SOUTHERN STYLE LADY CREAM PEAS
Lady cream peas, seasoned with smoked meat, onion, garlic and fresh herbs, pictured here with a side of my buttermilk sour cream cornbread and broiled chicken.

Steps:
- Soak beans overnight to speed the cooking process.
- Rinse and sort the peas and add to a Dutch oven or soup pot. Add the tasso or smoked ham and the water; bring to a boil, reduce heat and simmer uncovered for 1 hour.
- In a separate skillet, sauté the onion in the butter until softened, about 5 minutes. Add the garlic and cook another minute.
- Transfer the skillet contents, including all of the drippings, to the bean pot.
- Add all of the seasonings, except for the salt and pepper, and continue cooking uncovered for another 1/2 hour, or longer, until peas are tender and liquid has reduced to consistency desired.
- Taste, season with salt and pepper only as needed.
- Serve with a side of cornbread as a main dish meal over rice, or as a side dish with your favorite meat.
SOUTHERN PINK LADY PEAS
Southern Pink Lady Peas are a true Southern delicacy and delicious when served with a slice of cornbread or hoecakes and a few slices of fresh summer tomatoes.

- Add bacon grease to a large saucepan over medium heat. Once the grease is hot, add the onions, reduce the heat to low and sauté for about six to seven minutes. Add the garlic and sauté for another minute.
- Add the peas, whatever pork product you are using, and about three cups water and bring to a boil. You want the water to cover the peas by about an inch.
- Skim off any foam that develops. Reduce the heat to low and simmer for about 20 minutes. It may take a little more or a little less time, depending on what kind of peas you are cooking. Stir occasionally.
- Start tasting them to see if they are done about 15 minutes into the cooking process and keep tasting one or two peas every few minutes until they are tender. You don't want to overcook them, or they will be mushy.
- Add salt and pepper and serve. Enjoy!

- Bring a large pot of water to a boil over medium-high. Add peas; reduce heat to medium, and simmer until peas are tender, 20 to 25 minutes.
- Meanwhile, stir together basil, parsley, mint, shallot, lemon zest and juice, olive oil, mustard, salt, and pepper in a large bowl.
- Drain peas and let cool, about 15 minutes. Transfer peas to bowl with dressing, and toss to coat. Serve immediately.

- In a large dutch oven render bacon over medium heat until crisp. About 10 mins.Remove bacon and reserve 2 tbs. drippings in pan.
- Add onion cook stirring occasionally until tender about 6 minutes Add cooked bacon, lady peas, stock, salt and pepper. bring to a boil. Reduce heat to medium low and simmer until peas are tender and creamy.
- Serve over hot cooked rice if you desire.

LADY PEAS WITH SALT PORK AND RICE

- Cut off and discard any skin from salt pork, then cut salt pork into 1/3-inch pieces. Cook in a 3-quart heavy saucepan over moderate heat, stirring occasionally, until most of fat is rendered and pork is golden and crisp, 6 to 8 minutes. Transfer pork with a slotted spoon to paper towels to drain.
- Pour off all but about 1 tablespoon fat from saucepan, then cook onion in fat over moderate heat, stirring, until softened, about 4 minutes. Add garlic and cook, stirring, 1 minute.
- Stir in peas and water and simmer, uncovered, until tender, 30 to 35 minutes. Stir in scallions and salt and pepper to taste.
- Serve peas over rice and sprinkle with salt pork.
LADY PEAS WITH SALT PORK AND RICE
This is a real Southern dish. Not too many people have access to Lady Cream Peas, so Black Eyed peas may be substitued. A wonderful dish. I serve with beef or pork and cornbread.
