~ SOURDOUGH - HAM, EGG & SWISS BAKE ~ MY WAY
I had some sourdough bread I needed to use, some ham cubes, roasted red peppers and scallions. Add some Swiss cheese and eggs and this is what I ended up with. What a wonderful flavor, my family loved it! I hope you enjoy this yummy breakfast as much as we did. Enjoy!

Steps:
- Preheat oven to 350 degree F. Spray an 8 inch casserole dish with nonstick cooking spray. Set aside. Bake sour dough cubes until toasty. In a medium sized bowl, whisk together eggs, salt, pepper and mustard.
- Add the toasted sour dough cubes, 1/2 the peppers, 3/4 cup cheese, ham and 1/2 scallions. Mix well.
- Pour into prepared baking dish. Top with remaining scallions, roasted red peppers and cheese.
- Bake for roughly 25 minutes or until set.
- Turn oven to broil and bake an additional few minuted or until golden.
- Remove from oven and slice into desired servings. Top with sour cream and scallions. Delicious!
HAM AND SWISS BRUNCH BAKE

- In ungreased 13x9-inch (3-quart) glass baking dish, arrange half of the bread slices, overlapping as needed. Brush bread in dish with mustard. Top evenly with ham and Swiss cheese, overlapping as needed. Top with remaining bread slices, arranging them over first layer of bread slices to make sandwiches.
- In medium bowl, beat eggs and milk with wire whisk until well blended. Carefully pour over sandwiches. Cover; refrigerate at least 1 hour but no longer than 12 hours.
- Meanwhile, in small bowl, mix Parmesan cheese, bread crumbs, parsley and butter. Set aside.
- Heat oven to 375°F. Sprinkle crumb topping over casserole. Bake uncovered 30 to 35 minutes or until sandwiches are puffed and golden brown.

- On six slices of bread, layer swiss cheese and half the ham; sprinkle with garlic powder. Top with rest of ham, cheddar cheese and remaining bread. Spread butter over the top and bottom of each sandwich. Cook on an indoor grill or panini maker for 3-4 minutes or until bread is toasted and cheese is melted.

- Preheat oven to 350°. Whisk together eggs, milk, salt and nutmeg. Sprinkle cheese and ham into a greased 13x9-in. baking dish or pan; pour in egg mixture. Sprinkle croissant pieces over top., Bake, uncovered, until puffed and golden brown, 35-40 minutes. Sprinkle with chives. Let stand 5-10 minutes before serving., Make-Ahead: Refrigerate unbaked casserole, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake as directed.

- Preheat oven to 375° F. Grease a regular sized muffin pan. Cut crust from sourdough and cut pieces in half vertically (full pieces will be too large for muffins). Flatten pieces by hand or with a roller to thin out. Brush both sides of sourdough with olive oil.
- Place slices in each muffin cup, pressing down to bottom and on sides to create a cup shape (the edges will stick up over the pan and crisp while cooking). Sprinkle ham and green onions in bottoms, then crack one egg into each. Sprinkle cheese on each and add salt and pepper to taste.
- Bake for 15-20 minutes, or until sourdough is crispy and eggs are cooked to desired doneness. Cool slightly on a wire rack then remove from pan and serve warm. Extras can be stored for a few days covered in the fridge.
