2 cups chopped sweet onions
2 tablespoons canola oil
1/2 pound fresh mushrooms, sliced
1 large green pepper, chopped
1 large sweet yellow pepper, chopped
1 large sweet red pepper, chopped
3 garlic cloves, minced
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
2 tablespoons brown sugar
2 to 3 teaspoons chili powder
2 teaspoons ground cumin
Dash hot pepper sauce

Steps:

  • In a Dutch oven or soup kettle, saute onions in oil for 5 minutes. Add mushrooms, peppers and garlic; saute for 5-6 minutes or until vegetables are tender. Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until heated through.

1 tablespoon olive oil
1 onion, chopped
2 red bell pepper, seeded and chopped
1 jalapeno pepper, seeded and minced
10 fresh mushrooms, quartered
6 roma (plum) tomatoes, diced
1 cup fresh corn kernels
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 tablespoon chili powder
2 (15 ounce) cans black beans, drained and rinsed
1 ½ cups chicken broth or vegetable broth
1 teaspoon salt

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute the onion, red bell peppers, jalapeno, mushrooms, tomatoes and corn for 10 minutes or until the onions are translucent. Season with black pepper, cumin, and chili powder. Stir in the black beans, chicken or vegetable broth, and salt. Bring to a boil.
  • Reduce heat to medium low. Remove 1 1/2 cups of the soup to food processor or blender; puree and stir the bean mixture back into the soup. Serve hot by itself or over rice.

1 tablespoon canola oil
1 medium yellow onion, diced
1 tablespoon chopped garlic
1 (28-ounce) can crushed tomatoes
1/2 pound cubed leftover pot roast from Pot Roast with Roasted Root Vegetables, recipe follows
1 (15-ounce) can black beans, drained
1 1/2 tablespoons chili powder
2 cups water
Salt and freshly ground black pepper
1/4 cup shredded Monterey jack cheese
1 1/2 pounds beef bottom round roast
2 teaspoons salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons all-purpose flour
2 tablespoons canola oil
2 carrots, cut into 2-inch pieces
2 stalks celery
1 medium yellow onion
1 (15-ounce) can beef broth
1 cup water
1 tablespoon minced fresh garlic
2 tablespoons Worcestershire sauce
4 sprigs fresh thyme
2 carrots, cut into 3-inch pieces
2 russet potatoes, cut into 1-inch cubes
1/2 pound turnips, cut into wedges
2 tablespoons canola oil
1 teaspoon each fresh rosemary and fresh thyme leaves
1 red onion, sliced

Steps:

  • Heat a large saucepan over medium heat and add the oil, diced onion and garlic and saute until the onions are golden, about 5 minutes. Add the tomatoes, pot roast, black beans, chili powder, and 2 cups water. Lower the heat and simmer for 30 minutes. Season with salt and pepper, to taste. Ladle the chili into serving bowls and sprinkle each bowl with 1 tablespoon of cheese. Serve hot.
  • For Pot Roast:
  • Season the beef with salt and pepper and lightly coat with flour. Heat the canola oil in a large skillet on medium-high heat and brown the meat on all sides. Remove to a platter and set aside. Arrange the carrots, celery and onion in bottom of slow cooker and top with the seared beef. Add the broth, water, garlic, Worcestershire sauce, and thyme, and set the cooker on low for 8 hours. When finished, remove the meat to a serving platter. Let the vegetables and broth cool for about 5 minutes, then add to a blender. Slowly blend until smooth and transfer to a serving bowl. Serve the gravy with the pot roast and roasted root vegetables.
  • For Roasted Root Vegetables:
  • One hour before the pot roast is done cooking, preheat the oven to 400 degrees F. Add all the vegetables to a large bowl and add the canola oil, rosemary, thyme, and onion. Season with salt and pepper, to taste, and arrange on a sheet tray. Roast for 30 minutes, then toss and roast another 30 minutes. Arrange on a serving platter and serve.

1 tablespoon olive oil
1 tablespoon garlic, minced
2 white onions, chopped
2 medium zucchini, diced
2 teaspoons ground cumin
2 teaspoons chili powder
2 1/2 teaspoons chipotle chiles in adobo, chopped
1 teaspoon kosher salt
5 cups vegetable broth (or chicken broth)
2 cups corn kernels (frozen, canned or off the cob)
1 (15 ounce) can black beans, rinsed
1 (14 1/2 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
2 tablespoons minced cilantro
light sour cream
sliced green onions with top

Steps:

  • Heat oil in 3 quart non-aluminum pot over medium high heat. Add onions, zucchini, cumin, chili powder, the chipotle puree and salt. Stir well and cook until softened, stirring often, about 7-10 minutes.
  • Add broth, corn, beans, tomatoes and tomato paste. Heat to boil, reduce heat; simmer, partially covered, stirring occasionally, 30 minutes. Simmer, uncovered, to reduce slightly, about 15 minutes.
  • Add water if chile is too thick.
  • Top with cilantro. Pass sour cream and sliced green onions separtely.

