SOUTHWESTERN RICE
I created this colorful side dish after eating something similar at a restaurant. It complements any Tex-Mex meal wonderfully. Sometimes I add cubes of grilled chicken breast to the rice to make it a meal in itself. -Michelle Dennis, Clarks Hill, Indiana

Steps:
- In a large nonstick skillet, heat oil over medium-high heat; saute pepper and onion 3 minutes. Add garlic; cook and stir 1 minute., Stir in rice, spices and broth; bring to a boil. Reduce heat; simmer, covered, until rice is tender, about 15 minutes. Stir in remaining ingredients; cook, covered, until heated through.

MEXICAN FRIED RICE
Steps:
- Add two tablespoons of the olive oil to a large skillet over medium-high heat.
- When the oil is hot, add the onion, and sauté for 3 to 4 minutes or until soft.
- Add the tomatoes, corn, and green chiles, and cook for 2 to 3 minutes or until the liquid has cooked out.
- Add the seasonings and garlic, and cook for 1 to 2 minutes or until the garlic begins to brown.
- Turn the heat down to medium, add the remaining olive oil and the cooked rice.
- Cook for 4 to 5 minutes, stirring frequently to blend the rice and seasonings.
- Stir in the green onions, and remove the pan from the heat.
- Top with the remaining green onions.
TEX-MEX FRIED RICE

- Heat the oil in a large skillet and brown the sausage meat, breaking it up into small pieces. When starting to brown, add the frozen corn (no need to thaw), onions, bell peppers and jalapenos. Season with the chili powder, salt, red pepper flakes and plenty of black pepper. Cook until the vegetables are crisp-tender.
- Add the rice and stir-fry until heated through and coated with the vegetable mixture. Add the Worcestershire sauce, hot sauce and lime zest and juice. Stir-fry until the rice is just starting to brown. Add the scallions and stir well so that they are thoroughly mixed in. Serve and garnish with cilantro.
SOUTHWESTERN FRIED RICE
After I made this I wasn't sure why it was called a "fried rice" but I guess if you look at it from a spicy southwestern way. Even though it's not fried it's a great dish. Very fast and easy to make!!

- In a large nonstick skillet, sauté the chicken, corn green pepper and onion in oil until chicken juices run clear.
- Stir in the broth, salsa, chili powder and cayenne; bring to a boil.
- Add the rice.
- Cover and remove from heat; let stand for 5 minutes.
- Fluff with a fork.
- Sprinkle with cheese.
- Cover and let stand for 2-3 minutes for until cheese is melted.

- Let the oil get hot in a large skillet over medium heat.
- Add in the onion; stir/saute 5 minutes or until softened.
- Add in the rice, tomatoes, lemon juice, Worcestershire, Tabasco, salt, and pepper; stir-fry for 5 minutes, breaking up any clumps of rice.
- Stir in black-eyed peas and parsley; cook, stirring, until the peas are hot.
