SOURDOUGH PUMPKIN BREAD
I love pumpkin and I love using my sourdough starter so this recipe combines both. It is a good bread and can be frosted with either a simple glaze or cream cheese frosting if desired.

Steps:
- Preheat oven to 350 degrees F.
- Grease 2 loaf pans and set aside.
- Combine sugars, bisquick, cinnamon, pie spice and set aside.
- In a mixing bowl beat eggs.
- Stir in sourdough starter and then remaining ingredients.
- Stir in dry ingredients just until moistened.
- Taking care not to over blend.
- Pour into prepared pans and let rest at least 15 minutes.
- Bake for aprox.
- 40 minutes or until pick comes out clean.
- Cool out of the pans on a wire rack.
- I slice this bread after it has cooled and freeze some of the slices as it thaws beautifully.

PUMPKIN BREAD WITH DISCARD SOURDOUGH STARTER
A moist and spicy pumpkin bread with a strong pumpkin flavor! The cardamom and pepper give this recipe a Scandinavian flair. This recipe makes loaves or muffins, and can be made with or without sourdough starter. To substitute starter add 2/3 cup water to wet ingredients and 1 1/4 cups flour to the dry ingredients

- Preheat oven to 350. Grease and flour 3 3x7 loaf pans or line muffin pans.
- Combine pumpkin, eggs, starter (or water if using), and sugars until smooth.
- In a separate bowl, combine flour, soda, salt, and spices.
- Gradually add dry ingredients to wet ingredients until fully incorporated.
- Pour into prepared pans and bake until a toothpick inserted into the center comes out clean (Approximately 30 minutes for muffins, 60 minutes for loaves).

- Autolyse: Weigh out your starter, water and honey in a glass or ceramic bowl. Mix them together so that the honey is dissolved in the water (or at least really well distributed).Then add your flour, pumpkin puree and salt and mix altogether with the end of a wooden spoon. The dough will be fairly shaggy and only just brought together.Cover your bowl with cling film or a damp tea towel and let it sit for around 1 hour.
- Forming Up Your Dough: Work your way around the bowl, grabbing the dough from the outside, stretching it up and over itself until a smooth ball is formed. You shouldn't need more than about 20-25 folds to form the ball. Once the dough has formed into a smooth ball, pop the cling film back on and let it rest for 30 minutes.
- Stretch & Fold:At this stage, you need to create some structure to your bread and help the gluten to develop by stretching and folding the dough. Try to do around 4 sets of stretch and folds with around 15 to 30 minutes between each set.
- Bulk Ferment: Once you've finished your stretch and folds, place the cling film or damp tea towel back over your dough and let it rest and ferment. The time this takes will depend on the temperature in your home.

- Preheat the oven to 350 degrees Fahrenheit. Grease a 8.5"x4.5" loaf pan and line with parchment.
- Combine the pumpkin puree, cinnamon, salt, nutmeg, and cloves in a medium saucepan over medium heat. Stir frequently with a rubber spatula until the pumpkin has reduced to 1 1/2 cups. While the pumpkin is reducing, stir together the sugar, brown sugar, oil and vanilla in a small bowl. In another small bowl, whisk together the sourdough discard, and the eggs.
- Once the pumpkin has reduced to 1 1/2 cups, remove the pot from the heat and whisk in the sugar mixture until completely combined. Whisk in the starter mixture. Fold the flour mixture into the pumpkin mixture until no dry flour remains. Fold in the pecans.