Southwest Chicken Soup is made with black beans, corn, and cream cheese! This soup is even better than Chilis Southwest Chicken soup and all you have to do is throw everything in the Crockpot and let it go!

15.5 ounces black beans (drained and rinsed)
15.25 ounces corn (undrained)
14.5 ounces diced tomatoes (undrained)
14.5 ounces chicken broth
4 ounces diced green chilies (undrained)
1 ounce dry ranch seasoning
1 1/2 teaspoon cumin
1 Tablespoon chili powder
1/2 cup diced onion
2 boneless, skinless chicken breast (about 2-3 cups)
8 ounces cream cheese (one brick) (room temperature)

Steps:

  • Add all ingredients EXEPT cream cheese to slow cooker. Stir. If you're using uncooked chicken breast go ahead and add them right to the slow cooker, or add cooked shredded chicken.
  • Cook for 4 hours on high, or 6 hours on low. Remove chicken breasts and shred if needed. Add shredded chicken back to the soup.
  • Add cream cheese. Stir until cream cheese is melted
  • Add all ingredients EXEPT cream cheese to pressure cooker. Stir. If you're using whole, uncooked chicken breasts add them.
  • Cook. Place lid on the pressure cooker. Close pressure releaser valve. Set to high pressure for 8 minutes.
  • Open valve to quick release the pressure. Remove chicken breast and shred with forks, or see how to shred chicken using a mixer. Add chicken back to the soup.
  • Add cream cheese. Stir until melted and mixed through.
  • Add all ingredients EXEPT cream cheese to a stockpot or large pan. Stir. If you're using an uncooked chicken breast add it to the pot.
  • Bring ingredients to a boil, reduce heat to a simmer. Cook for 15 minutes, or until the chicken is no longer pink. Cooked chicken should be 165 degrees.
  • Remove chicken from soup and shred. Add it back to the soup. Add cream cheese and stir to incorporate.

1 tablespoon jalapeno pepper, diced

  • In a large pot, add ground chuck and onions. Brown meat and drain.
  • Add taco seasoning and stir.
  • Reduce heat to medium-low. Add drained corn, undrained black beans, tomato soup, water, and jalapenos; stir. Cook until hot.
  • Add 1/2 cup sour cream and 4 oz. shredded cheddar cheese. Mix well.

Southwestern Black Bean Jerky Chili image

I had this chili on my recent trip to Arizona and it is out of this world delicious. Chef Burke Perry at the Westin Kierland Resort and Spa in Scottsdale, Arizona, was kind enough to share the recipe with me. This makes a lot but I'm sure you can freeze it or feel free to reduce the amounts.

1 (96 ounce) can black beans or 3 cups uncooked dried black beans
3 lbs raw ground beef
1 lb beef jerky, shredded
2 large yellow onions, diced
1/2 cup fresh garlic, chopped
8 small green bell peppers, diced
2 chipotle peppers, from can chopped (note very spicy)
2 cups chili sauce, in can
2 cups tomato paste
2 quarts beef stock or 2 quarts chicken stock
1 tablespoon mild chili powder
1 tablespoon cumin
1/2 tablespoon ground black pepper
kosher salt, to taste (because you get saltiness from the beef jerky)
1 cup fresh cilantro, chopped
2 cups smoked mozzarella cheese or 2 cups monterey jack cheese, shredded

Steps:

  • Brown ground beef in large skillet or dutch oven.
  • Drain off fat from ground beef.
  • Return beef to same pan and add diced onions.
  • Saute for 2 minutes on medium heat.
  • Add garlic, jerky and green bell peppers.
  • Carmelize vegetables.
  • Add tomato paste and deglaze with beef or chicken stock.
  • Add chili sauce and then remaining ingredients except for the cilantro.
  • Simmer on medium low heat for one hour or until all seasonings are fully incorporated into the chili.
  • Season chili to taste at the end and take off the heat and add the fresh chopped cilantro.
  • You want to try to keep the cilantro as green as possible.
  • Serve the chili with shredded smoked mozzarella cheese or Monterey Jack.
  • Note: Use very little salt in chili since you will get most of your needed salt from the jerky.
  • Also, keep in mind that chipotle peppers are very spicy and you need just a little bit.
  • Another suggestions: The chili could be served with fried tortilla chips or warm flour tortillas or flat bread would be nice as well.

2 green bell peppers, cored, seeded and chopped
2 tablespoons minced (3 large cloves) garlic
3 tablespoons vegetable oil
1/4 cup chili powder, or to taste
1 tablespoon ground cumin
1 tablespoon dried oregano
2 tablespoons tomato paste (recommend getting tube)
3 pounds boneless beef chuck, ground coarse
1 (28-ounce) can whole tomatoes, including liquid
1 to 1 1/2 cups beef broth
4 tablespoons cider vinegar
1-ounce unsweetened chocolate, chopped
1 (19-ounce) can kidney beans, rinsed and drained
Rice, as an accompaniment
Toppings: Tortilla chips; sour cream; grated cheddar; chopped red onions; chopped jalapenos; diced avocado; minced cilantro; etc.

