EASY POTATO SALAD WITH DILL
Cucumbers add crunch to this simple dill potato salad. I have tried other vinegar, but I find that I prefer it with apple cider vinegar.

- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 12 minutes. Drain and allow to steam dry while you prepare the dressing.
- Whisk together the mayonnaise, apple cider vinegar, dill, salt, and pepper. Stir in the cucumber and green onions. Add the warm potatoes to the dressing and toss gently to coat with the dressing. Cover and refrigerate for at least 2 hours before serving.

CREAMY POTATO SALAD WITH BACON AND CHIVES
Steps:
- Wash potatoes and chop into roughly uniform-sized pieces (about 1-inch squares).
- Place potatoes in a large pot, cover with water, and bring to a boil. Boil until just fork-tender. You DON'T want them to mash when pierced with a fork!
- When boiled, drain them and cool completely before adding in the remaining ingredients (I stuck mine in the fridge to speed things up).
- While potatoes are cooling, cook up the bacon. (The easiest, least messy way to do this is on a large rimmed baking sheet in the oven, lined with foil. Bake bacon at 375° for about 15 minutes or until desired level of crispiness. Drain bacon on paper towels.) When bacon is cooled, crumble.
- Place all ingredients in a large bowl and mix carefully until potatoes are coated evenly with dressing.
- Store covered in the fridge.

- Boil the potatoes gently in salted water until tender, then drain well. Leave them to cool slightly.
- Fry the pancetta or bacon until crisp, break up, then set aside. Fry the breadcrumbs in the pancetta or bacon fat until crisp.
- Slice the potatoes in half and dress with the soured cream, yoghurt, sea salt and freshly ground black pepper. Fold in the pancetta and most of the breadcrumbs and scatter the top with the chives and remaining breadcrumbs before serving.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
- In a large bowl combine potatoes, celery and green onions.

- Halve the baby potatoes and cook in a large pot of salted, boiling water until cooked. (The potatoes are cooked when a knife's tip can easily be inserted.)
- Drain the potatoes and allow to cool slightly.
- To make the dressing, mix the sour cream and seasoning and thin out with a little milk or water if necessary.
- Pour the dressing over the cooked potatoes and mix. (Adding the dressing to the potatoes while they are still warm will allow the potatoes to absorb the dressing.)

- In a large soup pot add uncooked diced potatoes and water to cover. Bring to boil and cook until potatoes are tender. Drain and rinse potatoes.

- Chop green onions and add to a frying pan with 1/4 stick of butter. Cook on medium heat until onions are soft. Add the rest of the butter and stir until melted.

- Place potatoes in pan with sour cream mixture, stirring occasionally until potatoes are heated through.
