Pozole is one of the best known dishes of Mexico. Traditional pozole takes almost all day to cook but this version takes a little less time. The key to great pozole is slow simmering, this will allow the flavors to develop....

2 1/2 lbs pork shoulder, cut into 1-inch cubes
2 tablespoons oil
1 onion, chopped
3 garlic cloves, minced
10 cups chicken broth
1 teaspoon dried oregano
2 teaspoons salt
3 tablespoons ground red chili powder
3 cups white hominy, drained

Steps:

  • Heat oil in a large dutch oven over medium heat. Add pork and cook, turning until browned on all sides.
  • Remove the pork with a slotted spoon and keep warm.
  • Reduce heat to medium and add onion and garlic to the pan, cooking just until onion softenes.
  • Return pork to dutch oven and add the chicken broth, oregano, salt and chili.
  • Reduce heat to low, cover, and cook for about 90 minutes.
  • Add hominy and cook for 15 more minutes.
  • Check seasonings and add more chile powder or salt according to taste.
  • Ladle into soup bowls.
  • Serve with hot corn tortillas and garishes.
  • GARNISHES: thinly sliced radishes, shredded lettuce, finely chopped onion, chopped cilantro, lime wedges.

I looked through a variety of recipes before settling on this combination. It's a favorite of mine now, and since my family was evidently frightened by a hominy when young, I get it all to myself.

2 tablespoons vegetable oil
1 garlic clove, minced
1/2 onion, chopped
1 1/2 lbs pork, cubed
1 teaspoon oregano (Mexican if possible)
2 tablespoons chile powder (ancho powder)
3 -4 cups chicken broth
1 (30 ounce) can white hominy, drained
salt and black pepper

Steps:

  • Saute onion and garlic in oil until clear and soft.
  • Add pork and sear.
  • Add broth.
  • Simmer until tender. (Depends on cut.).
  • Add remaining ingredients and cook for 30 more minutes.
  • Add broth or water for consistency desired. Traditionally, it's soup, but I like it thicker -- stew-like.
  • Salt and pepper at the end to taste.
  • Serve with cornbread or tortillas.
  • Chile Powder is not a mix, but powdered roasted dried chiles. I use a mix of anchos, pasillas, and guajillas that I roast and grind myself, but ancho chile powder is usually easy to find in the spice section.

Almost every family I know has their own version of this dish. My mom made an amazing arroz con pollo. But my version is inspired by the Mexican coastal city of Mazatlán and all the amazing fresh produce that is available there throughout the year. It's a vegetable-forward recipe full of flavor, texture and color. When I open the lid after the dish is done, the colors look like confetti on a dance floor after a big party. And that's what this meal is: a party in a pot.

2 tablespoons bacon fat or olive oil
6 chicken thighs (about 2 pounds total)
2 medium carrots, peeled and chopped
1 cup corn kernels (from 1 large ear of sweet corn, or use thawed frozen kernels)
1/2 large white onion, chopped
1 poblano pepper, stemmed, seeded and chopped
1 serrano chile, chopped (remove seeds for milder flavor)
2 garlic cloves, finely chopped
4 teaspoons kosher salt
2 cups long-grain rice
3/4 teaspoon cumin seeds
3 canned whole tomatoes or fresh tomatoes if in season, crushed or chopped
Cilantro, for garnish
Lime wedges, for serving

Steps:

  • Heat the fat in a large heavy pot over medium-high heat. Add the thighs, skin-side down, and cook until browned on both sides and their fat has rendered, 8 to 10 minutes. Transfer to a plate.
  • Add the carrots, corn, onion, poblano, serrano, garlic and salt and cook, stirring occasionally, until the vegetables just begin to brown, 5 to 6 minutes. Add the rice and cumin and cook, stirring frequently, until the rice grains are opaque and the vegetables are very tender, about 5 minutes.
  • Stir in the tomatoes and 2 1/2 cups water and bring to a boil. Reduce the heat to low, cover the pot and simmer until all the water has been absorbed, about 20 minutes. You can check by
  • opening the lid, taking a fork and clearing a spot so you can see the bottom of the pot; if there is any liquid, cover and check in another 5 minutes.
  • Remove from the heat and let sit, covered, for 20 minutes to evenly distribute the moisture.
  • Serve topped with cilantro and a squeeze of lime.

  • In a large pot, heat up the lard and cook the onion for 5-7 minutes or until soft and beginning to brown. Add the pork and brown on each side for a couple of minutes. Throw in the garlic and cook for 30 more seconds.
  • Pour the water into the pot and add the ham hock, salt, oregano, cumin, ground cloves, and ancho-chile powder. Bring to a boil and then turn down to a low simmer.
  • Meanwhile, take the New Mexican chiles and cook on high in a dry cast-iron skillet until the pop, a couple of minutes. Turn off the heat, add water to the skillet and let the chiles soak until hydrated, about half an hour.
