Southwest Twice Baked Sweet Potato Food
SOUTHWEST TWICE BAKED SWEET POTATO
We get some pretty nice size sweet potatoes in my area and my husband and I usually share one because they are so big. We love eating them and make them often. This recipe I created yesterday to go with the grilled pork chops he made. It was amazing and had some nice heat to it. You can adjust to suit your taste.

Steps:
- Stab some slits in your potato to vent and place in the microwave until soft. Mine took about 25 minutes because of the size. You can adjust the time according to the size of your potato or potatoes.
- Slice the potato horizontally in half and take out the meat and place in a small bowl. Add the cream cheese, sour cream and seasoning. Mix well. Place back in the empty potato shells. Top with jalapenos and some shredded sharp cheddar cheese.
- Stick back in the microwave for a few minutes to slightly melt cheese. Sprinkle with some more seasoning for color. Enjoy

Steps:
- 1. Preheat your oven to 350 degrees.
- 2. Scoop baked sweet potato meat out of skins into a bowl. Mash using a potato masher, or whip with an electric mixer.
- 3. Using a fork, mix cottage cheese, cheddar cheese, onions, bacon, and remaining seasonings in with mashed sweet potato.
- 4. Spray an 8x8 or 9x9 glass baking dish with olive oil spray. Use a spatula and scrape sweet potato mixture into baking dish. Bake at 350 degrees for 30 minutes.

- Preheat oven to 425°F. Arrange sweet potatoes on a baking tray that has been lined with foil. Pierce with a fork and roast for one hour in the oven, or until soft.
- While the sweet potatoes are cooking, spray a large skillet with cooking spray and add in onion and peppers. Cook for about 5 minutes over medium to high heat and until soft. Add in preferred Meal Starter, black beans and seasonings; continue cooking until all ingredients are completely coated in the seasonings.
- Remove the sweet potatoes from the oven; allow them to cool for about 5 minutes until they are just warm enough to handle; slice in half. Use a large spoon to remove the inside, leaving about 1/4 inch around the inside of the skin. Transfer inside to a medium-sized mixing bowl. Set the skins aside.
- Add the Meal Starter mixture and lime juice to the sweet potato in the bowl; stir until completely combined.
