using all the rub mix; set aside while preparing salsa.
- For salsa: In a medium bowl, toss to combine all ingredients. NOTE: It is easier to dice frozen fruit while it is still frozen. Cover and set aside while chicken cooks.
- Place chicken on hot oiled grill. Grill chicken 5 to 6 minutes per side or until done.
- INDOOR: Preheat oven to 350 degrees F. Prepare chicken breasts, as directed. Roast chicken breasts in preheated oven for 35 to 40 minutes.
- Serve chicken hot with salsa.
- Combine all ingredients. Store in air-tight container in cool dry place or freezer.

- Working with one chicken breast at a time, place the chicken between 2 pieces of plastic wrap or parchment paper. Gently pound with a meat mallet to 1/2 inch thick then transfer to a large bowl.
- Combine the yogurt, lemon zest, lemon juice, scallion whites, garlic, olive oil, 2 teaspoons salt and a few grinds of black pepper to a food processor and process until smooth. Pour the marinade over the chicken. Turn the chicken a few times to coat then submerge in the marinade. Cover the bowl with a clean dish towel and refrigerate for at least 30 minutes but no more than 3 hours.
- Meanwhile, heat a grill to medium.
- Remove the chicken from the marinade to a large platter, letting any excess marinade drip back into the bowl. Season the chicken with 1/2 teaspoon salt and a few grinds of black pepper. Grill, covered, flipping once halfway through, until a digital thermometer registers 165 degrees F, 4 to 5 minutes per side. Let rest 5 minutes before serving.
- Thinly slice the scallion greens on a bias and sprinkle over the chicken. Refrigerate in an airtight container for up to 5 days.
SOUTHWESTERN CHICKEN
Steps:
- Flatten chicken breasts by placing them between plastic wrap and pounding with mallet or bottle. Rub garlic and juice of lime over flattened breasts. Place on grill or in cast iron pan and cook for 3 minutes on each side, or until cooked through. Top with cheese and cover to melt. Serve topped with salsa and sour cream.

- For marinade: Combine wine, oil, tarragon & salt. Rinse chicken; pat dry with paper towels. Place chicken in plastic bag set into a shallow dish. Add marinade; seal bag. Turn chicken to coat well. Chill for 2 to 24 hours, turning bag occasionally.
- Meanwhile, combine avocados, tomato, garlic, chili peppers (I usually used the canned ones), onions, cilantro, honey & lemon juice. Toss well to mix. Cover & chill up to 2 hours.
- Remove chicken from bag, reserving marinade. Grill chicken on an uncovered grill directly over medium coals for 5 minute Turn chicken & brush with marinade; grill for 7 to 10 minutes more or until chicken is tender & no longer pink. Serve with avocado mixture.
- To grill by indirect heat: Arrange preheated coals around a drip pan in a covered grill. Test for medium heat above the pan. Place chicken on grill over drip pan. Cover & grill for 15 to 18 minutes or until chicken is tender & no longer pink, brushing with marinade up to the last 5 minutes of grilling.

- Split chicken breasts.
- Place tomatoes, onions, pepper, garlic, cilantro, soy sauce, oil, lime juice and black pepper in food processor and process for 30 seconds.
- Pour marinade over the chicken breasts and marinate, covered and refrigerated for at least 4 hours, turning frequently.
- Remove chicken from the marinade and grill over medium coals for 20 to 30 minutes, turning frequently and basting with marinade.
- Sprinkle the breasts with parsley before serving.
- Serve with black beans.

This is a recipe I invented to satisfy our craving for a similar salad in a local restaurant. My family loves it.

Steps:
- Season the chicken breasts with Essence, drizzle with olive oil and grill or bake until done.
- You can also substitute fajita seasoned sliced chicken breasts strips here.
- Slice the chicken breasts into thin strips.
- Toss the lettuce with your other salad"stuff".
- Slice the corn tortillas into thin strips and deep fry until crisp.
- If you stop short of crisp, the tortillas will be tough.
- Test one and if this is the case, just refry til crisp.
- Drain on paper towels.
- Divide the tortillas into four equal portions and place on individual plates (I use deep pasta bowels).
- Place the lettuce mix on top of the tortilla strips and put an equal portion of chicken breast on each.
- Mix together the Ranch Dressing and salsa 1:1.
- Pour this over each salad and sprinkle cheese on top.

- Start by trimming off any fat or tendons from your chicken breasts. Lay your chicken breast in a Ziplock bag or between two sheets of plastic wrap. Using a meat tenderizer, rolling pin, or the bottom of a mason jar, give the chicken a few good whacks on the thickest part of the chicken breast.
- In a small bowl combine avocado oil, 3 Tbsp lime juice, garlic, brown sugar, chili powder, cumin, cayenne (optional), chili in adobo sauce. Mix with fork until all ingredients are combined.
- Preheat the grill. Scrape and clean the grill if necessary. Spray the grill with non-stick cooking oil or vegetable oil before grilling. Using thongs, take the chicken out of the marinade. Salt and pepper the chicken breast. Lay the chicken smooth side down. Close the lid and let the chicken cook at approx. 375 degrees for 4-5 minutes.
