Pronounced ba-boor-tea, the national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka

- Heat oven to 180C/fan 160C/gas 4. Pour cold water over the bread and set aside to soak.
- Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour. Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour. Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper.
- Cover and simmer for 10 mins. Squeeze the water from the bread, then beat into the meat mixture until well blended. Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top. You can make this and chill 1 day ahead.
- For the topping, beat the milk and eggs with seasoning, then pour over the meat. Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.

Posting this for ZWT 2006, this is a typical South African Curry. For those who dislike Coconut Milk in curries try this one; it is coconut milk free. This is served over rice or with a bread such as Chapatis.

Steps:
- Heat the oil in a large pot; over high heat, fry the onions and garlic, stirring continuously; add the spices and continue stirring for a minute.
- Reduce heat slightly; add the meat and fry it until it is browned on all sides; (this may be easier if you remove the onions and set them aside, then return them to the pot after the meat is browned.).
- Add all remaining ingredients except the apricot jam and yogurt (or buttermilk).
- Cover & Reduce heat; simmer on low heat, stirring occasionally, until everything is tender, approximately an hour.
- Stir in jam and yogurt (or buttermilk) a few minutes before serving.
- Serve with traditional Curry Garnishes such as Chutney, Peanuts, sliced Bananas and dates.

- In a medium-large skillet, add oil, onions, garlic, ginger, curry, paprika and chili pepper sauté, for about 2-3 minutes, stirring constantly to prevent any burns.
- Followed by tomatoes, continue cooking for about 3 minutes
- Add potatoes and minced meat, cayenne pepper, white pepper, mix until ingredients have been thoroughly combined
- Pour in water then , bring to a boil then simmer for about 15 minutes or more until potatoes are tender.
- Finally throw in peas, cook for another minute or two, add parsley, and adjust the seasoning, to taste. Remove from the heat and let it cool. You may prepare this a day in advance.

Easy, great tasting authentic South African mince dish, great for feeding a crowd!

- Preheat oven to 180C/Fan 160C/Gas 5
- In a bowl, add just enough milk to the slice of bread to soak.
- Fry the onion and mince until browned, and drain off any fat.
- Add 1 Egg, the vinegar, raisins, apricots and curry powder to the bowl with the soaked bread.
- Add the mince and onion, and mix well.
- Pour this mixture into a baking dish, ensuring the top is level.
- In a mixing bowl, beat together the other egg, the milk and salt and pepper. Pour this over the top of the mince until covered.
- Push bay leaves into the mince if using, and cook for 45 minutes in the oven until topping has solidified.
BASIC CURRIED MINCE
Steps:
- Heat a little oil in a pan and fry the onions until soft and glossy. Add the spices and stir-fry for another minute. Add the mince and fry until the meat is done. Stir with a fork to break up the larger lumps. Season to taste with salt and pepper and add the remaining ingredients. Reduce the heat, cover and simmer slowly until all the flavours are well blended. Use as described.Serves 4.
MINCE CURRY RECIPE
Steps:
- In a large pot or saucepan, add 3 tablespoons of olive oil, and then all of the mince.
- When the meat is just slightly cooked, add the onions, garlic, and all of the spices.
- Once this mixture has browned, add the finely chopped tomato, potatoes, carrot, and green pepper along with the canned tomato.
- Add the cup of water, so that the vegetables can cook by themselves for a while.
- Once it starts to boil, turn the heat down to a low-medium, and take it easy.
- It should cook like this for at least 30 minutes, stirring occasionally. Add a little water occasionally if you feel like it may burn, but be careful not to make it saucy.
- Once the potatoes start to soften, you know that this easy mince curry recipe is coming to its finishing line.
- Check the flavour and if you're happy with the slight curry kick. If you'd like it to be hotter, add a little cayenne pepper. You can also add salt and pepper until you're satisfied.
