Steps:
- In a large bowl, combine the first 12 ingredients. Crumble beef over mixture and mix well. Press into a 9x5-in. loaf pan coated with cooking spray. Bake, uncovered, at 375° for 1 hour or until meat is no longer pink and a thermometer reads 160°., Cool for 10 minutes before removing from pan. Drizzle with salsa if desired.

This was one of those recipes that I clipped a long time ago but never got around to. Well, I got around to it and it was great! This is my first submission so I am feeling pretty confident that everyone will like it. Great with a side of Uncle Ben's Mexican Fiesta Rice!

Steps:
- In a bowl, combine the first 12 ingredidients.
- Add beef and mix well.
- Press into a 9x5x3 loaf pan coated with nonstick cooking spray.
- Bake, uncovered, at 375 degrees for 1 hour or until meat is no longer pink and meat thermometer reads 160 degrees.
- Cool for 10 minutes before removing from the pan.
- Drizzle with salsa if desired and top with sour cream if desired.
SOUTH OF THE BORDER MEATLOAF - WLS RECIPES
Steps:
- Preheat oven to 375 F.
- Dice pepper and onion. Add to a mixing bowl along with ground beef, parmesan cheese, ketchup, seasoning and egg.
- Bake in heated oven for 45-60 minutes using a meat thermometer to check internal temp is to 155F. Add shredded cheese to the top and put back in the oven 3-5 more minutes or until melted. Remove, let cool and serve.

- Fold in cheese.

Steps:
- In a large skillet, cook shrimp, garlic and bell pepper in oil until shrimp turns pink. Remove from skillet, and set aside.
- In the same skillet, melt margarine and stir in flour and seasoning until smooth.
- On medium high heat, gradually add broth and stir until sauce thickens.
- Stir in cream and salsa and heat throughly.
- Spread 1/2 cup of sauce in buttered 9x13 inch baking pan.
- Layer with half tortilla strips, half shrimp-bell pepper mixture, half of crab meat, half of the sauce, and half of cheese.
- Repeat layer again leaving off last half of cheese.
- Bake uncovered at 350 degrees for 35 minutes.
- Uncover and sprinkle remaining cheese over top.
- Return to oven and bake for 5 minutes.