Steps:

  • In a casserole cook the onions, peppers and garlic in the oil over moderate heat, stirring occasionally, for 5 minutes. Add the chili powder, cumin and oregano and cook, stirring, for 3 minutes. Add the tomato paste and cook, stirring, for 2 minutes more. Add the beef and cook, stirring occasionally, until no longer pink. Add the tomatoes, 1 cup of the broth, the vinegar and chocolate and bring the mixture to a boil, crushing the tomatoes with the back of a spoon. Simmer the chili, covered, for 1 hour, adding additional broth, if necessary. Add the kidney beans and simmer, uncovered, for 15 minutes more. Ladle into bowls and serve with rice and desired toppings.

2 teaspoons extra light olive oil
1 large yellow onion
1 jalapeño (diced (seeded for less heat))
3 cloves garlic (minced)
1 tablespoon tomato paste
4 teaspoons ground ancho chili powder
2 teaspoons ground cumin
2 (15 ounce) can tomato sauce
2 cup low-sodium chicken broth
1¾ pound boneless skinless chicken breast halves
2 (15 ounce) cans pinto beans (rinsed and drained)
1 (15 ounce) can black beans (rinsed and drained)
1 cup charred corn
1 poblano pepper (charred with seeds and stem removed, then chopped)
1 (15 ounce) can fat-free refried beans (homemade or store-bought)
1 lime (juiced)
2 teaspoons kosher salt (more or less to taste)
plain nonfat greek yogurt or sour cream
avocado
minced cilantro
sliced green onion
grated white cheddar cheese
tortilla strips (I like the Fresh Gourmet Sante Fe strips)

Steps:

  • In a dutch oven add olive oil, onion, jalapeño and garlic with a small pinch of kosher salt. Stir and cook over medium to medium-low until the onion are soft and translucent. About 10 minutes.
  • Once soft, add in tomato paste, ancho chili powder and cumin. Stir and cook 1 minute.
  • Pour in both cans of tomato sauce, use a little of the broth to clean out the sauce left behind in the can. Pour the remaing broth into to pot. Stir to combine.
  • Add the chicken breast halves and submerge. Cover and bring to a low boil, reduce the heat to low and simmer for 20 minutes or until fully cooked.
  • Carefully remove fully cooked chicken breasts and shred with 2 forks before adding it back in.
  • If using rotisserie or previously cooked shredded chicken, add it and still simmer for 20 mintues.
  • Add in the pinto beans, black beans, refried beans, corn and poblano. Simmer for 5 mintues or until heated through.
  • Before serving, squeeze in the juice of 1/2 a lime and season with kosher salt to taste.

4-1/2 Tbs. vegetable oil
2 lb. ground beef (preferably 80% lean)
Kosher salt and freshly ground black pepper
2 cups chopped yellow onion
2 to 4 medium cloves garlic, chopped
1 cup chopped fresh red bell pepper
1 fresh jalapeño chile, chopped
2 Tbs. chili powder
1 Tbs. ground cumin
1 Tbs. tomato paste
1 tsp. New Mexico chile powder
3/4 cup beer, preferably lager
1 14-oz. can diced tomatoes with juice
1-1/2 cups beef broth (homemade or lower-salt store-bought)
7 cups cooked black beans (home-cooked or canned from four 15-oz. cans, rinsed and drained)
3/4 cup fresh or thawed frozen corn kernels
3/4 cup diced zucchini (1/2-inch dice)
1 Tbs. fresh lime juice
Garnishes: grated Monterey Jack, chopped fresh jalapeños, pepitas

Steps:

  • Heat 2 Tbs. of the oil in a heavy-duty 6-quart pot over medium-high heat until shimmering hot. Season the beef with 1-1/2 tsp. salt and 3/4 tsp. pepper. Cook half of the beef, undisturbed, until browned, 2 to 3 minutes. Break up the meat and cook, stirring or turning occasionally, until well browned, 2 to 3 minutes. Transfer to a large plate. Add another 1 Tbs. oil to the pot, and brown the remaining beef; transfer to the plate along with any liquid from the pot.

  • Pour in the beer, turn the heat up to high, and cook, scraping the bottom of the pot to loosen any browned bits, until most of the liquid is evaporated, about 2 minutes.
  • Add the canned tomatoes and beef broth and bring to a simmer.
  • Turn the heat down to medium low. Purée 1-1/2 cups of the beans in a blender or food processor, adding a little stewing liquid as needed, and then stir the puréed beans into the stewing liquid in the pot. Add the remaining whole beans. Cover and simmer, stirring occasionally, for 30 minutes. Add the ground beef back to the pot, and cook for 30 minutes more. If the chili gets too thick, thin it with a little water.
  • Add the corn and zucchini to the chili and cook until tender, about 10 minutes.
  • Stir in the lime juice, and season with salt and pepper to taste.
  • Serve with the garnishes.
