CHICKEN CRESCENT ROLLS

Chicken Crescent Rolls image

Just 5 ingredients and 10 minutes of prep for these easy, cheesy Chicken Crescent Rolls!

Provided by Blair Lonergan

Categories     Lunch or Dinner

Time 35m

Number Of Ingredients 5

1 cup cooked, finely diced chicken ((or use canned chicken))
1 cup grated cheddar cheese, divided
1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
¼ cup milk
1 (8 oz) tube refrigerated crescent roll dough (8 count)

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, stir together soup, milk and ½ cup of cheese. Pour into the bottom of an 8-inch square baking dish. Set aside.
  • In a separate bowl, combine chicken and remaining ½ cup of cheese.
  • Unroll crescent roll dough and separate into 8 triangles. Place about 1-2 heaping tablespoons of the chicken mixture on the wide end of each crescent roll. Roll the dough up and place each crescent roll (seam-side down) in the bottom of the dish.
  • Bake, uncovered, until the liquid is bubbly and the tops of the crescent rolls are browned (about 25 minutes). The bottom of the rolls (that are submerged in the sauce) will stay soft - like dumplings -- but will still be cooked through.

APRICOT CRESCENT COOKIES

Apricot Crescent Cookies image

This apricot crescent cookie recipe was given to me by my cousin back in the late 70's. It's been a must-have for the holidays ever since, and a big hit whenever I serve them at parties.

Categories     Desserts     Cookies

Time 3h55m

Yield 60

Number Of Ingredients 8

1 cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
1 tablespoon sour cream
2 cups all-purpose flour
½ cup powdered sugar
¼ teaspoon salt
½ cup apricot preserves
2 tablespoons powdered sugar, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Blend butter, cream cheese, and sour cream together in a large bowl with an electric mixer. Stir in flour, 1/2 cup powdered sugar, and salt until well blended.
  • Wrap dough in waxed paper and chill until firm enough to roll, at least 3 hours, or overnight.
  • Divide dough into thirds. Keep dough in the refrigerator while working on one portion at a time. Roll each portion into a 12 1/2x10-inch rectangle. Cut into 2 1/2-inch squares using a fluted pastry wheel.
  • Place a dot, about 1/4 teaspoon, of preserves in the center of each square. Bring up two diagonal corners to the center, pinching together to seal, or secure with a toothpick. Place on ungreased cookie sheets.
  • Bake in the preheated oven until firm, but not brown, about 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more. Sift remaining powdered sugar over the cooled cookies.

APRICOT CRESCENTS

Apricot Crescents image

When I was in college, my roommate's mother sent these flaky horns in a holiday care package. I've been making them ever since. When I mail them to my parents, I put an equal number in two tins labeled "his" and "hers" so there's no squabbling over who gets more. - Tamyra Vest, Scottsburg, Virginia

SOUR CREAM CRESCENT ROLLS

Sour Cream Crescent Rolls image

These dinner rolls couldn't be easier or tastier! Mix up a batch of the dough and let it rise in the refrigerator overnight. Since it keeps well for a couple of days, make a double batch for rolls throughout the week. Originally from The Cook's Exchange section of a November 1989 Bon Appetit. You can vary the rolls by adding about 2 to 3 tablespoons freshly snipped chives to the dough or top them with poppy or sesame seed, whatever sounds good to you! Refrigeration and rise time are not included in prep time.

  • In a mixer, beat together cream cheese and sour cream until well combined. Add sugar and mix until lightened, about 3 minutes. Add eggs one at a time, waiting for the first to incorporate before adding the next. Mix in lemon juice, vanilla, and salt. Add flour, and beat on medium until no pockets of dry ingredients remain, scraping down the sides of the bowl as needed.
  • Unroll one of the crescent roll cans, being careful not to separate any of the triangles, maintaining the rectangular shape of the entire sheet of dough. On a lightly floured surface, place rectangle and press with your hands until it is 9- x- 13-inches. Transfer to the prepared baking dish and press evenly into dish. Pour cream cheese filling on top of dough. Unroll the second can of crescent rolls and press it on a floured surface in the same way you did the last dough rectangle. Carefully place rectangle on top of cream cheese mixture.
  • Bake until the top is browned and the cream cheese filling has set, about 30 minutes. Allow to cool completely before dusting with powdered sugar and slicing along perforated lines in dough.
