SKILLET SOUTHWESTERN CHICKEN SOUP

- In a large skillet, heat oil over medium heat. Add chicken and onion; cook and stir 5-6 minutes or until chicken is no longer pink. Add garlic; cook 1 minute longer. , Stir in corn, beans, broth, tomatoes and seasonings. Bring to a boil. Reduce heat; simmer, covered, 10-15 minutes to allow flavors to blend. Top servings with yogurt and cilantro if desired.

SOUTHWEST CHICKEN VEGETABLE SOUP
This soup will warm you up and fill you up!! The beans, potatoes, and chicken are seasoned with southwest flavors that are sure to please. The sky is the limit for including vegetables. Summer squashes, corn, green beans, or anything else that you can get out of your garden or farmers' market! Just be sure to add more liquids to maintain the soup consistency that you desire.

Steps:
- Place large stock or soup pot over medium heat and add olive oil.
- Saute celery, potatoes, and carrots for 3 minutes, adding seasonings about halfway through.
- Add beans, broth, water, and tomatoes. Stir.
- Bring soup to a boil, then reduce heat to low.
- Simmer over low heat for up to an hour, though the potatoes will be done as early as 30 minutes in, depending on their size.
- Serve piping hot, sprinkling cheese over top if desired.

KIMBELL MUSEUM SOUTHWEST CHICKEN SOUP
This was saved in my stash which I am trying hard to clean out. Originally found in the Dallas Morning News many years ago. The original recipe called for chicken pieces but you could use cooked chicken or turkey and add after the rice is cooked. Times are figured on the basis of using uncooked chicken pieces. It would take much less time if using cooked chicken or turkey. I hope the instructions are not to confusing.

Steps:
- In a large dutch oven or soup pot, saute the onions and celery in the oil until soft. Add the chicken stock or broth, chicken pieces (if using) and the brown rice. If using cooked chicken or turkey, add now. If using the chicken pieces, simmer until chicken is tender, 20 to 30 minutes. Remove chicken and set aside to cool (again if using uncooked chicken pieces).
- Continue cooking for another 15 minutes. Remove chicken from the bones and add back to the stock along with the remaining ingredients.
- Heat through and adjust seasonings to taste.

- Heat oil to medium in large soup pot.
- Brown meat, onion, garlic and spices.
- Add all canned ingredients and bring to low boil.
- Reduce heat and simmer 15 minutes.
- Bake Tortillas at 450 degrees on baking sheet for 5 minutes - watch carefully so as not to burn.
- Place a pile of chips in soup bowl. Ladle in soup, top with sour cream and cheese.

This is a recipe I adapted from a Betty Crocker recipe. You can cut back on the Cajun seasoning if desired or for the more adventuresome add some fresh chiles to taste near the end of cooking time.

Warm, and filling chicken soup with all the flavors we love, I've written the recipe as posted, but made it simpler by just browning the chicken breast whole, putting everything in the crockpot, and cooking on low for about 6 hours, then shredding the chicken just before serving - EASY peasy and delicious, from the Weight Watchers site and only 3 Smart Points per serving" Something is wrong with the site and won't let this show up on my recipes so reprinting in hope it'll fix the issue

Steps:
- Heat 1 teaspoon oil in Dutch oven over medium-high heat. Sprinkle chicken with salt and black pepper. Add chicken to pot and cook, stirring often, until lightly browned and cooked through, about 5 minutes. Transfer to plate.
- 2. Add remaining 1 teaspoon oil to pot. Add onion, bell pepper, and jalapeño and cook, stirring often, until vegetables are softened, about 3 minutes. Add garlic, chili powder, and cumin and cook, stirring constantly, until fragrant, 30 seconds. Stir in broth, tomatoes, and corn. Cover and bring to boil.
- 3. Reduce heat to low and simmer, covered, until vegetables are tender, about 8 minutes. Stir in chicken and cook just until heated through, about 2 minutes. Remove from heat and stir in lime juice.
- 4. Ladle soup evenly into 4 bowls. Top each with 2 slices avocado and sprinkle evenly with cilantro.
- 5. Serving size: 1¾ cups soup with 2 slices avocado.
- Notes.
- Make a double batch of the soup and cover and refrigerate up to 4 days or freeze up to 3 months.
