This is an amazing fluffy, delicious frosting. It pipes out beautifully, and holds it's shape. The flavor tastes like marshmallow whipped cream. Be sure to whip the hot sugar syrup with the egg whites for a considerable amount of time, about 8-10 minutes (on a Kitchenaid stand mixer) for the best results. I'm sure this would be excellent on any flavor of cake, but it is fabulous on chocolate cake and probably be great on red velvet.

1 cup white sugar
1/3 cup water
1/4 teaspoon cream of tartar
2 egg whites
1 1/2 teaspoons vanilla extract

Steps:

  • Combine the sugar, water and cream of tartar in a saucepan. Cook the mixture over medium-high heat until the sugar is completely dissolved and the mixture starts to bubble.
  • Whip the egg whites and vanilla extract in a mixing bowl until soft peaks form. Slowly drizzle the hot sugar syrup mixture into the egg whites while whipping constantly at medium-high speed until stiff peaks form and frosting is very glossy, around 8-10 minutes.

4 Egg Whites
1 cup Sugar
1 cup Water
1/2 teaspoon Cream of Tartar
1 teaspoon Vanilla Extract
Pinch of Salt

Steps:

  • Place water in a small sauce pan.
  • Add Sugar but, do not stir.
  • Place saucepan over medium-high heat, bring to 238º.
  • While sugar is cooking, separate the egg whites from the yolks. Save yolks for use later.
  • Place the egg whites in a large mixing bowl.
  • Add the Cream of Tartar.
  • Add the pinch of Salt.
  • Use a blender, on high speed and beat egg whites until they form soft peaks.
  • When sugar syrup reaches 238º, slowly add, in a small stream, to the egg whites.
  • Continue to beat the egg whites on high speed while adding all the sugar syrup over about a 5 minute period of time. Careful, the sugar syrup is very hot.
  • Add the Vanilla Extract and beat another minute or so to incorporate the vanilla. Continue to beat only as long as needed to form firm peaks.
  • Work quickly to spread over cake as the egg whites may continue to firm up and set.

3 cups granulated sugar
1/3 cup light corn syrup
3/4 cup boiling water
6 large egg whites
1 pinch salt
1 teaspoon vanilla
1/4 teaspoon almond extract

Steps:

  • Place sugar, corn syrup and boiling water in a 3 qt saucepan over moderate heat.
  • Stir until sugar dissolves.
  • When mixture comes to a full boil, remove from heat and set aside briefly Beat egg whites with salt to stiff peaks.
  • Transfer hot syrup to a pitcher for easy pouring.
  • Beating at high speed, pour hot syrup in a thin threadlike stream into the whites.
  • Pour slowly and scrape down sides if necessary to keep the entire mass well mixed.
  • After all of the syrup has been beaten in, add vanilla and almond extract.
  • Continue beating for 10-15 minutes on high until icing is very stiff.

Whisk the milk and vanilla extract together in a small bowl.

Steps:

  • Slowly beat the butter and sugar, in another medium bowl, with an electric mixer until incorporated. Raise the speed to high and mix until light and fluffy, about 5 to 7 minutes. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.) Add the fluff and salt and reduce the speed to low. Add the milk and vanilla mixture, scrape the bowl down, and mix until fully incorporated. Raise the mixer to high and beat briefly until fluffy, about 1 to 2 minutes. Use immediately.

  • In a heavy saucepan combine sugar, water and cream of tartar. Slowly bring mixture to a boil, stirring sides of the saucepan with a brush dipped in water to remove any sugar crystals. Cover and boil for about 3 minutes or until a candy thermometer registers 245 degrees.
  • Beat egg whites with pinch of salt until glossy and peaked. Slowly pour in syrup as you continue to beat the whites. Beat until cool and frosting is soft and fluffy. Fold in vanilla.

PHYLLIS' FLUFFY FROSTING

I got this from my Grandma who got it from my Aunt Phyllis. It is incredibly easy but does pretty much require a stand mixer or a person with stamina. It is a very light whipped satin icing (not very sweet) and we love it best on chocolate cake but it frosts anything well. Be patient and whip it for the full 20 minutes or it will not set. To make this a chocolate whipped icing use unsweetened cocoa powder. Add it at the end using 1/4 to 1/2 cup depending on desired richness. *Melted chocolate will make it fall and so will heavy cream or half & half (it just won't set).

  • Reduce speed to medium.   • Let egg whites stand at room temperature for 30 minutes. Room temperature egg whites will have more volume when beaten than cold egg whites. In medium bowl, beat egg whites with electric mixer on high speed just until stiff peaks form.
  • In 1-quart saucepan, stir sugar, corn syrup and water until well mixed. Cover and heat to rolling boil over medium heat.
