1 (3 pound) whole chicken, cut into pieces
salt and ground black pepper to taste
1 quart buttermilk
2 tablespoons hot pepper sauce
1 teaspoon cayenne pepper
3 cups all-purpose flour
1 tablespoon cayenne pepper
2 teaspoons garlic powder
1 teaspoon paprika
salt and ground black pepper to taste
vegetable oil for deep frying

Steps:

  • Sprinkle the chicken pieces with salt and pepper, and place them in a deep-sided baking dish.
  • Whisk together the buttermilk, hot pepper sauce, and 1 teaspoon of cayenne pepper in a bowl. Pour the mixture over the chicken, stir to coat all sides of the chicken pieces, and cover the dish with plastic wrap. Refrigerate for about 2 hours to marinate.
  • Remove the chicken pieces from the buttermilk mixture, and shake off excess. Discard the remaining buttermilk mixture.
  • Place the flour, 1 tablespoon of cayenne pepper, garlic powder, paprika, and salt and pepper to taste in a large plastic zipper bag, and shake well to combine. Place 2 or 3 pieces of chicken at a time into the plastic bag, and shake well to coat the chicken pieces with seasoned flour.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Gently place chicken pieces into the hot oil, and fry until chicken is cooked through and golden brown, 8-10 minutes (breasts and wings) or 13 to 15 minutes (thighs and drumsticks). Drain the fried chicken on paper towels.

3 1/2 lbs frying chickens, cut up
3/4 cup louisiana hot pepper sauce
1 teaspoon black pepper
1 teaspoon seasoning salt
1 teaspoon poultry seasoning
2 1/2 cups flour
vegetable oil (for frying)

Steps:

  • Wash chicken and pat dry with paper towels.
  • In small bowl, combine hot pepper sauce, black pepper, seasoned salt and poultry seasoning.
  • Place chicken in plastic bag and pour mixture over.
  • Toss to coat well, seal bag and refrigerate for 6 hours or overnight.
  • Turn chicken pieces occasionally.
  • Place flour in plastic bag.
  • Heat oil to 340° in large deep skillet to 1/2 the depth of the pan.
  • Remove chicken from marinade and dredge in flour until well coated.
  • Fry a few at a time so as not to crowd for 15 minutes.
  • Turn and fry 12 to 15 minutes more or until done.
  • Drain on paper towels before serving.

1-2 pound chicken (cut into pieces)
3 large eggs
1 cup hot sauce
⅓ cup water
2 cups self-rising flour
1 ½ tsp. salt
½ tsp. garlic powder
1 tsp. ground black pepper
Oil (vegetable or peanut)

Steps:

  • Wash and pat dry the chicken. Place it on a big plate, chopping board, or pan.
  • In a bowl, whisk together eggs and water. Toss with hot sauce. Mix the flour, pepper, garlic powder, and salt together in another bowl.
  • Now, dip the chicken first in the egg blend, then in the flour blend, coating well.
  • Preheat the oven to 200 degrees Fahrenheit or less. Set a cooling rack on a baking tray and set it aside. If you're frying in batches, this will be used to transfer the fried chicken to the oven to stay warm.
  • In a deep Wok or deep fryer, heat the oil around 350 degrees F. Fill the saucepan no more than halfway with oil. If using a Wok, use a candy thermometer to check the temperature.
  • Fry the chicken in the oil for about 12-15 mins (if using thighs, wings, and legs) and for 8-10 mins (if using breasts). Make sure there's enough room for each piece of chicken; you might need to fry in batches. Once nicely browned and crispy, transfer the chicken pieces to a baking tray using a tong or slotted spoon and place them in the oven to retain the chicken warm.
  • Serve it with your favorite dips or sauces, and enjoy!

