BOBOTIE

Bobotie image

Pronounced ba-boor-tea, the national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka

Provided by Sara Buenfeld

Categories     Dinner, Main course

Time 1h10m

Number Of Ingredients 14

2 slices white bread
2 onions, chopped
25g butter
2 garlic cloves, crushed
1kg packet lean minced beef
2 tbsp Madras curry paste
1 tsp dried mixed herbs
3 cloves
5 allspice berries
2 tbsp peach or mango chutney
3 tbsp sultana
6 bay leaves
300ml full-cream milk
2 large eggs

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Pour cold water over the bread and set aside to soak.
  • Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour. Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour. Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper.
  • Cover and simmer for 10 mins. Squeeze the water from the bread, then beat into the meat mixture until well blended. Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top. You can make this and chill 1 day ahead.
  • For the topping, beat the milk and eggs with seasoning, then pour over the meat. Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.

Categories     Curries

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 20

3 tablespoons cooking oil
2 medium onions, sliced (about 1 1/2 cups)
1 garlic clove, minced
1 small piece fresh gingerroot, peeled and crushed (or 1 tsp. ground Ginger)
1 teaspoon turmeric
1 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon cinnamon
1 1/2 teaspoons curry powder (or more, to taste, I use LOTS more)
1/2 teaspoon clove
2 lbs lamb (or beef)
1/2 lb eggplant, cubed
1 sweet green pepper, cleaned and chopped
1 -2 hot green chili pepper
1 cup dried apricot, soaked in warm water and drained
6 ounces tomato paste (one small can)
1 teaspoon vinegar
2 cups beef broth or 2 cups stock
1/2 cup apricot jam
1 cup plain yogurt or 1 cup buttermilk

Steps:

  • Heat the oil in a large pot; over high heat, fry the onions and garlic, stirring continuously; add the spices and continue stirring for a minute.
  • Reduce heat slightly; add the meat and fry it until it is browned on all sides; (this may be easier if you remove the onions and set them aside, then return them to the pot after the meat is browned.).
  • Add all remaining ingredients except the apricot jam and yogurt (or buttermilk).
  • Cover & Reduce heat; simmer on low heat, stirring occasionally, until everything is tender, approximately an hour.
  • Stir in jam and yogurt (or buttermilk) a few minutes before serving.
  • Serve with traditional Curry Garnishes such as Chutney, Peanuts, sliced Bananas and dates.

MINCE CURRY RECIPE

Mince curry recipe image

Provided by Kura Samouilhan

Categories     Main Course

Number Of Ingredients 17

3 tbsp olive oil
1kg mince (beef or ostrich works best)
2 onions
2 cloves garlic
2 potatoes
3 carrots
2 tomatoes
1 green pepper
1 tin chopped tomatoes (in addition to fresh)
1 cup water
1 cup frozen peas
2 tbsp mild curry powder
1 tbsp hot curry powder
2 tbsp smoked paprika
1 tsp ground ginger (if you have it, fresh is always best)
Salt and pepper (to taste)
1 tsp cayenne pepper

Steps:

  • In a large pot or saucepan, add 3 tablespoons of olive oil, and then all of the mince.
  • When the meat is just slightly cooked, add the onions, garlic, and all of the spices.
  • Once this mixture has browned, add the finely chopped tomato, potatoes, carrot, and green pepper along with the canned tomato.
  • Add the cup of water, so that the vegetables can cook by themselves for a while.
  • Once it starts to boil, turn the heat down to a low-medium, and take it easy.
  • It should cook like this for at least 30 minutes, stirring occasionally. Add a little water occasionally if you feel like it may burn, but be careful not to make it saucy.
  • Once the potatoes start to soften, you know that this easy mince curry recipe is coming to its finishing line.
  • Check the flavour and if you're happy with the slight curry kick. If you'd like it to be hotter, add a little cayenne pepper. You can also add salt and pepper until you're satisfied.

  • Braai. As important a cultural tradition as asado is to Argentinians, so is braai to South Africans. Meaning “grilled meat” in Afrikaans, braai is short for braaivleis and is essentially the South African equivalent to a barbecue.
  • Boerewors. Boerewors refers to a South African sausage that’s popular in the cuisines of countries in southern Africa like Namibia and Zimbabwe. Boer means “farmer” and wors means “sausage” in Afrikaans, so boerwors literally means “farmer’s sausage”.
  • Sosatie. The sosatie is another dish that’s often part of a traditional braai in South Africa. It refers to cubes of meat, usually lamb or mutton, skewered on sticks and cooked on a grill or pan-fried.
  • Roosterbrood (Roosterkoek) Roosterbrood or roosterkoek refers to a type of grilled bread made with flour, yeast, salt, sugar, and water. Like the meats at a braai, they’re cooked directly on the grill over a wood or charcoal fire.
  • Braaibroodjie. Grilled cheese sandwiches are delicious any which way, but have you ever had one grilled over a wood or charcoal fire? A common side dish at braais, braaibroodjie translates to “barbecue bread” and refers to the South African version of the grilled cheese sandwich.
  • Biltong / Droëwors. If you like meat jerky, then you’re going to enjoy biltong and droëwors. They’re the South African equivalent to American beef jerky, but much better.
  • Samoosa. Between the mid-19th and early 20th centuries, thousands of indentured Indian workers were brought to South Africa to help develop the sugar industry in the former Natal province (now KwaZulu-Natal).
  • Amanqina Enkukhu. If you’re an adventurous eater and have a taste for unconventional food, then amanqina is right up your alley. Known colloquially as “walkie talkies” or “runaways”, it refers to a stew made with chicken feet.
  • Monkey Gland Sauce. This oddly named condiment has been a staple item on South Africa’s restaurant menus for decades. Monkey gland sauce refers to a sweet and tangy sauce typically served as a topping for grilled steaks and burgers.
  • Potjiekos. The word potjiekos literally means “small pot food” and refers to a traditional South African dish cooked in a round cast-iron cauldron called a potjie.
