So so so good! So so so little work. Well, yeah, come on, you DO have to measure the ingredients. And a simple glaze would be good. But if you are really, I mean REALLY, pressed for time, place a paper doily on the cake, sift confectioner's sugar over it, lift carefully and there you have it. And this is sooo much better than a cake mix. I use an 8" square scalloped pan; that makes it look really special. Nawww, that's not cheating. It's just taking a little help where you can find it! Recipe was found somewhere on the internet April, 1998. That's how long I've been making it.

This Old Fashioned Sour Cream Chocolate Cake is an easy, light and delicious homemade chocolate cake! It's perfect for any celebration, birthdays, Black Forest Cake or cupcakes and pairs well with any frosting!

2 ¼ cups cake and pastry flour (* see NOTES for substitution)
2 tsp. baking soda
½ tsp. salt
½ cup unsalted butter (softened)
2 ¼ cups firmly packed brown sugar
3 eggs
1 ½ tsp. vanilla
3 ounces (3- 1 ounce squares) bakers unsweetened chocolate
1 cup sour cream (cooled)
1 cup boiling water

Steps:

  • Preheat oven to 350 degrees F/175 degrees C and grease cake pan(s) with non-stick spray. *I use Wilton Cake Release for best results
  • Sift together cake and pastry flour, baking soda and salt; set aside.
  • Cream butter in mixer for 2 minutes, then gradually add brown sugar and continue beating for 5 minutes. Add eggs one at a time, beating well after each addition.
  • Add vanilla and chocolate. Alternately blend in flour mixture and sour cream, one third at a time, on low speed of electric mixer.
  • Add boiling water; blend well. (***Batter will be thin.) Pour into prepared 8 or 9 inch round layer cake pan or deep square pans and/or cupcakes tins.
  • Bake at 350 degrees for 35 to 40 minutes if making layer cakes, but about 5- 10 minutes longer for a deeper 8 or inch square cake (as in photos), or until cake tester inserted into center comes out clean. * Cupcakes need to be baked for about half the time ( 15 - 20 minutes)
  • Cool in pans for 10 minutes. Remove and finish cooling on racks. Frost as desired.

1 cup boiling water
1 cup butter, softened
2-1/2 cups sugar
4 large eggs, room temperature

Steps:

  • Dissolve cocoa in boiling water; cool. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to creamed mixture alternately with sour cream, beating well after each addition. Add cocoa mixture and mix well. , Pour into 3 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , In a microwave, melt chocolate chips and butter; stir until smooth. Cool for 5 minutes. Transfer to a large bowl. 1 cup boiling water
2 cups sifted all-purpose flour
1 teaspoon baking soda

1/4 lb sweet butter

1 3/4 cups brown sugar, firmly packed (light or dark)
2 large eggs
1/2 cup sour cream
2 ounces unsweetened chocolate
2 tablespoons butter, at room temperature

1 cup strained powdered sugar
1 large egg

Steps:

  • Adjust oven rack one-third up from the bottom of the oven; preheat oven to 325°.
  • Butter a 9x5 inch loaf pan; dust it lightly with fine, dry bread crumbs; invert pan over paper and top to shake out excess.
  • Place the chocolate and instant coffee in a small mixing bowl; add in the boiling water; stir occasionally until the chocolate is melted.
  • Then let stand to cool to room temperature; it is all right if the chocolate settles to the bottom.
  • Sift together the flour, baking soda, and salt; set aside.
  • In a large bowl of an electric mixer cream the butter.
  • Add in the vanilla and brown sugar; beat to mix well.
  • Add the eggs one at a time, beating after each addition until it is thoroughly incorporated.
  • On low speed gradually add the sifted dry ingredients, scraping the bowl with a rubber spatula and beating only until smooth.
  • Then add the sour cream and again beat only until smooth.
  • Finally, stir the cooled chocolate and gradually, on low speed, beat it inches.
  • The batter will be thin; pour it into the prepared pan.
  • Bake for 60-75 minutes, until pick comes out clean.
  • Cool the cake in the pan for several minutes; then cover with a rack, invert pan and rack, remove pan, and let cake cool upside down.
  • When the cake is cool, prepare icing.
  • Icing: place the chocolate in the top of a small double boiler over hot water on low heat.
  • Cover and let the chocolate melt.
  • Meanwhile, place the butter, vanilla, powdered sugar, and the egg in the small bowl of an electric mixer; beat until smooth.
  • Add in the warm melted chocolate; continue to beat until smooth and creamy.
  • Spread the icing over the top of the cake; smooth it, or you can make deep zigzag ridges by moving a spatula or the back of a spoon through this thick, creamy icing.

3/4 cup (105 grams) all-purpose flour

1 cup semisweet chocolate chips or morsels
1 teaspoon cocoa
1/2 cup water
1/2 cup sugar
1-ounce dark chocolate (from a thick bar if possible), cut into splinters of varying thickness, for garnish
Special equipment: 2-pound loaf tin (approximately 9 1/2 by 4 1/2 by 3 inches deep), lined with greased foil, pressed into the corners and with some overhang at the top. Alternatively, substitute a silicon loaf tin, no foil lining necessary.

Steps:

  • Take whatever you need out of the refrigerator so that all ingredients can come room temperature.
  • Preheat the oven to 325 degrees F, putting in a baking sheet as you do so.
  • Put the flour, baking soda, cocoa, sugar, butter, eggs, vanilla, and sour cream into the processor and blitz until a smooth, satiny brown batter. Scrape down with a rubber spatula and process again while pouring the boiling water down the funnel. Switch it off, then remove the lid and the well-scraped double-bladed knife and, still using your rubber spatula, stir in the chocolate chips or morsels.
  • Scrape and pour the batter into the prepared loaf tin and put into the oven, cooking for about 1 hour. When ready, the loaf will be risen and split down the middle and a cake-tester will pretty well come out clean.
  • Not long before the cake is due out of the oven (when it has had about 45 to 50 minutes), put the syrup ingredients of cocoa, water and sugar into a small saucepan and boil for about 5 minutes, to give a thick syrup.
  • Take the cake out of the oven and sit it on a cooling rack, still in the tin, and pierce here and there with a cake tester. Pour the syrup over the cake.
  • Let the cake become completely cold and then slip out of its tin, removing the foil as you do so. Sit on an oblong or other plate. Sprinkle the chocolate splinters over the top of the sticky surface of the cake

SOUR CREAM CHOCOLATE CHIP NUT LOAF

At any point during the 1980s, you could've opened the middle pantry drawer in our kitchen and discovered a treasure trove of baked goods from our supermarket's Entenmann's display: fudge-frosted doughnuts, mini chocolate chip cookies, thick-glazed cupcakes. My father had--and still has--an epic sweet tooth that deserves a three-hundred-page volume all to itself. The king of the drawer, though, was the Sour Cream Chocolate Chip Nut Loaf, because it only made rare appearances at the supermarket, and, much to our dismay, eventually disappeared from shelves across the country. (We never did find out why.) My father and I were the biggest fans of the loaf, and in the twenty-five years since I've seen it, I don't think I've ever walked by the Entenmann's section without secretly hoping I'll spy one amid the doughnut holes and crumb cakes. Until then, I have this homemade version, which comes about as close as you can get.
