CHILI-RUBBED SKIRT STEAK
Skirt steak is the perfect steak for fajitas and is also delicious on its own or coated with a spice rub. Thinly slice it on the diagonal before serving.

- Heat broiler with rack 4 inches from heat. In a small bowl, combine chili powder, coriander, sugar, oregano, 1 tablespoon coarse salt, and 1/2 teaspoon pepper. Coat steaks evenly on both sides with oil, then spice mixture, patting to adhere.
- Place half the steaks on a rimmed baking sheet or broiler pan. Broil, without turning, until medium-rare, 5 to 8 minutes, depending on thickness. Transfer to a large platter, and cover with aluminum foil; let rest 10 minutes. Meanwhile, broil remaining steaks; transfer to a large plate, let cool to room temperature, then cover and refrigerate to use later for Steak Sandwich with Peppers.
- Remove foil and divide steaks among four serving plates. Drizzle with any accumulated juices, and serve with Romaine-Heart Salad.

SKIRT STEAK FAJITAS

- Cut the skirt steak into 3 equal size pieces and place in a gallon-sized resealable bag.
- Combine the olive oil, lime juice, soy sauce, salt, chile powder and cumin in a bowl. Reserve about 1/4 cup marinade in a squeeze bottle for later use, then pour the rest into the bag with the steaks. Seal the bag and press out all the air, making sure all sides of the steaks are evenly coated. Refrigerate for at least 30 minutes.
- Remove the steaks from the bag and shake off any excess marinade. Place on a wire rack-lined baking sheet and return to the fridge, uncovered, for another 2 hours. (This will make sure the steaks get a beautiful rich color when seared.)
- Heat a 12-inch cast-iron skillet over medium-high heat. Add 1 tablespoon canola oil. Give the steaks a generous sprinkle of salt, then put in the hot skillet. Sear until a crust has developed, 2 to 3 minutes per side. Remove to a cutting board. Without cleaning the skillet, add the remaining tablespoon canola oil, followed by the peppers and onions, and cook until slightly softened, 5 to 6 minutes.
- Meanwhile, slice each steak in half with the grain. Now turn the steaks 90 degrees and slice against the grain into 1/4-inch strips. When the peppers and onions are almost finished cooking, add the steak to the hot skillet for a final sizzle and season with salt and pepper. Squirt the reserved marinade into the hot skillet to create a steamy sizzle. Serve with the tortillas and any toppings you wish.
SOUTHWESTERN SKIRT STEAK WITH CHEESE GRITS

- Preheat the oven to 425 degrees F. Toss the poblanos and tomatoes with 1 tablespoon olive oil in a large bowl; season with 1/4 teaspoon salt and a few grinds of pepper. Spread on a parchment-lined baking sheet. Roast until tender and lightly browned in spots, about 25 minutes; set aside.
- Meanwhile, bring 3 1/2 cups salted water to a boil in a medium saucepan. Whisk in the grits, then reduce the heat to a gentle simmer; cook, whisking constantly, until thickened, 5 to 7 minutes. Whisk in the cheese, butter and 1/2 teaspoon salt until smooth. Cover and set aside.
- Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Season the steak with salt, pepper and the chili powder. Add to the skillet and cook until browned, 3 to 4 minutes per side for medium rare. Transfer to a cutting board; let rest 5 minutes.
- Toss the vegetables with the lime juice and cilantro. Slice the steak against the grain. Serve with the vegetables, grits and lime wedges.
SOUTHWESTERN CHILI-RUBBED SKIRT STEAK

- In a small bowl, combine chili powder, cumin, oregano, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Sprinkle mixture over steak; drizzle with oil. Let stand, turning to coat evenly with oil halfway through, about 10 minutes.
- Heat grill to high; lightly oil grates. Place steak on grill (fold thin end over so steak is an even thickness); cover. Cook, turning once, until meat is desired doneness, 4 to 6 minutes for medium-rare.

CHILLI-RUBBED SKIRT STEAK SANDWICHES WITH PEPPERS AND SALAD
This was conceived out of necessity! We had this on the menu but not all the ingredients we had ordered had arrived. So we combined a few different recipes and a wonderful feeding fest was had by all. Going to the grocery store to pick up the items is not an option, unless you want to shop for approximately 100 people retail. Am posting the salad with which we served the sandwiches.

- SKIRT STEAK:.
- Heat broiler with rack 6" from heat. (Or if you choose, grill them.).
- In a small bowl, combine chili powder, coriander, sugar, minced garlic, oregano, salt, black pepper and crushed red pepper flakes.

- SALAD AND THE FIXINGS:.
- Make dressing: In a medium bowl, place sour cream, mayonnaise, lemon juice, poppy seeds and chili powder; season with salt and pepper. Whisk to combine. (Use a tight fitting-lid jar and combine all ingredients by shaking vigorously - WITH TOP ON! Then keep cool in refrigerator).
- Remove dark outer leaves from each head of romaine, leaving the heart; place leaves in plastic bag lined with paper towels, and refrigerate for future use.
- Slice hearts in half lengthwise. When ready, place one half on each plate; top with dressing. Sprinkle with scallions and serve with sandwiches.
- STEAK SANDWICHES WITH PEPPERS:.
- Preheat broiler with rack 6" from heat.
- In a large skillet, heat oil over medium-hi.
- Add onion and peppers; cook, stirring often, until softened and beginning to char, 10 minutes.
- Season with salt and pepper.
- Remove from heat; stir in vinegar and steak.
- Place bottom halves of rolls on a large rimmed baking sheet; dividing evenly, top with meat mixture, then cheese slices.
- Broil until cheese has melted, about 2 minutes.
- Remove from oven; transfer to a cutting board.
- Assemble the salad and serve with sandwiches sliced in half.

SOUTHWESTERN COBB SALAD WITH CHILI-RUBBED STEAK
Steps:
- For the dressing: Smash the garlic cloves, sprinkle with the salt, and, with the flat side of a large knife, mash and smear the mixture into a coarse paste. Scrape the paste into a small bowl. Add the mayonnaise, buttermilk, hot sauce, cilantro, scallion, and orange zest. Whisk well to make a creamy dressing. Set aside.
- For the steak: Position a rack and broiler pan about 6-inches from the heat element and preheat the broiler to high. Season steak with salt to taste. Stir the chili powder into the oil in a small bowl. Rub the spiced oil on both sides of the steak. Carefully lay the steak on the hot pan and broil, turning once, 8 to 10 minutes per side for medium-rare. Transfer the steak to a cutting board and let rest 5 minutes before cutting into bite-size cubes.
- For salad: Halve, seed, peel, and dice the avocado. Put the romaine into a large salad bowl. Arrange the steak, avocado, tomatoes, orange, jicama, and cheese over the lettuce in wide stripes and season with salt and pepper, to taste.
- Pour about 3 tablespoons of dressing over the salad and toss well. Serve the salad with warm corn or flour tortillas, if desired.
