Southwestern Orzo Pasta Salad with Cilantro - Lime Dressing is a fun, colorful and super flavorful addition to your Southwestern or Mexican-inspired meal!

Salt
1 pound orzo pasta
2 tablespoons olive oil
2 cups cherry or grape tomatoes ((1 pint) halved)
2 cups corn kernels (from 3 cooked ears)
1/2 medium red onion (finely chopped (1/2 cup filled to heaping))
1 can (15-ounce) black beans (drained and rinsed)
1 bunch cilantro (with tender stems, coarsely chopped)
1 medium jalapeno pepper (coarsely chopped)
1/2 cup olive oil
1/2 cup lime juice
2 cloves garlic (coarsely chopped)
Salt and freshly ground black pepper (to taste)
Cilantro sprigs and lime wedges (for garnish)

Steps:

  • Bring a large saucepan of salted water to a boil.
  • Add the orzo and cook according to the package directions, being sure to not overcook.
  • Drain in a sieve or colander and immediately rinse with cold running tap water.
  • Drain again and toss with 1-2 tablespoons olive oil. Transfer to a large mixing bowl.
  • Add the tomatoes, corn, red onion and black beans and stir to combine.
  • Combine all the ingredients in a food processor or blender. Process until smooth.
  • Pour dressing over salad and stir well. Serve immediately garnished with cilantro sprigs and lime wedges.

3/4 cup mayonnaise
2 tablespoons chicken broth
2 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 teaspoons minced canned chipotle chiles in adobo
1 1/2 teaspoons brown sugar
salt and pepper
2 tablespoons olive oil
1 teaspoon ground cumin
2 teaspoons fresh lime juice
4 boneless skinless chicken breasts
1 large head romaine lettuce, cut into bite-size pieces
1 cup corn kernel
1 cup black beans, drained and rinsed
freshly shaved parmesan cheese

Steps:

  • Whisk first 6 ingredients together, season with salt and pepper to taste. (Dressing can be prepared 1 day ahead. Cover and refrigerate.).
  • Pound chicken breasts to uniform thickness of 1/2-inch. Whisk together olive oil, cumin and lime juice and coat the breasts with mixture. Let marinate for 2 hours.
  • Preheat grill pan over medium high heat. Grill chicken until cooked through, about 5 minutes each side. Slice across the grain into 1/2 inch strips.
  • Mix lettuce, corn and beans in large bowl. Add dressing and toss to coat. Top salad with sliced chicken, sprinkle with shaved parmesan cheese and serve.

1-1/2 cups Orzo - uncooked
15 ounce Black Beans - canned, rinsed and drained
2 heads Mangoes - large
1-1/2 cups Fresh corn from 2 ears sweet corn
1 head Red bell pepper - chopped
1 pint Cherry tomatoes, halved
1 head Large Red Onion - chopped
1 head Avocado, large, chopped
1/2 cup packed Cilantro, roughly chopped
1/3 cup Olive oil
3 tablespoons Lime juice plus more to taste
2 tablespoons Honey
1 tablespoon Red wine vinegar
1/2 - 3/4 teaspoon Chipotle powder
3/4 teaspoon Ground Cumin
3/4 teaspoon Salt
1/2 teaspoon Garlic Powder
1/4 teaspoon Dried Oregano
1/4 teaspoon Pepper

Steps:

  • Starting with Olive oil add dressing ingredients to a jar, cover and shake.
  • Meanwhile, cook orzo acording to package directions. Drain orzo and toss with 2 tablespoons dressing. Let cool completely.
  • Add orzo to a large bowl and toss with all of the salad ingredients EXCEPT the avacado. If serving right away, then toss in avocado, if chilling first, then add avocado right before serving.
  • Store dressing and salad separately. When ready to serve, add dressing to salad and toss to combine. Season with freshly cracked salt and pepper to taste and additional lime juice if desired.
