From Davis, IL, Tonya Burkhard sends this filling soup that comes together in no time. Loaded with potatoes, the combination of sweet corn and pearl onions, smoky bacon and lots of spice has a scrumptious Southwestern flavor.

1/2 cup chopped onion
4 bacon strips, diced
2 tablespoons all-purpose flour
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/8 teaspoon garlic powder
1 package (32 ounces) frozen cubed hash brown potatoes
2 cans (14-1/2 ounces each) chicken broth
1 can (14-3/4 ounces) cream-style corn
1 can (11 ounces) Mexicorn, drained
1 can (4 ounces) chopped green chilies
1/4 cup pearl onions
Sour cream and minced fresh cilantro, optional

Steps:

  • In a Dutch oven, saute onion and bacon until onion is tender and bacon is crisp. Stir in the flour, cumin, chili powder and garlic powder. Bring to a boil; cook and stir for 1 minute or until thickened. , Stir in the hash browns, broth, cream corn, Mexicorn, chilies and pearl onions. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until heated through. Garnish with sour cream and cilantro if desired.

My family enjoys these change-of-pace hot sandwiches. Makes a great meal when combined with a zesty homemade soup for a Soup-and-Sandwich night.

3 hard-cooked eggs, chopped
2 tablespoons chopped green chilies
1/3 cup salsa
1 green onion, sliced
1/4 cup sliced ripe olives
1 dash salt
1 dash pepper
1/8 teaspoon ground cumin
1 1/4 cups shredded cheddar cheese
4 French rolls or 4 submarine rolls, split

Steps:

  • In a large bowl, mix eggs, chilies, salsa, onion, loves and seasonings.
  • Fold in cheese.
  • Spoon ½ cup onto bottom of rolls.
  • Replace tops; wrap each sandwich tightly in foil.
  • Bake at 350* for 20 minute.
  • Serves 4.

An easy and family pleasing casserole that's on the table in less than 45 minutes. I serve this with a guacamole salad, or a green salad with slices of avocado.

1 lb ground beef
1/2 cup chopped onion
1 jalapeno, minced (optional or more to taste)
2 (8 ounce) cans tomato sauce
1 tablespoon chili powder
1/2 teaspoon salt
6 corn tortillas, cut in half
2 cups cheddar cheese, shredded (8 oz)

Steps:

  • Preheat oven to 325 and grease 1 1/2 qrt casserole dish.
  • Brown meat and drain.
  • Add onion and jalapeno (if using) and cook with meat until tender.
  • Stir in tomato sauce and seasonings.
  • Layer one-third of meat mixture, cheese and one half of tortillas in casserole dish; repeat layers, ending with cheese.
  • Bake at 325 for 20 minutes.
  • Note: Corn tortillas will soften and absorb the sauce.
  • These are recommended.
  • Flour tortillas will expand and the casserole will be too doughy-therefore flour tortillas are not recommended.

1/2 to 2/3 cup milk
1 cup partially frozen diced banana
2 tablespoons or favorite chocolate syrup
1/2 cup coffee or favorite caramel or vanilla ice cream

Steps:

  • Place all the ingredients in a blender and mix by using the on/off pulse function until the ingredients are mostly blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. This is a quick and simple chicken recipe. Simple flavors, but could be spiced up a bit to a persons individual taste with the addition of some mexican spices, chili powder, green chilies, etc.

1 green pepper, cut in strips
4 boneless skinless chicken breasts, cut into 1-inch strips
1 tablespoon butter
2 cups cooked rice
1/3 cup sour cream
16 ounces salsa
1 cup colby or 1 cup cheddar cheese, shredded

Steps:

  • Sauté green pepper and chicken in butter or oil until lightly browned (about 5 mins).
  • Spread the rice in a greased 9x9 pan.
  • Top with peppers and chicken.
  • Mix sour cream and salsa and spoon over chicken. Sprinkle with cheese.
  • Bake 350 degrees for 25-30 minute.

A great recipe that's easy to make and tasty. Great for fall and winter weather. I cut this from the newspaper many years ago (I find many of my favorite recipes came from a newspaper, though I don't collect them anymore). Enjoy!

1 1/2 tablespoons vegetable oil
2 cups onions, chopped
4 cups hash browns, Southern Style or potatoes cut ~ 3/8-inch dice
2 teaspoons garlic, minced
3 (16 ounce) cans chicken broth
7 ounces green chilies
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon salt
4 cups frozen corn
1 cup half-and-half
bacon bits, or cooked, crumbled bacon
cheese (optional)
sour cream (optional)
tortilla chips (optional)

Steps:

  • Saute onion, garlic, and potatoes until lightly browned.
  • Add everything except corn, bacon, and half-and-half.
  • Cook covered 5 minutes.
  • Add corn and cook 5 more minutes.
  • Remove from heat and add half-and-half.
  • Mix in a dollop of sour cream and cheese if you like (I love it as is).
  • Garnish with bacon bits or crumbled bacon.
  • May throw in some crushed tortilla chips of Fritos as well.
  • Note: I use a heaping measures of garlic, cumin, and chili powder for extra flavor.
  • Enjoy!

  • Place bread on an ungreased baking sheet and spread 1 Tablespoon of the mayonnaise mixture on each slice. Top with slices of turkey and tomatoes. Spread with another Tablespoon of mayonnaise mixture (I didn't add this because I didn't think it needed it). Top with avocados and cheeses. Sprinkle with the reserved 2 Tablespoons of olive mixture. Bake @ 350 for 15 min. Makes 8-10 servings.