1 roasting chicken, cut into serving pieces
2 teaspoons kosher salt, plus additional to add for seasoning
1 teaspoon fresh ground pepper, plus additional to add for seasoning
2 cups buttermilk
1 -2 tablespoon Tabasco sauce
6 cups canola oil
1 1/2 cups all-purpose flour
1/2 teaspoon paprika

Steps:

  • Rinse the chicken with cold water and pat dry with paper towels. Season the chicken with salt and pepper. Place in a large baking dish, cover with plastic wrap, and refrigerate for a least 1 hour or up to 4 hours.
  • In a bowl, combine the buttermilk and Tabasco sauce and pour over the chicken, coating all the pieces. Cover with plastic wrap and refrigerate overnight.
  • Remove the chicken from the refrigerator 30 minutes before cooking. Place the chicken in a colander and let the excess buttermilk drain off. Reserve the buttermilk, if desired, for dipping the chicken a second time.
  • In a deep cast-iron fry pan over medium-high heat, heat the oil to 350 degrees. Preheat an oven to 200 degrees. Line a baking sheet with paper towels.
  • In a bowl, whisk together the flour, the 2 teaspoons salt, the 1 teaspoon pepper and the paprika. Dredge the chicken in the flour mixture, shaking off the excess. (For a crispier coating, dip the chicken into the reserved buttermilk and flour a second time.).
  • Place half of the chicken in the oil and fry, turning often and maintaining the oil temperature at 325 degrees until the chicken is cooked through. Transfer to the prepared baking sheet and keep warm in the oven. Repeat with the remaining chicken.

Sometimes you just need a fried chicken sandwich and this one will not disappoint. The chicken is moist and tender from the yogurt marinade and gets a little punch of heat from a spicy mayo. Everything is cooled down by the tangy, crunchy coleslaw. There's no need to venture away from home to satisfy that chicken sandwich craving!

3 tablespoons apple cider vinegar
2 teaspoons granulated sugar
1/2 teaspoon celery salt
1/4 teaspoon freshly ground black pepper
1/4 cup mayonnaise
2 scallions, thinly sliced
1 cup finely shredded green cabbage
1 cup finely shredded red cabbage
1/2 cup mayonnaise
1 tablespoon hot sauce, plus more to taste (up to 3 tablespoons total)
1/2 cup plain yogurt
1 1/2 teaspoons smoked paprika
2 cloves garlic, grated
Kosher salt
4 boneless, skinless thin-cut chicken cutlets, each about 1/4-inch thick
Vegetable or canola oil, for frying
1 cup all-purpose flour
1 teaspoon onion powder
1/2 teaspoon freshly ground black pepper
4 brioche burger buns, split
2 vine-ripened or heirloom tomatoes, thinly sliced

Steps:

  • For the tangy slaw: Whisk together the vinegar, sugar, celery salt and pepper in a small bowl until combined. Stir in the mayo until incorporated. Add the scallions and green and red cabbage and toss to coat. Set aside, or refrigerate for up to 4 hours in advance.
  • For the spicy mayo: Whisk together the mayonnaise and hot sauce in a small bowl. Taste and add more hot sauce depending on how spicy you like it. Refrigerate in an airtight container for up to a week.
  • For the fried chicken: Mix the yogurt, 1 teaspoon of the paprika, garlic and 1/2 teaspoon salt together in a large bowl. Add the chicken cutlets and coat evenly. Let the chicken sit in the marinade for about 15 minutes at room temperature or up to 2 hours refrigerated.
  • Once the chicken has marinated, pour about 2 inches of oil in a deep 10-inch cast-iron skillet and place over medium-high until it registers 350 degrees F on a deep-fry thermometer. Line a sheet pan with paper towels.
  • While the oil heats, whisk together the flour, onion powder, remaining 1/2 teaspoon paprika, 1/2 teaspoon salt and the black pepper in a small shallow dish. Remove the cutlets from the yogurt, allowing any excess yogurt to drip off, and dredge the cutlets in the flour mixture.
  • Carefully add the dredged chicken to the hot oil and fry until the chicken is deeply golden brown on both sides and cooked through, 7 to 8 minutes, flipping the cutlet about halfway through the cooking time. Drain on the paper towels and immediately sprinkle the chicken with more salt to taste.
  • Toast the burger buns until golden brown. Spread 1 tablespoon of the mayo over the top and bottom of each bun. Place a piece of fried chicken on each bottom bun, top that with slices of tomato and some slaw and cover with the top buns. Serve immediately.
